Spicy Sour Cream Dip

Happy Happy Tuesday everybody!!!  OMG, OMG, OMG!!! Y’all! My Atlanta Falcons are going to the Super Bowl, yes, my Falcons, The Super Bowl !!! I literally still cannot believe it.  When we officially won Sunday’s game I was screaming and jumping around, people were setting off fireworks around me, y’all it was no joke amazing I could have cried.

If you’re not an avid football fan like I am, you’re probably sitting there all siiiggh, but I just can’t bring myself to apologize because I’m super passionate about my Falcons.  So,  speaking of the Super Bowl,  which I will be 100% glued to the TV the day of just so you know, this week I will be bringing you guys 2 different dips, one savory and one sweet (that’s Thursday’s recipe).  Because what is a Super Bowl party without dips? or this blog without run on sentences?

Well, it isn’t a proper viewing I’ll tell you that much.  Sooo today I’ve brought y’all an absolutely wonderful and ding dang easy dip, it’s got cream cheese, it’s got sour cream (obvi), it’s got salsa, lots of cheese and lots and lots of flavor 🙂 I couldn’t get enough of this stuff, it’s addictive, just go ahead and make this I have a very good feeling you’ll be as happy with it as I am.  I hope everyone of you is having a spectacular week so far and thank you so much for stopping by!!!

Spicy Sour Cream Dip

Delicious and super easy to make dip with sour cream, cheese, and salsa.

Ingredients
  1. 16 Ounces of Full Fat Sour Cream.
  2. 1 (8 Ounce) Block of Cream Cheese.
  3. 1/2-3/4 Cup of Red Salsa (Preferably Spicy).
  4. 1/2 Cup of Sharp or Mild Cheddar Cheese.
  5. 1 Teaspoon of Dried Dill.
  6. 2 Teaspoons of Dried Parsley.
  7. 1/2 Teaspoon of Garlic Powder.
  8. 1/4 Teaspoon of Onion Powder.
  9. Salt To Taste.
  10. Tortilla Chips For Dipping.
Instructions
  1. With a handheld or stand mixer with a paddle attachment, place your cream cheese & sour cream into your bowl and mix together until smooth.
  2. Now add the remainder of your ingredients and mix until well combined.
  3. Garnish with some more cheese and maybe a little pepper, serve with your favorite tortilla chips and enjoy!!!
Notes
  1. The spiciness is totally up to what kind of salsa and how much you use, if spicy isn't your thing, just use mild salsa.

Healthy Coconut Date Bites

Happy Happy Friday everybody!!!  Y’all, it has been a super crazy week around here, hence the lack of post yesterday like I normally do, but better late than never, amiright?  The show I’m working started filming this week, which means extremely long hours, lots of caffeine, little sleep and lots of organized chaos haha. 

Trust me, I most definitely needed some of these delicious little bites this week, but unfortunately I totally finished all of these last weekend because they’re so good.  I hope y’all don’t mind that I did a healthier recipe, but I’m still feeling the mild holiday bulge, so I thought a lighter recipe would be a good idea. 

So, about these bites, these bites are no joke like dessert, sweet, a little bit salty, and nice and chewy.  If you’re not necessarily a fan of cashews, you can totally substitute them out for whatever you prefer, but they’re a personal favorite of mine so there you go.  I hope you all have an absolutely wonderful Friday, a great weekend and thank you so much for stopping by!!!

Dessert-like healthy bites filled with Medjool dates and fresh coconut.

Ingredients
  1. 1/3 Cup of Roasted & Lightly Salted Cashews (or Raw).
  2. 10 Medjool Dates, Pits Removed.
  3. 1/2 Cup of Shredded Coconut, Divided.
  4. 1 Tablespoon of Coconut Oil.
  5. 1 Tablespoon of Water.
  6. Food Processor.
Instructions
  1. Place your cashews in your food processor and pulsate until small pieces.
  2. Then add your dates, 1/4 of the coconut flakes, tablespoon of coconut oil and water, then process the mixture until it becomes smooth.
  3. With a tablespoon sized measuring spoon, scoop out 1 tablespoon of the mixture, roll into a ball, then roll into the remainder of the coconut flakes until covered.
  4. Refrigerate the bites for 30 minutes or so and enjoy!!!

