Brandy Arnold Palmer

Happy Cocktail Friday everybody!! Sometimes a super cold, light and refreshing cocktail is exactly what the doctor yeah right ordered hehe.  I know, I know, it’s cold in and around most of the western world but honestly I was so needing a cocktail and something heavy sounded just terrible.

brandy-arnold-palmer| HollysCheatDay.comI wanted refreshing, and to me Arnold Palmers are nothing if not refreshing and a little Brandy never hurt anything so woohoo there’s my drink!  I think delightful is the perfect adjective for this cocktail, because you don’t really taste the liquor, not too sweet, not at all too bitter or tasteless, just perfect.

Light and refreshing Arnold Palmer with a splash of Brandy.

Ingredients
  1. 1 Cup of Unsweetened Iced Tea.
  2. 1 1/4 Cup of Lemonade, Chilled.
  3. 1/3 Cup of Brandy.
  4. 1 Lemon, The Zest.
  5. 1/4 Cup of Granulated Sugar.
  6. Ice Cubes.
Instructions
  1. Mix the lemonade, iced tea and Brandy together, set aside.
  2. Zest your lemon onto a plate and then add the sugar mixing together with a fork.
  3. Now place honey around the rim of your glasses and dip your glasses into the lemon zest and sugar mixture until completely covered.
  4. Now place 2-3 ice cubes into your glasses, pour your drinks and serve.

Peanut Butter Cookie Dough

Happy Wednesday everybody!!  I hope from the title y’all are as excited for this recipe as I am to share it. I mean, hello, cookie dough that is meant to just be eaten as cookie dough, and, AND, it has peanut butter, Reese’s Pieces and Reese’s Peanut Butter Cups, yum, yum, yummy y’all.

Peanut Butter Cookie Dough

Delicious cookie dough with peanut butter, Reese's Pieces and Reese's Peanut Butter Cups.

Ingredients
  1. 1/2 Cup (1 Stick) of Unsalted Butter, Softened.
  2. 3/4 Cup of Brown Sugar, Finely Packed.
  3. 2 Cups of All Purpose Flour.
  4. 1 (14 Ounce) Can of Sweetened Condensed Milk.
  5. 2 Tablespoons of Creamy Peanut Butter.
  6. 1/3 Cup of Reese's Pieces.
  7. 5 Small Reese's Peanut Butter Cups, Halved.
  8. 1 Tablespoon of Vanilla Extract.
Instructions
  1. With a handheld or stand mixer with paddle attachment cream your sugar, flour, sweetened condensed milk, vanilla together until smooth.
  2. Now add your candy (you can add more or less to your liking) and peanut butter and mix again, and enjoy!!
Notes
  1. Totally okay to leave out the peanut butter and candies and you can substitute for whatever you like.

How To Series: Bone Broth

Happy Monday everybody!!  I know, it’s kind of weird I’m posting a How To Series on a Monday, but I felt like this post was necessary.  Right now, myself and 2 other people in my office are the only ones not suffering from the flu, a cold, sinus infection whatever, so aside from wearing  a hazmat suit to work (and because the infected won’t stay home) this post was a must.

how-to-series-bone-broth| HollysCheatDay.comI had heard about all the wonders of bone broth for months now, from helping heartburn, indigestion and just in general doing amazing things for your immune system I definitely thought it was time to make.  I went to a local butcher in my area and got some beef knuckle bones with the marrow, and honestly I really wanted beef leg bones with marrow but they were out but remember you can use any kind you like but definitely try to use bones with the marrow-thats the key.  I ended up cooking my bone broth in my Crockpot for 48 hours, but it tasted the best to me at 24 hours because it wasn’t as thick, but remember the longer you cook, the fattier and healthier it becomes for you.  I don’t know if this stuff is a miracle worker, but so far I haven’t caught anything yet so we will see. How To Series: Bone Broth

Super healthy broth for those feeling a little under the weather.

