Easy Caramel Apple Crack

April 2, 2020 By Holly

Happy Thursday y’all, and welcome to another Fall Back to Fall Series, because let’s be real, 2020 so far has been kind of a bummer. Fall is my favorite time of year (and I know a lot of y’all’s too), so let’s just pretend we can time travel and go back to a time when all things pumpkin, apple, cinnamon and beautiful fall colors were what we were thinking about.

I don’t know about you guys, but I love an easy recipe, especially one with few ingredients but can pack a big delicious punch, and boy this packs a big one that’s what she said. This one starts with crescent dough, which is one of the best ingredients ever, it’s easy to use and versatile. You throw some brown sugar & cinnamon, fresh apple pieces and some caramel, bake this guy up and dunzo, you have a rich, crispy edged dessert. Also, y’all when this is baking in the oven your house will literally smell like Heaven, all of that cinnamon and sugar, mmmm.

Something else super awesome about this crack, is that you could totally change out some of the flavors, maybe instead of apples, you use pears, or even pineapple. Get creative, you never know what you might come up

with. I hope everyone is being safe and trying to stay optimistic, I get it, it can be a struggle. Some tips just the tip that I recommend are, stay away from the news, I’ve literally gone into full on panic attacks after inundating myself with the news. Watch happy movies or comedy specials, get in the kitchen and get to baking with your family, this might sound strange, but cleaning and organizing totally de-stresses me as well. Anyway, sending lots of love to everyone and thank you so much for stopping in. Happy Baking!

Milk & Cookie Bars

December 19, 2018 By Holly

Happy Happy Wednesday y’all and welcome to another cheat day post!!! Holy heck you guys, Christmas is sooo almost here and I can honestly say I’ve never been this far behind in my shopping & wrapping…maybe ever.  I literally woke up this past Saturday and had the very stressful realization that I had done basically no Christmas shopping and only had a little over a week to get it done.

Seriously, thank goodness for Amazon you guys, because fast forward 2 hours and I was pretty much dunzo with all of my shopping.  Will all of it arrive in time? yeah, not so sure, but it’s all good, if it doesn’t then my loved ones will continue to get gifts into the New Year.

Obviously, y’all are not here to listen to my stress induced (of my own making) tirade, so let’s get to the good stuff…the food! I had a thought a few weeks ago, that Santa might be sick of the same old milk & cookies and maybe he might enjoy an absolutely delightful dessert that brings the traditional ingredients into one.

So technically, the ‘milk’ in these bars is a delicious cream cheese, but cream cheese has milk in it, sooo close enough.  Also, I took the easy way out and used store bought cookie dough which I recommend because these bars were thrown together in about 15 minutes and sooo delicious y’all.  I think that these bars would be the perfect addition to your Christmas day, or for Santa on his travels, either way, these are a must make.  Thank you so much for stopping by and I hope you all have a wonderful day!!!

First, place your cookie dough in your pan…

then, smoosh it into the bottom of your pan…

cream cheese mixture on top of your cookie dough…

then the rest of your cookie dough on top, and possibly the blurriest picture I could have taken…

bake, bake, bake and enjoy!!!

RECIPE:

1 (8 Ounce) Package of Cream Cheese, Softened.
½ Cup of Granulated Sugar.
1 Large Egg.
1 (16.5 Ounce) Chocolate Chip Cookie Roll, Divided.

Pre-heat your oven to 350°F. With a handheld or stand mixer with paddle attachment, beat cream cheese, sugar and egg until smooth.

In a 9 or 8 inch square pan, break up half of cookie dough, pressing into the bottom until an even layer is formed. Spread your cream cheese mixture over your cookie dough. Then crumble the remaining half of dough over the cream cheese mixture.

Bake 30 to 35 minutes or until golden brown and firm to the touch.  Refrigerate at least 2 hours or until chilled. Cut into bars and enjoy!!!

Classic Lemon Bars

May 23, 2018 By Holly

Happy Happy Wednesday y’all!!!  It’s super freaking hot and humid already here in the ATL, which means hello wonderfully citrus desserts of all shapes and sizes, because I feel like tart treats seems less heavy in this heat…they’re not, but oh well ha!

Y’all, these are just the most perfectly classic lemon bars, and I’m so proud of myself because I wanted to make these 1,000% from scratch.  A lot of times, I have cut corners, i.e., cake mixes, juice from a bottle, etc., which is totally cool,  but this time I was totally set on juicing every bit of the 1 cup of lemon juice that I needed.

Seven lemons later and maybe a few stinging squirts to the eyes that’s what she said and boom! fresh freaking lemon juice for these delectable bars, which I have to be honest really made all of the difference in these.  Was it a crud ton more work? absolutely! was it worth it? also a big yes on that as well.