Easy Cheesy Potatoes

Happy Happy Tuesday everybody!!! I hope everyone had a wonderful (and hopefully long) weekend like I did.  The weekend was certainly improved by the making (and obviously the eating) of this incredible recipe.  These are the kinds of recipes that are my absolute favorite, super easy, not a crazy amount of ingredients and downright addictive. 

I was lucky enough to try these delicious cheesy potatoes at a Christmas party and the hostess was nice enough to send me the recipe after I told her I was officially obsessed with this dish.  Funny enough, she had first tried this deliciousness at a work party and also confessed her love of the recipe to the bringer of this dish, so here we are, sharing it on the Internet, but I have no idea of it’s origins haha. You really can’t beat (a basically) one bowl recipe, I mean obviously you’ll need a smaller bowl for the corn flakes/butter mixture but that’s no biggie. 

I had everything ready to go into the oven before my oven was even done pre-heating if that gives you any indication of how fast this one is to throw together.  This casserole is so deliciously filled with hash browns and cheese that cook up so well together, and let’s not forget the absolutely wonderful,  crunchy and buttery topping, you will definitely be going back for seconds thirds, fourths  but I certainly won’t judge.  I hope you get to make this crowd-pleaser soon, are having a wonderful day and thank you so much for stopping by!!!

THE POTATO CASSEROLE
  1. 2 -1 Lb Bags of Hash Brown Potatoes, Thawed.
  2. 1/2 Cup (1 Stick) of Unsalted Butter, Melted.
  3. 1/2 Cup of Chopped Onion.
  4. 1 (10.5 Ounce) Can of Cream of Chicken Soup.
  5. 12 Ounces of Sour Cream.
  6. 2 Cups of Cheddar Cheese, Shredded.
  7. Salt and Pepper to Taste.
  8. 9x13 Pan.
THE TOPPING
  1. 2 Cups of Corn Flakes, Crushed.
  2. 1/4 Cup of Unsalted Butter, Melted.
  3. Paprika.
FOR THE POTATO CASSEROLE
  1. Preheat your oven to 350 degrees F.
  2. In a large bowl, place the hash browns, butter, onion, soup, sour cream and cheddar cheese in and mix well.
  3. Now add the salt and pepper to taste and mix again.
  4. Now place the potato mixture into your pan.
FOR THE TOPPING
  1. You can either place the corn flakes into a bag and smash with your hand, or just using your hands crush up the cereal.
  2. Then place the cereal in a bowl and mix in the melted butter until evenly coated.
  3. Now evenly spread the cereal mixture on top of the potato casserole, and a nice sprinkle of the paprika and bake for 50-55 minutes.
  4. Serve and enjoy!!!

Easy Cinnamon Roll Waffles

Happy Happy Thursday everybody!!!  Y’all, today’s recipe comes courtesy of the weirdness that is Georgia weather.  Yes, that sounds very odd, but you must understand how temperamental and unpredictable the weather is here no matter the season.  For example, this past weekend the weather folks were calling for several inches of snow pretty much for the entire metro Atlanta area,  including all of the surrounding areas. 

If you’re not from the South you probably won’t get how scary that can be, because it never fails that ice always, always accompanies it, and y’all there is just no driving to be done when there’s ice.  Sooo, with the very real possibility of people being housebound for possibly several days, a mad dash is made to the grocery store and you buy as many essentials (bread, milk, peanut butter, wine) as you can. Y’all, when I showed up at the grocery store, it was busier than the day before Thanksgiving and even Christmas, as well as looking like a group of locusts had descended on the place.  

Basically everything was gone,  including the ingredients for the recipe I had been planning on making, so I had to improvise.  Cinnamon roll waffles are something I’ve been wanting to make for a while, and lucky for me there was literally this one lone can of cinnamon rolls left in the whole store, so there you go, that’s how this wonderful treat came about. 

Just so y’all know, I did get iced in,  and spent the better part of Sunday pouring buckets of hot water on the driveway then taking a shovel to it in hopes of getting out of the driveway to go to work in the morning.  Oh, also, it’s going to be 70 degrees this coming weekend…like I said,  temperamental.  I hope you guys get to enjoy this recipe soon (if you can even call it a recipe because it’s so simple) and thank you so much for stopping by.  Have a wonderful day and weekend!!!

Easy Cinnamon Roll Waffles

Delicious cinnamon roll waffles that couldn't be any easier.

