Easy Coconut Custard

Happy Happy Thursday everybody !!!  To think, we’re thiiis much closer to the weekend, Friday eve’s are just the best, aren’t y’all getting excited?  Well, I know I am, not that I have anything planned, but the thought of catching up on Netflix and basically sitting around and doing nothing sounds just thrilling to me haha. 

If you too have wonderful plans of doing absolutely nothing as well, but would maybe like to quickly and effortlessly whip up a homemade dessert, boy do I have the recipe for you today. 

I just love a good custard, not only for the ease that they’re made but they’re just so creamy and simply decadent.  Now, you throw coconut into something then I’m definitely on board.  Y’all, I had this custard ready to go and in the oven in about 10 minutes, it baked exactly 40 minutes and was ready to eat, sooo not complicated.

Easy Coconut Custard

Ingredients
  1. 1 Cup of Milk.
  2. 1 Cup of Heavy Cream.
  3. 3/4 Cup of Sugar.
  4. 2 Drops of Coconut Extract.
  5. 1/2 Cup of All-Purpose Baking Mix (I used Bisquick).
  6. 4 Eggs.
  7. 1/4 Cup of Butter, Softened.
  8. 1 Tablespoon of Vanilla Extract.
  9. 1 1/3 Cup of Sweetened Flaked Coconut.
  10. 9" Deep Dish Pie Pan.
Instructions
  1. Preheat your oven to 350 degrees F.
  2. With a handheld or stand mixer with whisk attachment, in your bowl, place the milk, baking mix, heavy cream, eggs, coconut extract, vanilla and sugar and beat on high for about 1 minute or until well combined.
  3. Pour the batter into your pie plate, and evenly sprinkle the coconut on top.
  4. Bake for 35-40 minutes or until the center of the pie isn't jiggly and is golden brown.
  5. Let cool and enjoy!!!
Notes
  1. If you want a more potent coconut flavor feel free to add more coconut extract.

How To Series: Homemade Strawberry Syrup

Happy Happy Tuesday everybody!!! Oh snap, is it really the second How to Series post for the second week in row? Why yes it is y’all, and honestly I just couldn’t help myself.  I’ve been perusing through my mom’s 4 billion cookbooks and recipe card catalogs and I just keep finding these totally easy but insanely delicious recipes and I just had to share another one this week. 

I think this is another recipe that might get passed over because (and trust me I’ve felt the same way) most people would just go buy an already made strawberry syrup.  Well, let me tell you, that would be a mistake, because this incredible strawberry syrup totally raised the bar on everything it was put on. 

On my last cheat day, I whipped this stuff up,  and thought I might throw some on some ice cream and OMG y’all, it is freaking incredible on ice cream. That combo was so good I figured it would be equally as good on some Belgian waffles and holy freaking moly, I honestly didn’t think it was possible to love waffles anymore and this syrup totally did that. 

For a recipe that is this super quick and easy to make, it totally tastes unbelievably decadent and mouth watering.  Just go ahead and raise your brunch bar y’all with this insanely delicious strawberry syrup I promise you will be happy you did.  I hope you’re having an incredible week so far and thank you so much for stopping by my little neck of the woods.

Homemade Strawberry Syrup

Delicious and super easy to make strawberry syrup that literally tastes good on everything.

Ingredients
  1. 2 Cups of Fresh Strawberries or 2 Cups Frozen, Thawed.
  2. 2 Cups of Granulated Sugar.
  3. 1/4 Teaspoon of Lemon Juice.
Instructions
  1. Wash, remove stems and slice your strawberries.
  2. Either using a blender or hand blender, process your strawberries until liquid.
  3. In a medium/large sauce pan, place your sugar, lemon juice and strawberry liquid.
  4. On low heat, and while stirring, heat the sugar/lemon juice/strawberry liquid until the sugar dissolves.
  5. Then raise the heat to medium high and bring to a boil, reduce the heat then let it simmer for 5 minutes.
  6. Remove from the heat, let cool, then pour it on everything remotely edible and enjoy!!!
Notes
  1. The original recipe said to run the processed strawberries through a mesh strainer into your saucepan before cooking, you're totally welcome to, but the syrup turned out perfect without doing so.