These bars are definitely more work than a lot of recipes I post here, but y’all they weren’t that difficult to make, just a few more steps and sooo dang delicious.  These are fantastically tart and sweet, with the perfect crust accenting these bars.  I hope I’ve sold some of y’all on making these tart treats as soon as possible…may I also add that there is a big holiday weekend coming up and these just might be perfect to serve.  Thanks so much for swinging by and I hope you all have a wonderful day!!!

First, for the crust, butter and sugar…

Mix, Mix, Mix…

Now your flour…

All mixed and ready to go into your pan…

Into your pan…

Bake your crust, and while it’s cooling start with the lemon filling…

All mixed up…

Now onto your crust…

bake, bake, bake and enjoy!!!

April 18, 2018 By Holly

Happy Happy Wednesday y’all!!! You guys know it’s been a super crazy week so far when I just completely forgot to post these amazing Pineapple Bars yesterday.  Like, just completely forgot, I mean, I do wake up at the absolute crack of dawn and then work all day, but you know it’s been hectic if I forgot about food,  especially dessert.

These bars are not your usual run of the mill bars either, when I say that these bars are absolutely out of this world delicious, I’m not even exaggerating a little.  I knew that I would love these because I’m a giant pineapple fan, pretty much in any capacity, but these are eye rollingley, holy moly, wowza good.

Just imagine the most delicious buttery, moist bar with just the perfect amount of pineapple flavor that’s all caramelized around the edges, mmmmm…that’s these bars y’all.  I cannot begin to emphasize enough how much you need these bars in your life.

There are more than a few steps to make these, but trust me, they’re 100% worth the effort.  I hope everyone is having a fantastic day & week, and I really appreciate you dropping by, thanks!

all of the ingredients for the crust into your bowl…

all mixed up…

into your pan, with 1 cup of the crust set aside…

all of the ingredients for the pineapple filling…

Golden Graham S’mores Bars

July 7, 2017 By Holly

Happy Happy Friday everybody!!!  Before we get into this delicious post, I am going to ask y’all a big huge, gigantic favor to please go vote for me HERE .  I know, it has nothing to do with food, but music is and has always been a gigantic part of my life (I even have a Bachelor’s in Music Business), and I thought it would be cool to join in on the competition 😀  You’ll see my mug when you scroll down a bit,  and if you could please log in and please give me 5 music notes that would be soooo awesome and appreciated.  So now that’s out of the way, lets get to the deliciousness shall we?

Apparently “Smummer” is in full swing which is obviously 100% A-OK with me.  Just in case you hadn’t heard, Smummer is basically S’mores everything for the summertime which makes me sooo happy because I pretty much practice “Smear,” …that sounds weird, scratch that, let’s just say that S’mores are never in season for me, they are enjoyed all year round, I love them that much.

Also, Golden Grahams just happen to be hands down one of my favorite cereals ever too.  Just so y’all know, I literally keep zero cereal in the house on non cheat days, and yes that includes “healthy” cereals too,  because I have no self control, cereal is definitely my drug of choice (next to doughnuts, obvi).  So, a favorite cereal like Golden Grahams is definitely a fixture on my cheat days.

I was feeling especially  hangry  hungry for all things cereal, crispy treat and s’mores a few days before my big cheat day and I just knew that they all needed to be combined into one delicious, yet simple treat.  Y’all, I’m for real drooling at the thought of these bars.  I’m obsessed with these bars, the golden grahams are so crunchy, the marshmallows are nice and gooey and there is just enough chocolate in them to pop.  Mmmm, please, just go make these, they’re super simple and super duper tasty.  I hope everyone has a wonderful weekend and thank you so much for stopping by!!!

the best way to start things, with butter…

and forgot to show all of the marshmallows when I put them in the pot, but here they are melted…

and the pic w/everything mixed and with the added chocolate chips was so blurry, I just couldn’t add it, so here’s everything in the pan cooking in the oven…

No joke,  I had been having a giant hankering for all things chocolate, caramel and marshmallow-ey for 4 days non-stop last week.  Y’all it got so bad that I wondered if there was a patch that existed haha, FYI there isn’t one.  Sooo I knew that for my next cheat day, these 3 delicious elements absolutely all had to be included in whatever I made…so, say hello to these amazing caramel marshmallow brownies!

I knew that I had to use my mom’s amazing brownie recipe (which is basically the best chocolate cake ever), and there was certainly no time to waste by making homemade caramel sauce, hence the caramel sundae sauce I used instead,  and to make it extra festive, I put these adorable little bunny marshmallows on top.

I must forewarn you, the heavenly smell that will come out of your kitchen while these brownies bake is soo drool worthy you almost won’t be able to contain yourself, then you top these bad boys off with caramel and marshmallows, OMG hello eye rolling worthy goodness.  I’ll just say it, go make these, your day will be better for it, because there is just no denying these decadent bites of awesome 😀 Thank you so much for stopping by and I hope you have a wonderful day!!!