Ingredients
  1. 1 Can of 5 Large Cinnamon Rolls With Icing.
  2. Ground Cinnamon For Garnish (Optional).
  3. 1 Waffle Maker.
Instructions
  1. Pre-heat your waffle maker on high.
  2. Liberally spray it with butter flavored non-stick spray.
  3. Place one un-cooked cinnamon roll onto your waffle maker making sure to hold the lid of your waffle maker down to 'squish' the cinnamon roll.
  4. Cook your cinnamon roll to the level of done-ness that you like (I cooked mine about 3 minutes), take out of your waffle maker, serve with the icing, a sprinkle of cinnamon, butter and enjoy!!!

Energizing Strawberry Ginger Smoothie

Happy Happy Tuesday everybody!!!  Soo, I was just a bit more lenient with my healthy eating during the holidays and I’m 100% still paying for it y’all, like in a big way.  I feel like my digestive system is totally off and I totally have some Christmas cheeks love handles/thighs/too many things jiggling to even admit, so here we are today with a very non cheat day recipe. 

Sorry to those of y’all looking for something extra decadent and smothered in butter today, I just can’t, my body is mad at me, but I promise Thursday I will have something in the unhealthy/awesome vein.  On the bright side, this smoothie is awesome y’all.  Since I feel like my digestion was so off, I knew I wanted some ginger root and fresh mint in this, because both are aces in helping with that kind of stuff. 

Also, the green tea has the wonderful kick of caffeine as well as tons of good stuff in it for you.  Obviously the addition of the strawberries, banana and date add loads more vitamins and of course flavor.  Can you tell I’m mildly enthusiastic about this smoothie?  Anyways, if you’re feeling that holiday bloat in a big way like I am, then I can’t recommend enough to have this for a few breakfasts this week 🙂  Thank you so much for stopping by and I hope you have a wonderful week!!!

  1. 1 1/4 Cup of Green Tea, Chilled.
  2. 5 Large Strawberries, Stems Removed.
  3. 1 Medjool Date, Pitted.
  4. 1 Large Banana, Chilled or Frozen.

  6. 3 Small Slivers of Ginger Root.
Instructions
  1. Brew your green tea by letting your tea bag steep in hot water for 3-5 minutes, remove the tea bag and place in the fridge to chill.
  2. Once the green tea is chilled, place it in a blender along with the rest of the ingredients, and blend until completely smooth, serve and enjoy!!!

Cranberry Gin Shots

Happy Happy Cocktail Thursday y’all!!!  So here we are with the first cocktail of the New Year, and just in time because it’s been a bit bananas around here.  I mean, isn’t that always how it is?  Everyone goes out of town, people save up their vacation time and take extended time off from work, so it always feels like everywhere is a lot less full than normal, then the holidays are over and bam back to reality! 

How silly of me to have almost forgotten how bad ATL traffic is, and considering some schools around here are still out, I’m just waiting for that gigantic influx of awful (I’m not saying kids are awful, I’m just saying everyone should home school to keep traffic down hehe). 

Anyways, so to help numb the pain of reality relax this weekend…or tonight, I won’t judge…these adorable little shots are not only super delicious but hella easy to make.  Also, I noticed that the Cranberry Ginger Ale that I used also comes in diet, so if you’re doing really well with your New Year’s resolution then that’s an alternative, especially since Gin isn’t that calorie dense.  I hope all of you are having a fantastic week so far, and again, thank you so much for stopping by!!!

  1. Bombay Sapphire Gin or Gin of Your Choice.
  2. Cranberry Ginger Ale.
  3. 4-6 Shot Glasses.
  4. Cranberries, For Garnish (Optional).
  5. Decorative Sugar, For Garnish (Optional).
Instructions
  1. In a measuring cup or large cup, place 2-4 ounces of Gin, then fill the rest of the cup with the Cranberry Ginger Ale.
  2. Mix the Gin and Ginger Ale together and fill each shot glass and enjoy!!!

  1. To keep this on the lower calorie side, you can totally sub out the regular Cranberry Ginger Ale with Diet Cranberry Ginger Ale.

Easy Crockpot Chili

Happy Tuesday and Happy first blog post of the year!!! Y’all, OMG, it’s 2017!!! What the heck, we totally just did this whole New Year thing like just a couple of months ago right? Well, it definitely feels that way anyhow.  Do you guys have any big resolutions this year?  My big one is getting organized, which I am super proud to say I have already done in a big way.  I have already thrown out multiple bags of trash, as well as given away multiple bags of stuff.