Easy Strawberry Cheesecake Salad

Happy Happy Tuesday everybody!!!  Y’all, it became quite apparent when I walked into the grocery store that it is in fact now strawberry season, or strawberries are in season, however you want to look at it haha. 

All I know, is that I was practically knocked over by the incredible strawberry smell (which happens to be one of my favs) that was wafting from the produce department and I just knew that I had to make this cheesecake ‘salad’ for my next cheat day.  A couple of years ago I had this salad at some gathering (honestly cannot remember what the heck it was) but aside from the fact that I don’t remember the event, I do remember this salad (shocker I only have food on the brain). 

The host or hostess of this gathering served this salad with strawberries only and it was just to die for.  Sweet, decadent and the slight feeling that I wasn’t being completely ‘bad’ since there is fresh fruit in it hehe.  I was elated when they gave me this recipe and it’s sooo easy to make.  Really just a few ingredients, and no need for an oven which is starting to be a good thing with the rising temperatures. 

I threw bananas into this salad because I’m partial to the whole strawberry/banana combo but please feel free to substitute any fruit that you love because I see this cheesecake mixture tasting amazing with pretty much everything.  This would make for a wonderful side dish or even just dessert for your next gathering.  I hope you’re having a wonderful week so far and thank you so much for stopping by.

Easy Strawberry Cheesecake Salad

Ingredients
  1. 1 (8 Ounce) Block of Cream Cheese, Room Temperature.
  2. 1 (3.4 Ounce) of Cheesecake Flavored Instant Pudding.
  3. 1 Cup of Heavy Whipping Cream.
  4. 3 Tablespoons of Powdered Sugar.
  5. 1 Tablespoon of Vanilla Extract.
  6. 1 1/2 - 2 Pounds of Strawberries, Stems Removed.
  7. 3-4 Medium Bananas, Cut Into Slices.
  8. 1 Tablespoon of Lemon Juice.
Instructions
  1. With a handheld or stand mixer with paddle attachment, place your cream cheese into your bowl and beat until smooth, add the dry pudding mix and beat again until combined.
  2. Now, with your mixer running, slowly add in your heavy whipping cream (a few tablespoons at a time so it won't clump) until all has been added and is smooth
  3. Now mix in the vanilla and the powdered sugar, set aside.
  4. In a separate bowl, place your washed and stem removed strawberries as well as the bananas.
  5. Mix in the lemon juice making sure to coat the strawberries and bananas.
  6. Now mix in your cheesecake mixture to your strawberries and bananas making sure to coat all of the fruit.
  7. Serve immediately or cover and place into the fridge until ready to serve and enjoy!!!
Notes
  1. Please feel free to substitute whatever fruit you like best or the amount.

Easy Caramel Marshmallow Brownies

Happy Thursday everybody!!!  Y’all, I am sooo excited to share today’s recipe with you guys.  Have you ever had one of those days when you are literally taken over by a craving?  Like, wanting to devour whatever you’re craving is pretty much the only thing running through your  mind aaalll dddaayyy,  especially while you eat your grilled chicken and asparagus (again!). 

No joke,  I had been having a giant hankering for all things chocolate, caramel and marshmallow-ey for 4 days non-stop last week.  Y’all it got so bad that I wondered if there was a patch that existed haha, FYI there isn’t one.  Sooo I knew that for my next cheat day, these 3 delicious elements absolutely all had to be included in whatever I made…so, say hello to these amazing caramel marshmallow brownies!

  I knew that I had to use my mom’s amazing brownie recipe (which is basically the best chocolate cake ever), and there was certainly no time to waste by making homemade caramel sauce, hence the caramel sundae sauce I used instead,  and to make it extra festive, I put these adorable little bunny marshmallows on top. 