Ingredients
  1. 3-4 Raw Knuckle or Beef Leg Bones, With Marrow.
  2. 4-6 Medium Carrots or 1 Cup of Baby Carrots.
  3. 4-6 Stalks of Celery.
  4. 1/2 Cup of Onion, Chopped.
  5. 2 Cups of Water.
  6. 2 Tablespoons of Apple Cider Vinegar.
  7. 1 Crockpot.
Instructions
  1. Place your water, bones and apple cider vinegar into your Crockpot, let stand for at least 30 minutes.
  2. Place your carrots, onions, and celery into your pot, place your lid and turn your Crockpot on high for 3 hours, then turn the heat down to low or simmer and continue like this for at least an additional 9 hours, and enjoy!
Notes
  1. Remember, the longer you cook it the more fatty the texture is going to be, but the more health benefits it will have.
  2. This will keep in the fridge for a week, but it can be frozen for a year.

Drunk In Love Punch

Happy Cocktail Friday everybody!! I really can’t begin to describe how excited I am to share this recipe with you guys, not just because it’s delicious but because it’s my first Valentine’s Day recipe–it’s never too early for all thinks pink and red y’all 🙂

drunk-in-love-punch| HollysCheatDay.comI would like to preface what I’m about to say by saying that though I have cocktail Fridays on my blog, I actually do drink quite sparingly, aka I’m a lightweight, my body does not deal with alcohol well, and it only happens on some cheat days, but I could drink this Love Punch until I was snockered drunk. 

drunk-in-love-punch| HollysCheatDay.comYes, it is just that tasty, and being honest, tasty doesn’t do this drink justice.  Champagne tends to be way too dry for me, but in this drink all you taste is the bubbly awesomeness of it, and the cinnamon/sugar reduction gives this drink this incredible cinnamon-ey undertone, and the fruit juices give the perfect amount of sweetness.

DRUNK IN LOVE CINNAMON SUGAR REDUCTION
  1. 2 Cinnamon Sticks.
  2. 5 Whole Cloves.
  3. 1 Cup of Water.
  4. 1/2 Cup of Sugar.
DRUNK IN LOVE PUNCH
  1. 3/4 Cup of Cranberry Juice.
  2. 1/2 Cup of Pineapple Juice.
  3. 1/2 Cup of Pink Rosé Champagne, Chilled.
  4. 1/4 Cup of the Cinnamon/Sugar Reduction.
  5. Red Decorative Sugar For Glass Rims (Optional).
  6. 2-4 Strawberries for Garnish (Optional).
FOR THE CINNAMON SUGAR REDUCTION
  1. In a small saucepan place your water, cinnamon, cloves, and sugar in your pan and bring to a boil.
  2. Lower the temperature for your pan, and while stirring, let simmer for a little more than 5 minutes, making sure your sugar is dissolved.
  3. Now remove your pan from the heat, remove your cinnamon and cloves and let your sugar reduction come to room temperature (I put mine in the fridge to speed up the cooling process).
FOR THE LOVE PUNCH
  1. Add all of your ingredients together and mix, divide amongst your two glasses and enjoy!
Notes
  1. The sugar/cinnamon reduction recipe makes a lot more than you need but you could definitely double the rest of your ingredients and make for a larger group of people.
  2. If you would like to have a sugar rim around your glasses, with your finger place honey around the rims and dip your glasses into the sugar.

Homemade Vanilla Extract

Happy Wednesday everybody!  I’m pretty dang excited to share this recipe with y’all today.  This recipe comes courtesy of my mom who has been making this waaaay before I was born, and I think it’s safe to say that this is her recipe because I have never met anyone else before who makes vanilla with Brandy. 

Homemade-Vanilla-Extract| HollysCheatDay.cmI’ve seen vanilla made with Vodka before (not so sure about the taste on that one) but don’t think I’ve seen it made with Brandy (if you make it this way, sorry haha and let me know), but anyways, why buy vanilla extract when you can make your own for way less and about a gazillion times more delicious? Exactly! there’s no reason you shouldn’t, but obviously this is a recipe that has to sit for a hot second, so don’t think you can make some in a day haha.

Ingredients
  1. 1 Large Bottle of Brandy (Get The Cheapest Brand).
  2. 3-4 Vanilla Beans, Cut Down The Middle.
Instructions
  1. Carefully cut your vanilla beans down the middle with a knife.
  2. Place your vanilla beans into your bottle of Brandy.
  3. Place the cap back on your Brandy and shake your bottle just a little bit.
  4. Let the vanilla beans stand in your Brandy for at least 8 weeks (the longer the better) and then enjoy your vanilla in all different kinds of dishes.
Notes
  1. With a sharpie, write the date on the back or bottom of the Brandy bottle that you placed your vanilla beans in so as not to forget how long it's been sitting.

