Skinny Cucumber Cocktail

Happy Cocktail Friday y’all!!  I’m going to be straight up honest with y’all right now (not that I’m ever not, but whatevs) I have pretty much felt like garbage all week.  I mentioned Monday that I had been feeling a bit under the weather this past weekend, but whatever junk this is that is making me feel like I’m on the verge of a cold, but won’t actually become a full blown cold is such shenanigans. 

skinny-cucumber-cocktail| HollysCheatDay.comOh, and a cold in the heat of summer… garbage again!  Sigh, I won’t continue to bore y’all with my complaining and feeling sorry for myself so let’s get to this cocktail.  Since this has Gin  in it, obviously I’m a fan, but this is not a drink for those who like them sweet.  This is most definitely fresh, light and tasty, but if you like your Piña Coladas this isn’t for you.

Skinny Cucumber Cocktail

Ingredients
  1. 1 1/2 Ounces of Gin.
  2. 1 Cucumber (4-6 Slices).
  3. 1 Lime, Sliced.
  4. 4-6 Ounces of Diet Tonic Water.
  5. 4-6 Mint Leaves.
  6. 1 Tablespoon of Sugar or Sugar Substitute (Optional).
  7. 1 Martini Shaker (Optional).
Instructions
  1. In your shaker or glass, place your Gin, a lime slice, mint leaves, cucumber slices and sugar (if you're using) and shake or muddle together.
  2. Pour this mixture into your glass over ice, removing the large pieces of mint and cucumber slices (you can leave in if you like), then fill the rest of the glass with your tonic water.
  3. Garnish with a lime if you like and enjoy!
Notes
  1. If using diet tonic water and no sugar (or a calorie free sugar substitute) the total calories for this drink was 110.
  2. If you want to use granulated sugar, the total calories goes to 162.

Prosciutto Wrapped Melon

Happy Wednesday everybody!!  Y’all oops I did it again, totally took a break this past weekend from completely stuffing my face my cheat day due to feeling a bit under the weather, and let’s be real eating delicious (but garbage) food doesn’t make you get well.

Prosciutto Wrapped Melon

Ingredients
  1. 1-2 Cantaloupes, Cut Into Pieces.
  2. 15-20 of Thin Slices of Prosciutto.
Instructions
  1. Cut your cantaloupe in half.
  2. Scrape out the seeds.
  3. Cut your cantaloupe into slices in the desired thickness that you like.
  4. Cut the rind off of the slices.
  5. Carefully wrap cantaloupe slices with your Prosciutto and enjoy!
Notes
  1. You can substitute the cantaloupe with honey dew or other desired melon.

Strawberry Pretzel Salad

Happy Monday y’all!!!  Okay, so I don’t know about you guys, but I feel like my feeds on Facebook and Instagram are both filled with those super sped up, makes everything you might want to cook look super duper easy to make tutorial thingies.

Strawberry Pretzel Salad

THE CRUST
  1. 2 Cups of Finely Crushed Pretzels (4 Cups of Whole Pretzels).
  2. 3 Tablespoons of Granulated Sugar.
  3. 3/4 Cup of Unsalted Butter, Melted.
  4. 9x13 Pan.
THE CREAM CHEESE FILLING
  1. 8 Ounces of Cream Cheese, Room Temperature.
  2. 1 Cup of Granulated Sugar.
  3. 8 Ounces of Cool Whip.
THE STRAWBERRY TOPPING
  1. 2 Cups of Boiling Water.
  2. 1 (6 Ounce) Package of Strawberry Jello-O.
  3. 1 1/2 Cups of Cold Water.
  4. 4 Cups of Sliced Strawberries.
FOR THE CRUST
  1. Preheat your oven to 400 degrees F.
  2. With a food processor or blender place about 4 cups of whole pretzels and process until they are finely crushed and you have 2 cups of the pretzel crumbs.
  3. Place your pretzels into a bowl with the sugar and melted butter, mix with a fork until all of the crumbs are moist.
  4. Spray your pan with some non-stick spray and press your crumbs into the bottom of your pan and bake for 10 minutes, let cool completely.
FOR THE CREAM CHEESE FILLING
  1. With a handheld or stand mixer with paddle attachment beat your cream cheese and sugar together until light and fluffy.
  2. Now mix in your cool whip until combined and spread evenly onto your cooled crust, place in your fridge while you make the strawberry topping.
FOR THE STRAWBERRY TOPPING
  1. In a large bowl place your strawberry Jell-O mix in and add your boiling water, stirring for a couple of minutes until the gelatin is dissolved.
  2. Now stir in your cold water.
  3. Refrigerate for about 45 minutes or until it is slightly thickened.
  4. Stir in your sliced strawberries and evenly pour over your cream cheese layer.
  5. Cover with aluminum foil and refrigerate for at least 3 hours to make sure the Jell-O is set, cut into squares, serve and enjoy!