I must forewarn you, the heavenly smell that will come out of your kitchen while these brownies bake is soo drool worthy you almost won’t be able to contain yourself, then you top these bad boys off with caramel and marshmallows, OMG hello eye rolling worthy goodness.  I’ll just say it, go make these, your day will be better for it, because there is just no denying these decadent bites of awesome 😀 Thank you so much for stopping by and I hope you have a wonderful day!!!

BROWNIES
  1. 1 Stick (1/2 Cup) of Unsalted Butter.
  2. 1 Cup of Granulated Sugar.
  3. 4 Eggs.
  4. 1 Teaspoon of Vanilla.
  5. 1 1/2 Cups of Chocolate Syrup.
  6. 1 Cup & 1 Tablespoon of Plain Flour.
  7. 1/2 Teaspoon of Baking Powder.
  8. 9x13 Pan.
TOPPINGS
  1. 1/2 Cup of Sundae Caramel Topping.
  2. 2-3 Cups of Mini Marshmallows (Preferably Easter Themed).
  3. 1/2 Cup of M&M's (Preferably Easter Themed).
FOR THE BROWNIES
  1. Preheat your oven to 350 degrees F.
  2. Liberally spray your 9x13 pan with baking spray and set aside.
  3. With a handheld or stand mixer with paddle attachment, beat the butter and sugar together until light and fluffy.
  4. Now add the eggs, vanilla, chocolate syrup, flour and baking powder and mix until just combined.
  5. Pour your batter into your pan and bake for 27-32 minutes, making sure to not over bake.
  6. Take your brownies out of the oven and with the end of a wooden spoon, poke holes all over the top of your brownies.
  7. Now evenly pour your caramel sauce all over the brownies and now evenly place your marshmallows all over the top.
  8. Place your oven on broil and place your pan back inside and toast your marshmallows, just make sure to watch because they cook very quickly.
  9. Take out of the oven, and stick M&M's in between the marshmallows all over the top.
  10. Let your brownies cool a little and enjoy!!!

Dessert Nachos

Happy Happy Tuesday y’all!!!   OMG it has been too long no see around here, but for reals, work has had me sooo beyond busy that I literally just haven’t had enough time to cook and blog, honestly I was lucky enough to even get a few hours of sleep haha.  I do want to say thank you to everyone who reached out to me to say hey and to see if everything was alright, too sweet of y’all. 

Anyways, so lets get to the good stuff and the reason that you are all here…delicious food!  Having mentioned my love/obsession with nachos in the past, I will not write another novel ode to nachos but I just wanted to throw out a quick reminder that I love them, hence today’s recipe.  One of the few things that I love more (food wise) than nachos is dessert, so marrying the two is really just perfection.  I had a feeling when I was throwing around ideas for this recipe that it would be amazing, but I had no idea the level of awesome that these would turn out to be. 

These are absolutely the perfect amount of sweet & salty, crunchy mixed with the texture of the soft sweet strawberries, and lets not forget the incredible addition of the melted cookie butter.  The only thing that I would have done differently in this recipe is make more of it!  Y’all just do yourselves a wonderful favor and make these dessert nachos, they’re sooo delicious and easy to make.  I hope y’all are having a wonderful day and thank you so much for stopping by!!!

Ingredients
  1. 2 Cups of Lightly Salted Tortilla Chips.
  2. 3 Tablespoons of Cinnamon/Sugar Mixture.
  3. 1 Stick (1/2 Cup) of Unsalted Butter, Melted.
  4. 1/2 Cup of Biscoff Cookie Butter, Melted.
  5. 10-12 Pink Quik Candy Melts, Melted.
  6. 4-6 Strawberries, Cut Into Pieces.
  7. 2 Tablespoons of Chocolate Syrup.
Instructions
  1. Place your tortilla chips in a large bowl, pour the melted butter all over the chips and mix to make sure they are all completely covered in butter.
  2. Now sprinkle the cinnamon sugar all over the chips making sure they are all evenly covered.
  3. Now place your chips onto a tray and place into the oven under the broiler setting for 2-3 minutes, or until the desired crispiness is reached.
  4. Place your chips onto a plate and evenly spread your Biscoff Cookie Butter and Quik Melts all over.
  5. Now place your strawberries and the desired amount of chocolate syrup all over and enjoy!