Pumpkin Spice Krispy Treats

October 20, 2016 By Holly

Happy Happy Thursday everybody!!!  Among my numerous food obsessions is Rice Krispy Treats.  I know, I know, it’s one of those recipes that people who can’t bake in any way shape or form can make from the time they’re kids, and probably perceived on the lower end of the dessert totem pole.

Happy Happy Tuesday everybody!!!  Sometimes you come across recipes that are so simple & easy to make yet so delicious you wonder why in the world you didn’t think of them yourself.  Ladies & gentleman, this is one of those recipes.

Easy-Pumpkin-Pie-Cake | HollysCheatDay.comI’ve seen a lot of custardy kind of cake stuff around but most involved a billion a whole lot of egg whites that need to be room temperature and whipped and sung to sleep at night added in a specific order etc.  Y’all, I don’t know about you guys, but I just do not have that kind of time on my hands.  I want easy, decadent and super delicious, and trust me this Easy Pumpkin Pie Cake embodies all of those wonderful adjectives.

Easy-Pumpkin-Pie-Cake | HollysCheatDay.comHonestly the hardest thing to do was waiting for this bad boy to cool down enough so I could slap on the frosting and start devouring it.  Speaking of frosting, y’all are totally welcome to buy a pre-made frosting from the store if you’re really in a time crunch, but I most definitely recommend you make this cinnamon cream cheese frosting, which BTW I can take credit for hehe.

Easy-Pumpkin-Pie-Cake | HollysCheatDay.comIt’s the perfect amount of sweetness with the tanginess of the cream cheese, and of course the star of the show, cinnamon, yummy y’all.  This is a definite crowd pleaser, with the top part being the texture of a moist cake and the bottom part being all pumpkin pie-ish, OMG I’m drooling at the thought of this delightful treat.  I hope you get a chance to make this incredible dessert soon, are having a wonderful day and thank you so much for stopping by!

S’mores Bars

May 25, 2016 By Holly

Happy Wednesday everybody!! The long holiday weekend is sooo close to being here I can taste it! Strangely enough my birthday falls on Memorial Day this year, and I already know a wonderful treat that I’m going to have to make this year for it…these S’mores Bars!

smores-bars | HollysCheatDay.comYes, I am definitely a huge s’mores fan in general, but there is something about summer time that makes me want them even more.  Honestly, making s’mores can be a slight bit of a hassle because making them over your stove (which I have done a lot) seems unauthentic, as well as getting melted marshmallow on everything somehow,  and making them on a campfire, well let’s just say I’m kind of an indoor girl haha.

s'mores-bars | HollysCheatDay.comI would like to think that I found not necessarily a replacement for delicious s’mores but a really cool cousin to them in these bars.  If you looove fudgy, gooey chocolatey stuff, you’re gonna be in heaven.  These are chocolate decadence with a hint of marshmallow and graham crackers.

smores-bars| HollysCheatDay.comY’all I just love these bars, I highly recommend them for your Memorial Day get together.  Have a wonderful day and thank you so much for stopping by!

Ingredients
  1. 2 Boxes of Family Size Fudge Brownie Mix (Below Oil, Water & Eggs Called for on Box).
  2. 1 1/3 Cup of Vegetable Oil (2/3 Cup for 1 Box of Brownie Mix).
  3. 1/2 Cup of Water (1/4 Cup for 1 Box of Brownie Mix).
  4. 4 Eggs (2 Eggs for 1 Box of Brownie Mix).
  5. 7-9 Sheets of Graham Crackers.
  6. 2 1/2 Cups of Mini Marshmallows.
  7. 9x13 Pan.
Instructions
  1. Preheat oven to 350 degrees.
  2. Spray your 9x13 pan with Baker's Spray, set aside.
  3. I recommend making your brownie mixes in separate bowls, so measuring it out will be easier, but in one bowl place your brownie mix, 2 eggs, 2/3 cup of oil, and 1/4 cup of water (according to the box directions) and with a handheld mixer, mix until smooth.
  4. Then make your other brownie mix and set aside.
  5. Pour your first bowl of brownie mix into your 9x13 pan.
  6. Then layer your graham crackers on top of brownie mix.
  7. Now evenly layer your mini marshmallows on top of your graham crackers.
  8. Now evenly pour your other brownie mix on top of your marshmallows, not the whole bowl, just enough to cover the marshmallows.
  9. Bake your bars for about 25-28 minutes, then place some more marshmallows on top of your bars and bake for an additional 3-5 minutes or until marshmallows have slightly turned brown.
  10. Let cool completely to set, then cut up and enjoy!!
Notes
  1. The original recipe only called for one box of brownie mix to be used and divide evenly, but I honestly found that not to be enough, and for the top layer of brownie mix, I didn't pour the whole bowl, just enough to make sure the mashmallows were covered.
