Happy Happy Tuesday everybody!!! Y’all, and it is soo happy. I recently switched back to full on physical production work (film/TV stuff) and I’m beyond thrilled. For the last 2 years I was working in a very off production job, and honestly I had been wanting out for quite some time.
It had started to affect me in ways I didn’t even realize were spilling over into my personal life and my emotional well being (y’all feel me?). So due to nothing short of Divine intervention, I’m doing the exact job in the exact department I’ve wanted to be in for forever. I have no joke been bounding out of bed (in the very early AM I might add) in the morning because I am actually looking forward to going to work again. The other job had me dreading every single day like whoa, and y’all life is too short and precious to feel like that 😀 I just wanted to express my gratitude out loud because I feel like it’s practically coming out of my eyeballs haha.
This is basically the ultimate Christmas present that couldn’t be bought, I’m just sooo thankful to God, for reals. Anyways, onto the other kind of sweet stuff, this delicious brown sugar and spice Chex Mix. I got this recipe straight off of Chex Mix’s recipe site, and what a great find y’all. This is the easiest Chex Mix I’ve ever made and the perfect mixture of sweet, salty and it’s just so full of flavors from the spices. I totally recommend making this to have on hand for the holidays. Cereal into your bowl…
then your nuts…
then sugars, water and spices into your cup with the melted butter…
mix that up and get it boiling in the microwave, then pour over your nut/chex mix…
mix together and back into the microwave…
then add your yogurt covered cranberries (if you want to)…
mix together and pour onto your tray to let cool…
and enjoy!!! 
- 6 Cups of Vanilla Chex Cereal.
- 1/2 Cup of Lightly Salted Roasted Almonds.
- 1/2 Cup of Lightly Salted Roasted Cashew Halves.
- 2 Tablespoons of Unsalted Butter.
- 1/4 Cup of Brown Sugar, Packed.
- 2 Tablespoons of Granulated Sugar.
- 1 1/2 Teaspoons of Water.
- 2 Teaspoons of Ground Cinnamon.
- 1 Teaspoon of Ground Ginger.
- 1/2 Cup of Yogurt Covered Cranberries (Optional).
- In a large microwave safe bowl, place your Chex cereal and nuts, set aside.
- Place some wax or parchment paper onto a large cookie tray, set aside.
- Now, in a large (at least 2 cup sized) microwave safe measuring cup, melt your butter in it.
- Now stir in your brown sugar, granulated sugar, water and spices into the butter.
- Microwave the butter/brown sugar mixture until just starting to boil, then pour this mixture over your cereal/nut mixture and mix until evenly coated.
- Now place this mixture back into the microwave and cook uncovered on high for 2-3 minutes, taking out and stirring every minute.
- Once finished, stir in your cranberries and spread out evenly onto your cookie sheet to cool.
- I think some mini M&M's would be awesome to substitute for the cranberries if that's not your thing.

I’ve had this chex mix recipe running around in my head for a while now. I wanted crunchy, as well as sweet and salty, a little pumpkin spicy, and let’s not forget the star of the show, candy corn. I’m still trying to get that recipe from them, and y’all don’t even know how bad I want to share that here with you guys. Unfortunately, and obviously, that’s not what I’m making here today, but another delicious item that they have (I told you, everything there is delicious). Who would have thought that one of their little free appetizers could be so darn good that I would have immediately started trying to figure out how to make it myself?
Now, I’m not saying these are as good as their version, but I will say it’s pretty ding dang close. These nuts are just slightly spicy, sweet, a little bit savory and the rosemary coming off of these is intoxicating. This is a one bowl, quick and easy recipe and just perfect to have hanging around for a snack, even though there wasn’t much hanging around with these because I ate them all haha. Oh yes, before it was cool to be anti corn syrup, I had to be, and y’all know what? they put that stuff in everything, and not just in syrup form, but for reals, corn goes into everything. I mean, thank goodness that they have started to cut down on it because dang, never getting to eat anything (fun) that my friends & family were was such a bummer as a kid. Anyways, that was a bit of a tangent sorry, but thank goodness these days I’m not neeearrly as allergic as I used to be, which means I can eat it occasionally which makes it an extra treat.
If you’ve been hanging around my blog for a little while now, you might be a bit familiar with a few of my favs (aren’t they all though? haha) caramel, cinnamon, pumpkin etc., so obviously this recipe is near and dear to
pop your popcorn and place into your bowl… (do you spy a doggie nose too?)
corn syrup, butter, salt, sugar into your pan…
boil for 5 minutes…(y’all this is super hot, be careful)
pour all over your popcorn…
mix it all in, then into your pan…
bake, bake, bake…

Y’all I’m giving you fair warning, these are pure crack, for reals. Biscoff cookies don’t bring too much sweetness to these truffles, but the cream cheese & powdered sugar just make these perfection. I genuinely did the eye roll, omg, holy cow these are delicious face.
These are just too good not to make, seriously, get on these asap. I will note that this dough is super sticky, definitely more so than any other I’ve made so just make sure this dough is nice and frozen to keep from making such a huge mess while rolling them out. Hello to some easy caramel popcorn y’all. I know that I’m not the only one completely obsessed with salty sweet treats & if it’s crunchy hello! bonus! in my books, and this stuff embodies all of these wonderful things.
Let’s not forget the ‘easy’ in the title either, because I was pleasantly surprised by how quickly and easily this came together, and I would be less than honest if I didn’t admit that I literally couldn’t stop eating it, downright addictive, for reals. Also, I would just like to point out that this fudge has delicious Bailey’s Irish Cream Liqueur in it so this is on the verge of making this a cocktail Friday anyway. Also, with the added green sprinkles I’m getting a jump start on St. Patrick’s Day because ding dang it’s less than a month away and all desserts with a St. Patrick’s Day spin are always fun.
Please don’t let the whole fudge thing scare you off from making this because there is no candy thermometer or boiling involved, just throw all the stuff in a saucepan cook it a little and dunzo. This fudge is teeming with the flavor of Bailey’s and because I used cheesecake flavored instant pudding with it, I feel like it adds this extra creaminess that’s just wonderful.
This stuff is too good & too easy not to make y’all, and if you don’t want to use alcohol in this, just substitute the liqueur with heavy whipping cream or half & half. Have a wonderful weekend!!

As I have mentioned previously, red velvet screams Southern to me, but it also screams Valentine’s Day, how convenient right? hehe. I didn’t want to just bake up a regular old cake, but I thought cake truffles would be amazing, because cake truffles have yet to disappoint.
You know what? these didn’t disappoint either, at all! These are so perfect, well honestly except for one thing, due to the truffles being such a beautiful deep red color and the coating being so white, they almost looked gray haha. So I will recommend maybe a little food coloring of your choosing for the coating.

I’m sure I’ve mentioned before what a huge fan of sweet & salty I am, so this Chex Mix is just amazing, the Chex cereal coated in the delicious cooked sugar then the saltiness added by the nuts, soo good y’all.
I used cashews because they’re a personal favorite but feel free to use whatever kind you like, and same with the peanut M&M’s, they have so many different kinds now you could totally experiment. I hope you can make some of this salty & sweet Chex Mix soon, and have a wonderful day y’all!