St. Patrick’s Day Pretzels

Happy Happy Thursday everybody!!! Okay, so I totally have such a fun treat to share with y’all today, but first a little tiny story time slightly involving these treats.  I really had so much fun making these amazing pretzel bites on Sunday, I mean, look at how cute the little edible shamrocks are, and I was all ‘these are so perfect for St. Patrick’s Day.’ 

Well, I guess that whole luck of the Irish didn’t quite rub off when I made these because early early AM on Monday while driving to the gym,  some unseen and unknown object was in the road, jumped up and cut about a 4 inch long gash in my tire.  Let’s just say I didn’t get very far on that tire.  Y’all, it was pitch black out and the road I was stopped on had no turn offs anywhere,  so I’m just hanging out on a road that people fly by on with nowhere to go sitting with my flashers on.

I was a little terrified to be sure, but God bless the kind police officers who not only blocked the road so no one would hit me but also changed my tire.  Also, you will notice down below that the ‘Recipe Card’ that usually accompanies my posts is for some reason not wanting to work, so I will be putting this recipe right here in the text, sorry if it looks super janky haha.  I do absolutely love these pretzel bites though, so easy to make and hello, sweet and salty, my absolute favorite.  I hope y’all had a wonderful day and thank you so much for stopping by!!!

Here’s the recipe:

INGREDIENTS:

12-15 Pretzel Rods (or More Depending on How Many You Need).
2 (12 Ounce) Bags of Wilton Candy Melts, Bright White.
St. Patrick’s Day Sprinkles, Any of Your Choosing.
Parchment Paper.

DIRECTIONS:

Place a medium sized sheet of parchment paper onto a flat surface.
In a tall microwave safe container such as a drinking glass, place 12-14 ounces of the Quik melts into it.
Place in the microwave for 1 minute at 50% power, take out, stir, then place back in at full power in 30 second intervals until completely melted.
Dip your pretzel rods into the melted chocolate until half of the pretzel is coated in the chocolate, let the excess drip off, and over a bowl, shake your sprinkles all over your pretzel until coated to your liking, place on your parchment paper.
Repeat with the remaining pretzels and let the chocolate set for about 10 minutes, then enjoy!!!

Cream Cheese M&M Dip

Happy Happy Friday everybody!!! Okay, so this is going to be one of the absolute shortest posts ever.  You know how not too long ago I said last week was absolutely bananas crazy busy at work? Yes, well this week has surpassed that and I’ve basically been running on an average of 4 hours of sleep a night and then working from dark to dark. 

Basically what I’m saying is that I literally have had no time to do anything food post-wise, hence why this wasn’t posted yesterday, and hence again why I’m frantically writing this because y’all this dip is too stinking good not to share as soon as possible. 

This dip is easy, it’s super quick and soooooo amazingly good.  I mean, it doesn’t hurt that I dipped one of my absolute favorite cookies into it…droool.  Anyways, so if you’re looking for that sweet and decadent dip for Super Bowl Sunday, here you go!  I hope you have an absolute wonderful day, a wonderful weekend and thank you so much for stopping by!!!

  1. You can totally adjust the amount of M&M's used or you can substitute for chocolate chips or other flavored items that you might prefer.

Easy Cinnamon Roll Waffles

Happy Happy Thursday everybody!!!  Y’all, today’s recipe comes courtesy of the weirdness that is Georgia weather.  Yes, that sounds very odd, but you must understand how temperamental and unpredictable the weather is here no matter the season.  For example, this past weekend the weather folks were calling for several inches of snow pretty much for the entire metro Atlanta area,  including all of the surrounding areas. 