M&M Cookies

It’s a Happy Happy Friday for this nice short week!  Sorry to disappoint that it’s not a cocktail Friday,  but I am bringing y’all something that might even be better! Cookies!! Y’all, and not just any cookie, M&M cookies…

A simple but delicious cookie filled with mini M&Ms.

Ingredients
  1. 2 Sticks (1 Cup) of Unsalted Butter, Melted.
  2. 1 1/2 Cups of Brown Sugar, Packed.
  3. 1/2 Cup of Granulated Sugar.
  4. 2 Large Eggs.
  5. 1 Tablespoon of Vanilla Extract.
  6. 1/4 Cup of Maple Syrup.
  7. 3 Cups of All-Purpose Flour.
  8. 2 Teaspoons of Cornstarch.
  9. 1 Teaspoon of Baking Powder.
  10. 1 Teaspoon of Baking Soda.
  11. 1 Teaspoon of Salt.
  12. 1 Cup of Mini M&M's.
Instructions
  1. Place wax or parchment paper onto your baking sheets and spray with non stick butter spray.
  2. With a handheld or stand mixer with paddle attachment, place your melted butter, brown sugar and granulated sugar into your bowl and mix until combined.
  3. Now add your eggs, vanilla and maple syrup and mix again.
  4. Now add your dry ingredients and mix until just combined.
  5. Now add in your mini M&M's and mix until evenly mixed in.
  6. Cover your bowl and chill in the fridge for at least an hour.
  7. Once your dough has chilled, preheat your oven to 350 degrees F.
  8. Roll 2-3 tablespoons of dough into balls, place on your baking sheets and bake for 12-14 minutes, they will appear to be slightly undone but they will be so soft and gooey.
  9. Let cool, and enjoy!!

Mini Upside Down Pineapple Cakes

Happy Wednesday everybody!!  Holy junk y’all it’s June!! We’re 6 months into the year already, what the heck?!

mini-upside-down-pineapple-cakes| HollysCheatDay.comAnyways,  I could talk Disney stuff all day so let’s move on to what we’re really here for, food, and most importantly today, mini desserts!  I’ve had some version of this recipe continue to pop up in my Pinterest feed for forever, so I figured it was about dang time to make them, because they looked not only super delicious but super duper cute…cute goes a long way with food in my book.

Mini Upside Down Pineapple Cakes

Ingredients
  1. 2 (20 Ounce) Cans of DOLE Pineapple Slices.
  2. 1/3 Cup of Unsalted Butter, Melted.
  3. 2/3 Cup of Packed Brown Sugar.
  4. 9 Maraschino Cherries, Stems Removed.
  5. 1 (18.25 Ounce) Box of Yellow Cake Mix, Ingredients Below Called For On Box.
  6. 3 Eggs.
  7. 1/3 Cup of Butter, Softened.
  8. 1 Cup of Pineapple Juice (From Pineapple Slices Can Replacing 1 Cup of Water).
  9. Extra Large Muffin Tin.
Instructions
  1. Preheat your oven to 350 degrees F.
  2. Spray your muffin tin with non stick spray, set aside.
  3. Measure out your pineapple juice from your cans, set aside.
  4. In a medium bowl with a handheld mixer, place your cake mix, pineapple juice, eggs and softened butter and mix until smooth, set aside.
  5. In a small bowl with a fork, mix your melted butter and brown sugar together, then evenly spoon mixture into the bottoms of your 6 tins.
  6. Lightly press 1 pineapple slice into each tin on top of the brown sugar, if they don't quite fit, it's totally fine to cut the slices in half or cut small pieces out of them-which I did.
  7. Now place 1 cherry in the middle of the pineapple slice in each tin and set aside.
  8. Place 1/3 cup of batter in each tin on top of each pineapple slice/brown sugar and bake for 20-25 minutes or until they spring back to the touch.
  9. Let cool slightly, gently run a knife around the edges of your cakes and invert pan onto large platter or plate--they will be messy.
  10. Serve warm with ice cream and enjoy!
Notes
  1. Please note that I put 2 (20 Ounce) cans of pineapple slices not because you will need all of that pineapple, but you will need 2 cans for the juice, if you want to use your own separate pineapple juice so as not to open a can you don't need you can do that.