Bruschetta

Happy Monday y’all!!  No joke you guys, I was afraid I wasn’t even going to be able to post today.  Why? well, for starters my beloved Macbook Pro of 5 years kicked the bucket big time unexpectedly (RIP Javier-yes, I named my computer, don’t judge me) last week, which meant I made a mad (in tears) dash to the Apple store to try to revive him. 

bruschetta| HollysCheatDay.comThere was no fixing to be done that night which meant buying a brand spanking new one that evening.  My external hard drive had to be left with the store in hopes to get anything (especially all of my food pics) off of my computer since I had not done any backups in over a month sssiiiggh, and when I finally got it back they wouldn’t transfer my stuff onto my new computer like they said they would (at that point I thought my head would explode, y’all ever feel like that?). 

bruschetta| HollysCheatDay.comAnyways, I got almost everything I wanted off of my hard drive and onto my new Macbook Pro (which still doesn’t have a name yet) with the help of my dad (thanks dad!!) then I proceeded (with the help of my very large and overzealous dog) to drop my iPhone face first onto the tile floor and smashed the cover into a bajillion glass pieces double siiiggghh.

Fresh basil, mozzarella and tomatoes on deliciously toasted french bread.

Ingredients
  1. 6 Basil Leaves, Chopped.
  2. 5-6 Tomatoes, Chopped.
  3. 8 Ounces of Fresh Mozzarella, Chopped.
  4. 2 Cloves of Garlic, Finely Minced.
  5. 2 Teaspoons of Balsamic Vinegar.
  6. Salt & Pepper to Taste.
  7. 1 Loaf of French Bread.
Instructions
  1. Finely mince your garlic cloves and place in your bowl.
  2. Roll up your basil leaves and thinly slice them and place in your bowl with the garlic.
  3. Cut your tomatoes into quarters, and scrape out the seeds and 'gooey' parts, then cut up into smaller pieces, and place into your bowl.
  4. Now add your balsamic vinegar and salt and pepper to taste and mix all together.
  5. Cut your bread into slices, place some butter on each slice and toast in your oven or toaster oven until golden brown and crispy.

How To Series: Homemade Whipped Cream

Happy Friday and welcome to another post in my how to series.  This is another one that is so incredibly easy to make and not to mention insanely delicious but I’ve gotten the feeling from folks that it’s something difficult to make.

How To Make Whipped Cream

  1. 1 Cup of Heavy Whipping Cream, Chilled.
  2. 1/2 Cup of Granulated Sugar.
Instructions
  1. With a handheld mixer or stand mixer with whisk attachment, place your very cold heavy whipping cream and sugar into your bowl.
  2. Whisk these ingredients together until stiff peaks form, and enjoy!!
Notes
  1. Chilling your bowl for about 20 minutes before putting your heavy whipping cream and sugar in helps it to whip up faster.

Skillet Garlic Cheesy Bread Bites

Happy Wednesday everybody!!  Apparently I’ve been on a super savory (salty, greasy, buttery, whatevs…) kick because again I am bringing y’all another delicious savory recipe today, hope that’s okay 🙂 

skillet-garlic-cheesy-bread-bites| HollysCheatDay.comI am gonna be real with y’all, if you don’t want to find yourself standing like a vulture with its prey over your skillet or pan devouring every bite of this, then I highly recommend you not make this–yes, I just suggested you not make this–because there is no stopping eating this once you’ve started. 

skillet-garlic-cheesy-bread-bites| HollysCheatDay.comSo, for those of you who have some New Year’s resolutions you’re wanting to stick to 100% then don’t even tempt yourself with this stuff in your house, like for reals, don’t, because one bite of these soft, buttery, cheesy, garlicky bread bites will send you to food heaven and there is no turning back.  I think even a whiff of this awesomeness baking in your oven will send you over the edge.

