Happy Happy Tuesday y’all!!! The countdown is on for Thanksgiving, and if you’re like me, then maybe you’re still looking for side dishes, desserts, etc. Well, today I’m here to help with any stress you maybe feeling with this super simple, super decadent, but few ingredient dessert.
This cobbler is not fancy by any means (is any cobbler really?), but what it lacks in sophistication it makes up for tenfold in it’s deliciousness. This cobbler has snickerdoodle cookie dough and apple pie filling baked together perfectly, topped off with caramel sauce.
Now, if you’re feeling extra naughty, a big giant scoopful of ice cream would be amazing on top of this cobbler while it’s still nice and warm, mmmmmm. Just wait and see how long you can wait after this guy comes out of the oven to go to nosh town, because the smells wafting in your kitchen while this cobbler bakes up are just heavenly.

Cookie mix, butter and egg into your bowl…
mix, mix, mix (a furry someone really wants some)…
place half in spoonfuls into your pan…
some of the cinnamon/sugar mixture on top of the cookie dough…
then the apple pie filling on top of that…
then the rest of the cookie dough…
then more cinnamon/sugar mixture on top of the cookie dough…
then the caramel topping…
bake, bake, bake…
and enjoy!!!
- 1 (17.9 Ounce) Package of Betty Crocker Snickerdoodle Cookie Mix.
- 1 Cup (2 Sticks) of Unsalted Butter, Softened.
- 1 Egg.
- 1 (21 Ounce) Can of Apple Pie Filling.
- 1/4-1/2 Cup of Caramel Topping.
- 8x8 Inch Baking Pan.
- Preheat your oven to 375 degrees F.
- Spray your 8x8 inch pan with non-stick cooking spray, set aside.
- With a handheld or stand mixer with paddle attachment, place your cookie mix, butter and egg into your bowl, mix together until combined.
- Place half of your cookie dough in spoonfuls into the bottom of your pan.
- Sprinkle about 1/3 of the cinnamon/sugar mixture (that comes with the cookie mix) over the cookie dough in your pan.
- Now evenly pour the whole can of apple pie filling over the cookie dough.
- Now spoon the rest of the cookie dough on top of the apple pie filling, and sprinkle about 1/3 or more of the cinnamon/sugar mixture on top of the cookie dough.
- Now evenly pour the caramel topping all over the top of the cobbler and bake for 30-35 minutes.
- Serve with ice cream and enjoy!!!
- You are welcome to add more cinnamon/sugar mixture into the layers of your cobbler.

Hi Holly. This looks wonderful. 1 stick of butter equals a half cup. Do we use 1 stick of butter or 2 sticks of butter (1 cup)?