If you’re not from the South you probably won’t get how scary that can be, because it never fails that ice always, always accompanies it, and y’all there is just no driving to be done when there’s ice.  Sooo, with the very real possibility of people being housebound for possibly several days, a mad dash is made to the grocery store and you buy as many essentials (bread, milk, peanut butter, wine) as you can. Y’all, when I showed up at the grocery store, it was busier than the day before Thanksgiving and even Christmas, as well as looking like a group of locusts had descended on the place.  

Basically everything was gone,  including the ingredients for the recipe I had been planning on making, so I had to improvise.  Cinnamon roll waffles are something I’ve been wanting to make for a while, and lucky for me there was literally this one lone can of cinnamon rolls left in the whole store, so there you go, that’s how this wonderful treat came about. 

Just so y’all know, I did get iced in,  and spent the better part of Sunday pouring buckets of hot water on the driveway then taking a shovel to it in hopes of getting out of the driveway to go to work in the morning.  Oh, also, it’s going to be 70 degrees this coming weekend…like I said,  temperamental.  I hope you guys get to enjoy this recipe soon (if you can even call it a recipe because it’s so simple) and thank you so much for stopping by.  Have a wonderful day and weekend!!!

Easy Cinnamon Roll Waffles

Delicious cinnamon roll waffles that couldn't be any easier.

Ingredients
  1. 1 Can of 5 Large Cinnamon Rolls With Icing.
  2. Ground Cinnamon For Garnish (Optional).
  3. 1 Waffle Maker.
Instructions
  1. Pre-heat your waffle maker on high.
  2. Liberally spray it with butter flavored non-stick spray.
  3. Place one un-cooked cinnamon roll onto your waffle maker making sure to hold the lid of your waffle maker down to 'squish' the cinnamon roll.
  4. Cook your cinnamon roll to the level of done-ness that you like (I cooked mine about 3 minutes), take out of your waffle maker, serve with the icing, a sprinkle of cinnamon, butter and enjoy!!!

Blogmas Day 5: Easy Candy Cane Ice Cream

Happy Happy Blogmas Tuesday everybody!!!  It’s funny the random things that you remember right?  Sooo, speaking of, when the Christmas season first started to kick in, I for some reason was reminded of this birthday party that I no joke probably went to when I was 10 years old.  It was a surprise party for my friend and since her birthday was in December, the party had a Christmas-esque theme. 

I remember no other details of that party except for the homemade peppermint ice cream (of course I would remember the food haha).  As I have mentioned once or twice, peppermint has never been my go-to flavor of choice for anything, but not one to be offensive (I try not to anyway) I tried the ice cream and I was blown away by how awesome it was. 

I guess I assumed it was going to taste medicinal or something but the super rich creaminess of the ice cream with just a hint of peppermint, (and my favorite) the chunks of candy canes in it, mmmmm, I was hooked.  I might have had another bowl or two (y’all I’ve always loved food) at the party, but it has always stuck with me at how good it was and I just knew I had to make some for my cheat day to share with y’all. 

I decided to use my super easy vanilla ice cream recipe, throw in just a dash of peppermint extract and lots of chunks of candy cane, and y’all, it’s dang perfection! This ice cream is even better than I had anticipated, and I could not get enough, it is sooo good.  I hope y’all get to enjoy this soon, thank you so much for stopping by and I hope you have a wonderful day!!!

Easy Candy Cane Ice Cream

Easy and delicious homemade ice cream filled with candy cane.