Skillet Garlic Cheesy Bread Bites

Ingredients
  1. 1 Bag of Publix Pizza Dough (16 Ounces).
  2. 1/2 Stick (1/4 Cup) of Unsalted Butter.
  3. 3 Garlic Cloves, Finely Chopped.
  4. 2 Teaspoons of Italian Seasoning.
  5. 1/2 Cup of Parmesan Cheese, Grated.
  6. 10" Cast Iron Skillet.
Instructions
  1. If using raw bread dough pre-made like I did, take out of the refrigerator and let it rest at room temperature for an hour.
  2. Preheat your oven to 350 degrees F.
  3. Finely chop your garlic cloves and set aside.
  4. Cut your bread dough into bite sized pieces or the size of your choosing and set aside.
  5. Heat your skillet on your stove top on medium high heat.
  6. Place your butter into your skillet and melt completely.
  7. Now place your garlic, Parmesan an Italian seasoning into your skillet, stirring together until your cheese is just melted.
  8. Now place all of your dough into your skillet and remove your skillet from the heat.
  9. Now stir your dough pieces so they are covered in the butter/parm/garlic/seasoning mixture.
  10. Now place your skillet in your oven and bake for about 20 minutes or until the tops of the dough are just slightly browned, you may need to adjust more or less minutes depending on how thick your dough pieces are.

Bacon & Artichoke Dip

Happy Monday everybody!!! Wowza, the holidays are over, 2015 is over and now we’re back into the grind of regular work hours, siiighh…Well, with that said I’m here today to cheer y’all up with a wonderful, amazing and ridiculously delicious dip.

Bacon & Artichoke Dip

Ingredients
  1. 1/2 Cup of Sour Cream.
  2. 1 (8 Ounce) Package of Cream Cheese, Softened.
  3. 1 Teaspoon of Garlic Powder.
  4. 3/4 Teaspoon of Italian Seasoning.
  5. 1/4 Teaspoon of Paprika.
  6. 1 Cup of Gruyere Cheese, Shredded.
  7. 1 Cup of Smoked Gouda, Shredded.
  8. 2 Slices of Bacon, Cooked & Crumbled.
  9. 1 (8.5 Ounces) Can of Quartered Artichoke Hearts, Drained.
  10. 9" Baking Dish.
  11. 1 Loaf of French Bread For Dipping (Optional).
Instructions
  1. Preheat oven to 350 degrees F.
  2. Spray baking dish with Baker's Spray and set aside.
  3. With a handheld or stand mixer with paddle attachment, place your cream cheese and sour cream into your bowl and mix until well combined.
  4. Now add your spices and 3/4 cup of the Gruyere and 3/4 cup of your Gouda, 1 slice of your crumbled bacon and artichoke hearts and mix until well combined.
  5. Now spread into your baking dish and bake for 15 minutes, and remove from your oven and add the rest of your Gouda and Gruyere and bacon on top of your dip and continue baking for an additional 5-7 minutes or until cheese is completely melted.
  6. Serve hot with bread and enjoy!
Notes
  1. You are welcome to add more bacon if you like, but due to the saltiness of the cheeses in the dish, I didn't put as much bacon in as I normally would have.

A Snowy Evening Martini

Happy New Year Y’all!!! and Happy Cocktail Friday too!  I know that champagne is normally used in celebration of the New Year, but I love this martini so much I felt the need to share it sooner rather than later. 

a-snowy-evening| HollysCheatDay.comI must disclose that this is a very strong drink y’all, but it is very, very tasty, and the milk makes it so smooth and creamy.  What are y’all’s New Year’s resolutions? 

a-snowy-evening| HollysCheatDay.comMy resolution this year is to get more organized, and clean out a ton of stuff that I don’t need and/or want anymore, which I’ve already gotten a head start on and I’m so thrilled.

Ingredients
  1. 4 Ounces of Vanilla Cake Vodka or Vanilla Vodka.
  2. 1 Ounce of Créme de Cacao.
  3. 2 Ounces of Godiva White Chocolate Liqueur.
  4. 8 Ounces of Milk or Cream.
  5. Decorative Sugar, For Rim Garnish (Optional).
Instructions
  1. For sugar rim around glasses, place honey around the edges of each martini glass and dip into the sugar until rims are covered.
  2. Mix all ingredients together and serve!