I really had no idea how bad it was until it took me 5 days working from morning until night to finish it.  The build up of all of this stuff is just one of those things that tends to happen when you move suddenly to work a show and throwing what you can’t take with you into storage.  Y’all, I will totally admit the embarrassing amount of times I asked myself ‘why the heck do you still have this?!’ while cleaning,  then of course would proceed to throw it away. 

I still have a number of areas to work on, but I got a huge amount done during the Christmas hiatus.  Anyways, onto the good stuff.  Around these parts we’ve had a number of cold days and on those days nothing is as good as a warm soup or chili,  and had I known how easy chili was to make, I would have made this years ago.  This chili is so freaking good y’all, tons and tons of flavor and of course the ease of using the crock pot.  This stuff tastes awesome all by itself but it is especially good dipping chips into it mmmm.  I hope you all are having a wonderful start to the New Year and thank you so much for stopping by!!!

Ingredients
  1. 2-2.5 Pounds of Ground Beef (or Turkey).
  2. 2 (14.5 Ounce) Cans of Diced or Crushed Tomatoes.
  3. 1 (15 Ounce) Can of Tomato Sauce.
  4. 4-5 Tablespoons of Chili Seasoning.
  5. 1 Teaspoon of Garlic Salt.
  6. 1/2-1 Cup of Onion, Chopped.
  7. 1 (16 Ounce) Can of Red Kidney Beans.
  8. 1 (16 Ounce) Can of Red Kidney Beans In Chili Sauce.
  9. Salt To Taste.
  10. Shredded Cheese For Garnish (Optional).
  11. Sour Cream For Garnish (Optional).
  12. 1 Crockpot.
Instructions
  1. In a large pan place all of your ground beef (or turkey) and on medium heat, brown all of it then place into your crockpot.
  2. Now, add the rest of the ingredients into your crockpot (do not drain the beans or tomatoes), stir all together and place your crockpot on high for 3-4 hours or low for 6-8 hours.
  3. Add your preferred amount of salt to your crockpot, serve with cheese and sour cream and enjoy!!!
Notes
  1. Just be sure to keep an eye on the amount of salt in this if using beans, tomatoes or sauce with salt already in it.

Champagne Jell-O Shots

Happy Happy Saturday & New Year’s Eve everybody!!! Oh my goodness, another year dunzo, and I totally can’t even begin to comprehend this.  Is that why adult beverages flow so thoroughly on New Year’s Eve, to be able to handle another year gone? 

Well, I’m going to continue this tradition with these super fun Champagne Jell-O shots, and they’re not as quick to make as a typical cocktail,  but worth every bit of effort y’all.  I mean, how fun are these? 

I think the sprinkles really put these over the edge of awesome, but be mindful because these are very strong (hello vodka!).  I’m gonna make this short and sweet because I know y’all too have many things to get to before the end of this year 😉

Champagne Jell-O Shots

Fun and festive Jell-O Shots

Ingredients
  1. 1 1/2 Cups of Champagne, Divided.
  2. 1 Tablespoon of Lemon Juice.
  3. 1 Tablespoon of Granulated Sugar.
  4. 3 Envelopes of Unflavored Gelatin.
  5. 1/4 Cup of Vodka.
  6. 1 Loaf Pan.
  7. Gold & Silver Decorative Sprinkles for Garnish (Optional).
Instructions
  1. Spray your loaf pan with non stick spray and set aside.
  2. In a medium saucepan, place 1 1/4 cups of the champagne, lemon juice, granulated sugar in and all three packets of the gelatin.
  3. Let the gelatin sit without stirring in for a couple of minutes, then turn the heat on low and stir all ingredients together until all of the gelatin is dissolved.
  4. Remove from the heat then add in the remainder of the champagne and the vodka.
  5. Now pour the gelatin mixture into your loaf pan then place in the refrigerator for around 2 hours to let set up.
  6. Once set, gently run a knife around the edges of the jell-o and invert it onto some wax paper.
  7. Cut into pieces, dip into decorative sugar for a bit of fun and enjoy!!!