Sassy On Your Birthday Cocktail

Frozen Coconut Lemonade

Happy Cocktail Friday and hello long holiday/birthday weekend to me!!!!  Friend (the long weekend that is), you couldn’t have come any sooner.  Y’all, at the expense of sounding like a complaining Cathy, it’s been a week. 

frozen-coconut-lemonade| HollysCheatDay.comI won’t go into the nitty gritty of it, but basically I’ve been so stressed and sleep deprived I burst a blood vessel in my eye (umm, ewwww) which I literally have never done in my entire life, what the flying heck?!  Soo yes, birthday celebrations and many, many libations will be in abundance this weekend for me woohoo!  Already day dreaming about cake & cocktails aaah 🙂 

frozen-coconut-lemonade| HollysCheatDay.comI made this frozen coconut lemonade my last cheat day, and y’all this is such an amazing cocktail.  It’s delicious, not too sweet, and so nice and tart and super duper cold, which is perfect with the ever increasing temps outside.  I will definitely be making this again this weekend because yum!   1. 2 Cups of Ice.
  2. 6 Ounces Frozen Lemonade Concentrate (I Used Minute Maid from the Freezer Section).
  3. 1.5-3 Ounces of Coconut Rum ( I Used Malibu).
  4. Limes, For Garnish (Optional).
  5. Blender.
Instructions
  1. I put every single ingredient into the blender (except limes), blend until smooth, and the ice is almost completely crushed, serve with a lime wedge and enjoy!!
Notes
  1. This makes about 2, 8 ounce cups worth.
  2. This would be easy to double or triple for guests, and feel free to add more lemonade concentrate if you like it more tart, and/or more rum if you like it stronger.

S’mores Bars

Happy Wednesday everybody!! The long holiday weekend is sooo close to being here I can taste it! Strangely enough my birthday falls on Memorial Day this year, and I already know a wonderful treat that I’m going to have to make this year for it…these S’mores Bars! 

smores-bars | HollysCheatDay.comYes, I am definitely a huge s’mores fan in general, but there is something about summer time that makes me want them even more.  Honestly, making s’mores can be a slight bit of a hassle because making them over your stove (which I have done a lot) seems unauthentic, as well as getting melted marshmallow on everything somehow,  and making them on a campfire, well let’s just say I’m kind of an indoor girl haha. 

s'mores-bars | HollysCheatDay.comI would like to think that I found not necessarily a replacement for delicious s’mores but a really cool cousin to them in these bars.  If you looove fudgy, gooey chocolatey stuff, you’re gonna be in heaven.  These are chocolate decadence with a hint of marshmallow and graham crackers.

S'mores Bars

Ingredients
  1. 2 Boxes of Family Size Fudge Brownie Mix (Below Oil, Water & Eggs Called for on Box).
  2. 1 1/3 Cup of Vegetable Oil (2/3 Cup for 1 Box of Brownie Mix).
  3. 1/2 Cup of Water (1/4 Cup for 1 Box of Brownie Mix).
  4. 4 Eggs (2 Eggs for 1 Box of Brownie Mix).
  5. 7-9 Sheets of Graham Crackers.
  6. 2 1/2 Cups of Mini Marshmallows.
  7. 9x13 Pan.
Instructions
  1. Preheat oven to 350 degrees.
  2. Spray your 9x13 pan with Baker's Spray, set aside.
  3. I recommend making your brownie mixes in separate bowls, so measuring it out will be easier, but in one bowl place your brownie mix, 2 eggs, 2/3 cup of oil, and 1/4 cup of water (according to the box directions) and with a handheld mixer, mix until smooth.
  4. Then make your other brownie mix and set aside.
  5. Pour your first bowl of brownie mix into your 9x13 pan.
  6. Then layer your graham crackers on top of brownie mix.
  7. Now evenly layer your mini marshmallows on top of your graham crackers.
  8. Now evenly pour your other brownie mix on top of your marshmallows, not the whole bowl, just enough to cover the marshmallows.
  9. Bake your bars for about 25-28 minutes, then place some more marshmallows on top of your bars and bake for an additional 3-5 minutes or until marshmallows have slightly turned brown.
  10. Let cool completely to set, then cut up and enjoy!!
Notes
  1. The original recipe only called for one box of brownie mix to be used and divide evenly, but I honestly found that not to be enough, and for the top layer of brownie mix, I didn't pour the whole bowl, just enough to make sure the mashmallows were covered.

