Happy Monday y’all !!! Holy goodness it’s August, again! Seriously, didn’t we just start the year? Didn’t school just get out? Is school already about to be back in? What the heck? As much as it bums me the year is again flying by too quickly I am at the same time super glad because it means we’re closer to Fall-aka the Halloween season-aka the most wonderful time of the year 🙂 but before I get ahead of myself, my sister gave me the best idea for a summer send off, a Summer Southern Series.
The plan for the month of August is to bring y’all some easy, classic, some not so-classic, but awesome Southern recipes. Now, I don’t know necessarily think of anything with pineapple as being overtly Southern, but we do love our fluff recipes, because it’s no-bake (it’s hot here y’all) marshmallows (always yes), Cool Whip (again, yes) and my personal favorite, shredded coconut (totally optional for you though).
This is a one bowl, delicious crowd pleaser. It’s chock full of delicious flavor and such a light fluffy texture, so good y’all! I hope you have a wonderful first day back to the work week and as always thank you so much for stopping by.

crushed pineapple…
mix, mix, mix…
mini marshmallows…
mix, mix, mix…
then cool whip…
mix again, then add your coconut…
then mix again…
cover for a bit then enjoy!!!
- 1 (3.4 Ounce) Vanilla Instant Pudding Mix.
- 1 (20 Ounce) Can of Crushed Pineapple (Un-drained).
- 1 (8 Ounce) Tub Cool Whip, Thawed.
- 2 Cups of Mini Marshmallows.
- 1 Cup of Sweetened Shredded Coconut.
- In a large bowl, place your pudding mix in, then your crushed pineapple, undrained, and mix together.
- Now add your mini marshmallows, mix, then add your Cool Whip and mix again.
- Now add your coconut, mix until well combined, then cover and refrigerate for a least a couple of hours.
- Serve and enjoy!!
- If you want to make this extra Southern, you're welcome to throw in some chopped up Pecans.