The Best Squash Casserole

Happy Happy Thursday everybody!!!  Y’all, I’m so excited to share this recipe with you guys today!  This is a recipe that I have literally eaten my whole life, as well as one that comes out of my mom’s magic recipe book haha.  Okay, so it’s not actually magic, but it’s another tried and true recipe that everyone loves, and always one that people ask for the recipe. 

My mom was actually nice enough to come over and help me make this recipe due to the thought that it was going to be super complicated and scary to make, but for reals y’all, it is sooo not hard to make.  I’m not really sure why I was under the impression it would be such a task but it’s super simple.  I was glad she was there though, because if I followed the written down version of this recipe it would not have been the same due to the fact that she cooks like a true Southerner (she is from Mississippi just so y’all know). 

In case you didn’t know, cooking like a true Southerner usually includes the following; throwing in extra butter, eyeballing (aka extra) the cheese, throwing in extra eggs, and/or throwing in extra mayonnaise…all of these items were added in excess for this recipe, which I tried to indicate as best as I could below haha.  This is hands down one of my favorite side dishes (if you can even call it that) like ever so I can’t recommend to you guys enough to make this ASAP.  I hope you’re having a fantastic week so far and thank you so much for stopping by!!!

The Best Squash Casserole

The best squash casserole you'll ever make.

Ingredients
  1. 1-2 Pounds of Squash, Cooked & Well Drained.
  2. 1 Medium Onion, Cooked & Well Drained.
  3. 1 Stick of Butter, Melted & Divided.
  4. 1/2-3/4 Cup of Cheddar Cheese, Grated.
  5. 1/2 Cup of Mayonnaise.
  6. 2 Eggs.
  7. 1 1/2 Teaspoons of Granulated Sugar.
  8. Salt & Pepper To Taste.
  9. 1 Cup of Ritz Crackers, Crushed.
  10. 1/2 Cup of Chopped Pecans.
  11. 9x13 Pan.
Instructions
  1. Chop up your squash and onion and place in a large pot with water just covering them and cook until soft.
  2. Drain your squash and onion very very well so it doesn't cause your casserole to be watery.
  3. Keeping your squash and onion in the same pot it was cooked in, add the mayonnaise, grated cheese, eggs, sugar, 1/2 of the melted butter and salt and pepper to taste.
  4. Mix all of these ingredients together until well combined.
  5. Place these ingredients into your pan, then top with the pecans, the crackers and the other 1/2 of the melted butter.
  6. Bake at 400 degrees F for 20-25 minutes or until bubbly and just starting to turn golden brown.
  7. Serve and enjoy!!!

Easy Peanut Chocolate Thingies

Happy Happy Tuesday everybody!!! I hope y’all are recovered from all of the festivities and food because I’m bringing you guys such a fun and super easy treat today and I need to make sure you’ve got some room haha.  Apparently these chocolate covered peanut clusters are a thing that I was completely and totally unaware of. 

A magical box (isn’t anything with lots of chocolate in it magical?) filled with these amazing and addictive bites were gifted to me from a wonderful neighbor.  After I found myself finishing off most of the box in less than a day I texted her desperately asking for the recipe, which she so awesomely sent me immediately (thanks Julie!). 

I really can’t begin to tell y’all how easy these things are, seriously, these were dunzo (minus the setting up part) from start to finish in about 20 minutes, if that.  Also, these are straight up crack because they have that whole sweet and salty deal going for it, and well, that’s my Kryptonite.  Anyways, I hope y’all are having a wonderful day so far, thank you so much for stopping by and I hope you get to enjoy these really soon.

Easy Peanut Chocolate Thingies

Easy delicious chocolate peanut drops.

Ingredients
  1. 2 (12 Ounce) Cans of Cocktail Peanuts, Salted Not Roasted.
  2. 1 (24 Ounce) Package of Chocolate Bark.
  3. 2 (11.5 Ounce) Package of Milk Chocolate Chips.
Instructions
  1. On a large cookie sheet or on a large flat surface, place wax paper down.
  2. In a large microwave safe bowl, place the chocolate bark and chocolate chips in it, then microwave for 5-7 minutes until melted together.
  3. Once the chocolate is melted, stir together until well mixed.
  4. Now pour in all of your peanuts and mix in thoroughly.
  5. Now drop spoonfuls onto the wax paper and let it setup (about an hour) and enjoy!!!
Notes
  1. The original recipe called for semi-sweet chocolate chips instead of milk chocolate, which you are totally welcome to use.