Orzo Pasta Salad

Happy Happy Monday y’all!!! I don’t know about you guys but I’m recovering from this past weekend big time. A really awesome long time friend was in town from Nola this past weekend, who is looking to move to the ATL, so obviously, you have to take your New Orleanian friend to bars.   

orzo-pasta-salad HollysCheatDay.com So anyways, I know it’s a seemingly strange recipe for a cheat day, but I don’t get pasta except on cheat days, and this happens to be another fav of mine growing up that my mom would make during the summer. 

orzo-pasta-salad| HollysCheatDay.comY’all this recipe is so easy, and every single piece of this salad is so fresh (hello basil & arugula) I literally can’t get enough of it.  This can totally be used as a side dish or a main dish, which is always good when it comes to culinary indecision haha.  Anyways, I’m going to go drink a gallon of water and eat some veggies or something and hope for the best haha.  Have a wonderful day and thank you so much for stopping by.

Orzo Pasta Salad

A delicious and fresh pasta salad filled with tomatoes, basil, arugula and orzo pasta.

Ingredients
  1. 1 Cup (Measured Dry) Orzo Pasta, Cooked.
  2. 2.5 Tablespoons of Olive Oil.
  3. 2 Teaspoons of Balsamic Vinegar.
  4. 2 Large Tomatoes, Seeded & Diced.
  5. 2 Cups of Arugula, Coarsely Chopped.
  6. 1/4 Cup of Fresh Basil, Thinly Sliced.
  7. 1/4 Cup of Pine Nuts, Toasted (Brings Out the Flavor).
  8. Pink Himalayan Salt (or Regular Salt) & Pepper to Taste.
Instructions
  1. Cook and drain very well your orzo pasta, set aside.
  2. Toast your pine nuts, just watch to make sure they don't burn, and set aside.
  3. Chop up your Arugula, Basil and Tomatoes, set aside.
  4. Now place your olive oil & balsamic vinegar in the bottom of your bowl.
  5. Now add the rest of your ingredients on top of that, mix very well to make sure the dressing is covering everything, then liberally salt and pepper to taste, mix again and enjoy!!
Notes
  1. You don't have to toast your pine nuts, but it brings out the flavor so much more.

Latin Lover Cocktail

Happy Cocktail Friday everybody!  Oh my goodness y’all this ddrrriiinnkk!  I don’t even know if it’s fair to call this a cocktail because it tastes like the best smoothie you’ve ever, ever had. 

latin-lover-cocktail| HollysCheatDay.comObviously the kind of liquor put in this is super yummy, but this doesn’t at all taste like it has alcohol in it, like at all.  This is thick, creamy, fruity and deliciously cold.  This cocktail will definitely be on my summer poolside list of drinks to beat the heat with, but since this doesn’t at all taste alcoholic just use caution and don’t suck this down due to its yumminess.

Ingredients
  1. 2 Ounces of Coconut Rum (I Used Malibu).
  2. 2 Ounces of Banana Rum.
  3. 6 Ounces of Pineapple Juice.
  4. 2 Ounces of Cream of Coconut.
  5. 1 Cup of Raspberries.
  6. 2 Ounces of Heavy Cream.
  7. 2 Scoops of Vanilla Ice Cream.
  8. Flaked Sweetened Coconut For Garnish (Optional).
Instructions
  1. Place all ingredients into a blender, mix and enjoy!