Ingredients
  1. 2 Cups of Whole Milk.
  2. 2 Cups of Heavy Whipping Cream.
  3. 1 (14) Can of Sweetened Condensed Milk.
  4. 1 Cup (or More) of Candy Canes, Crushed.
  5. 2-3 Drops of Peppermint Extract.
  6. Yogurt/Ice Cream Maker.
Instructions
  1. Either by hand or with a blender smash up your candy canes into your preferred size, set aside.
  2. In a large bowl, place the whole milk, heavy cream, and sweetened condensed milk and mix together with a spoon until smooth.
  3. Now add your peppermint extract a drop at a time, making sure to not put too much and mix until incorporated.
  4. Now place your ice cream mixture into your yogurt/ice cream maker.
  5. Check your ice cream's progress and when you think there are about 5 minutes left until it's ready, add in half of your crushed peppermint and let it continue to mix.
  6. Now place your ice cream into a separate container and mix in the rest of the crushed candy cane and place in the freezer for at least 4 hours to harden.
  7. Serve and enjoy!!!
Notes
  1. You can totally add more crushed candy cane or peppermint extract if you love a more potent peppermint flavor.

Blogmas Day 4: Gingerbread Waffles

Happy Happy Blogmas Thursday everybody!!! Y’all it totally didn’t even dawn on me until this morning that this coming weekend is the last weekend before Christmas?! How the heck did that happen?! I had finally started to feel caught up with all of my shopping because you know, in my head I had another full 2 weeks left and then boom, not so much…

Where the heck has the time gone?!  Sorry, I realize have already used a lot of exclamation marks, but I just want y’all to get the full effect of panic that is going on in my brain haha.  I don’t know why, but I feel like this year has been especially hard to find things to buy for my friends and family.  Normally, I have ongoing lists of ideas months in advance, but this year, nada…

…and I just want to point out that everyone’s wish lists that I requested have been quite sparse (I’m looking at you, mom and dad).  Anyways, let’s get to the good stuff shall we?  I would like to introduce you to my new BFF’s these Gingerbread Waffles.  Oh yes, these are precisely as delicious as you would expect.  The batter was the first indication that these would be amazing because it’s more like cake batter, thick, decadent, tons of flavor. 

I’m not a fan of the word moist by any means, but these waffles turned out deliciously moist with tons of gingerbread flavor.  Definitely expect these to cook in your waffle iron quite a bit longer than a normal waffle, but they’re sooo worth the wait.  I hope you get to make these bad boys your next breakfast or brunch, thank you so much for stopping by and have a wonderful day!!!      

First, sugar, butter and molasses into your bowl…

mixed together…

now eggs and milk…

mix, mix, mix…

now, flour, spices and baking powder…

mix, mix, mix…

into your waffle iron…

bake, bake, bake… and enjoy!!!

 

Gingerbread Waffles

Easy and delicious waffles filled with all the flavor gingerbread.

Ingredients
  1. 1/2 Cup of Unsalted Butter, Softened.
  2. 1 Cup of Granulated Sugar.
  3. 1 Cup of Molasses.
  4. 3 Eggs.
  5. 2 Cups of Whole Milk.
  6. 3 1/2 Cups of All-Purpose Flour.
  7. 3 Teaspoons of Baking Powder.
  8. 3 Teaspoons of Cinnamon.
  9. 2 Teaspoons of Ground Ginger.
  10. 1 Teaspoon of Salt.
  11. Dash of Ground Cloves.
  12. Dash of Nutmeg.
  13. 1 Waffle Iron.
Instructions
  1. Preheat your waffle iron on high heat.
  2. With a handheld or stand mixer with paddle attachment, in a large mixing bowl, place your butter, sugar and molasses and mix together thoroughly.
  3. Now add your eggs and milk and mix again.
  4. Now add the remainder of your ingredients and mix until it's just coming together.
  5. Liberally spray your waffle iron with non-stick baker's or butter spray, and fill your waffle iron with enough batter to cover it, since this is a really thick batter, let it sit for about 1 minute before closing the top and continue to cook for an additional 3-4 minutes or until done.
  6. Serve with butter and syrup and enjoy!!!
