Happy Cocktail Friday y’all!! I’m going to be straight up honest with y’all right now (not that I’m ever not, but whatevs) I have pretty much felt like garbage all week. I mentioned Monday that I had been feeling a bit under the weather this past weekend, but whatever junk this is that is making me feel like I’m on the verge of a cold, but won’t actually become a full blown cold is such shenanigans.
Oh, and a cold in the heat of summer… garbage again! Sigh, I won’t continue to bore y’all with my complaining and feeling sorry for myself so let’s get to this cocktail. Since this has Gin in it, obviously I’m a fan, but this is not a drink for those who like them sweet. This is most definitely fresh, light and tasty, but if you like your Piña Coladas this isn’t for you.
I too also love the fact that I can feel no guilt in indulging in one of these if I feel like it (I hear Gin has wonderful healing properties hehe). All the players in this recipe, mint, Gin, tonic water, shaker, cucumbers…
shake, shake, shake it off, pour into glass then top with Tonic water…
then enjoy!!!
- 1 1/2 Ounces of Gin.
- 1 Cucumber (4-6 Slices).
- 1 Lime, Sliced.
- 4-6 Ounces of Diet Tonic Water.
- 4-6 Mint Leaves.
- 1 Tablespoon of Sugar or Sugar Substitute (Optional).
- 1 Martini Shaker (Optional).
- In your shaker or glass, place your Gin, a lime slice, mint leaves, cucumber slices and sugar (if you're using) and shake or muddle together.
- Pour this mixture into your glass over ice, removing the large pieces of mint and cucumber slices (you can leave in if you like), then fill the rest of the glass with your tonic water.
- Garnish with a lime if you like and enjoy!
- If using diet tonic water and no sugar (or a calorie free sugar substitute) the total calories for this drink was 110.
- If you want to use granulated sugar, the total calories goes to 162.


Due to the fact that it’s also insanely hot already, melon, any kind of melon sounded amazing. Am I the only one that absolutely craves melon so much during the summer?
It’s so cold and refreshing, mmmm, and because salty and sweet is my absolute favorite combo, I figure why not enjoy it this way right? Obviously, I didn’t invent this combo, but one I’ve been wanting to try for so long, and y’all I absolutely couldn’t stop eating this.

I’ve had some version of this recipe continue to pop up in my Pinterest feed for forever, so I figured it was about dang time to make them, because they looked not only super delicious but super duper cute…cute goes a long way with food in my book.
Y’all, these were so moist, and flavorful, especially with the brown sugar oozing down these little guys (my apologies, I said moist & ooze in the same sentence…on a food blog, ew). It’s delicious, not too sweet, and so nice and tart and super duper cold, which is perfect with the ever increasing temps outside. I will definitely be making this again this weekend because yum! Yes, I am definitely a huge s’mores fan in general, but there is something about summer time that makes me want them even more. Honestly, making s’mores can be a slight bit of a hassle because making them over your stove (which I have done a lot) seems unauthentic, as well as getting melted marshmallow on everything somehow, and making them on a campfire, well let’s just say I’m kind of an indoor girl haha.
I would like to think that I found not necessarily a replacement for delicious s’mores but a really cool cousin to them in these bars. If you looove fudgy, gooey chocolatey stuff, you’re gonna be in heaven. These are chocolate decadence with a hint of marshmallow and graham crackers.

So anyways, I know it’s a seemingly strange recipe for a cheat day, but I don’t get pasta except on cheat days, and this happens to be another fav of mine growing up that my mom would make during the summer.
Y’all this recipe is so easy, and every single piece of this salad is so fresh (hello basil & arugula) I literally can’t get enough of it. This can totally be used as a side dish or a main dish, which is always good when it comes to culinary indecision haha. Obviously the kind of liquor put in this is super yummy, but this doesn’t at all taste like it has alcohol in it, like at all. This is thick, creamy, fruity and deliciously cold. This cocktail will definitely be on my summer poolside list of drinks to beat the heat with, but since this doesn’t at all taste alcoholic just use caution and don’t suck this down due to its yumminess.
