Easy Watermelon Sorbet

Happy Happy Monday & a very Happy Fourth of July!!!  Woohoo for independence for our wonderful and beautiful country.  I hope everyone of you is having a fantastically fun day with tons of food, family, friends,  fun and lets not forget lots and lots of fireworks (with a heavy dose of alliteration thrown in too).

Easy Watermelon Sorbet

Delicious, icy cold dessert filled with watermelon and so easy to make.

Ingredients
  1. 1/2 of Watermelon Cut Into Chunks, Frozen.
  2. 2 Tablespoons of Lemon Juice.
  3. 1-2 Tablespoons of Granulated Sugar (Optional).
Instructions
  1. Freeze your watermelon chunks for several hours, until almost completely frozen.
  2. Place your watermelon chunks and lemon juice (and sugar if you need it) into a blender and mix until completely processed.
  3. Now place your watermelon/lemon mixture into a separate container and place into freezer until completely frozen, then serve and enjoy.

Easy French Toast Bread Pudding

Happy Happy Happy Friday!!!!  yes, I’m so happy it’s almost the long weekend I’m giving y’all 3 happys today haha.  Y’all have big plans for the holiday weekend? I honestly don’t,  which is completely fine with me, just looking forward to spending time with some good peeps (does anyone even say peeps anymore when not referring to cute marshmallows?). 

easy-french-toast-bread-pudding| HollysCheatDay.comSpeaking of spending time with people, in case you’re planning on having company to stay over this weekend I’m bringing y’all the perfect and super easy thing you can make for them for breakfast.  Even better you can totally prep this and have it ready to go in the oven first thing in the morning. 

easy-french-toast-bread-pudding| HollysCheatDay.comI do want to point out that this has an amazing and wonderful crumble topping to go on it but I’m going to go ahead and type it ‘crumble’ because it is so darn humid here & even with the A/C blasting & using super cold butter it totally un-crumbled the topping.

Easy French Toast Bread Pudding

Delicious and easy breakfast bread pudding.

THE BREAD PUDDING
  1. 1 Loaf of French Bread.
  2. 8 Eggs.
  3. 2 Cups of Milk.
  4. 1/2 Cup of Heavy Cream.
  5. 3/4 Cup of Granulated Sugar.
  6. 2 Tablespoons of Vanilla Extract.
  7. 9x13 Pan.
THE CRUMBLE TOPPING
  1. 1/2 Cup of All-Purpose Flour.
  2. 1/2 Cup of Brown Sugar.
  3. 1 Teaspoon of Cinnamon.
  4. 1/4 Teaspoon of Salt.
  5. 1 Stick (1/2 Cup) of Unsalted Butter, Cold and Cut Into Pieces.
FOR THE BREAD PUDDING
  1. Liberally spray your 9x13 pan with non stick spray.
  2. Cut up your french bread into pieces and place into your pan and set aside.
  3. In a large bowl, place your eggs, milk, heavy cream, sugar and vanilla and mix until well combined.
  4. Then carefully and evenly pour your egg/milk mixture over your bread pieces, making sure the bread pieces are well covered with the mixture.
  5. Now cover your pan with stretch wrap and place in the fridge for at least 2 hours or overnight.
FOR THE CRUMBLE TOPPING
  1. In a small bowl, cut up your cold butter into pieces and place into your bowl.
  2. Now place the flour, brown sugar, salt and cinnamon and smoosh all of the ingredients together with your hands or a dough cutter until crumbly.
  3. Place this mixture into the fridge until ready to bake your bread pudding.
  4. Once ready, preheat your oven to 350 degrees F.
  5. Evenly place your crumble mixture on the top of your bread pudding and bake for 35-40 minutes or until desired amount of doneness is reached.
  6. Serve warm and enjoy!!!
Notes
  1. If you want your bread pudding extra gooey, bake for 25-30 minutes.

Easy Mango Ice Cream

Easy Mango Ice Cream

Deliciously sweet, fresh and super easy to make ice cream.

Ingredients
  1. 1 Cup of Full Fat Coconut Milk.
  2. 3 Cups of Frozen Diced Mango, Slightly Thawed.
  3. 4 Tablespoons of Honey.
  4. 1/2 Cup of Sweetened Condensed Milk.
  5. 3-5 Ounces of Malibu Rum (Optional).
Instructions
  1. Either let your mango sit out at room temperature for about 20 minutes or zap it in the microwave for about 20 seconds.
  2. In a food processor (or blender) place your mango, coconut milk, honey, sweetened condensed milk, rum (if you want) and blend until smooth.
  3. Pour your ice cream into a separate container and freeze for at least 2 hours to firm up.
  4. Serve and enjoy!

Cheesy Grit Bites

Happy Happy Monday!!  I hope everyone had a great weekend and were able to get out and do some fun stuff, or you know relaxed, whatever floats your boat.  I (per usual) had a very busy but fun weekend, and honestly made better by these delicious little bites of Southern awesomeness. 

cheesy-grit-bites| HollysCheatDay.comI don’t know why, but I’ve been craving grits like crazy…FYI to all who have no idea what a grit is, basically it’s Southern oatmeal that’s made from corn, that’s a terrible description, but just know they’re good.  Also, unlike oatmeal, grits are normally prepared in a savory way, AKA lots of butter, lots of cheese (yummm), etc.

Delicious cheesy grits made conveniently in muffin tins.

Ingredients
  1. 2 Cups of Water.
  2. 3 Cups of Chicken Stock.
  3. 1 Cup of Milk.
  4. 2 Teaspoons of Salt.
  5. 1/2 Teaspoon of Pepper.
  6. 1/4 Teaspoon of Garlic Powder.
  7. A Dash of Chili Powder.
  8. 2 Cups of Quick Cooking Grits.
  9. 2 Cups of Cheddar Cheese, Shredded.
  10. 1/2 Stick of Unsalted Butter, Melted.
  11. 3 Eggs.
  12. Muffin Tins.
Instructions
  1. Preheat your oven to 350 degrees F.
  2. Liberally spray your muffin tin or tins with non stick spray and set aside.
  3. In a large pot place your water, chicken stock and milk, then bring these to a low boil, then add your salt, pepper and garlic powder.
  4. Now pour your grits into your milk/stock/water mixture, turning the heat down to low and while stirring constantly continue to cook until your grits are thick.
  5. Remove from the heat, then add your butter, cheese and eggs making sure to mix until all ingredients are well incorporated.
  6. Now using an ice cream scoop or large spoon, fill your muffin tins to the top with your grit mixture and bake for 18-20 minutes or until just slightly golden brown on top.
  7. Let them cool slightly before removing from the muffin tin, then enjoy!

Fourth of July Sparkler

Happy Happy Cocktail Friday y’all!  It’s never too early to get your cocktail ideas in order for the 4th of July,  in my humble opinion.  I originally saw a sangria version of this pop up several times in my feed and I absolutely knew I needed to make this. 

fourth-of-july-sparkler-clssd| HollysCheatDay.comNow, I’m not a giant fan of white wine because it tends to give me an almost immediate crashing headache, but I figured a wonderful Rosé Champagne would be a wonderful substitute.  I absolutely loooved this cocktail y’all, it had just enough sweetness but plenty of kick (thank you Triple Sec) not to mention thrown together in about 5 minutes.

Ingredients
  1. 2 Cups Fresh Strawberries, Halved.
  2. 2 Cups of Fresh Blueberries.
  3. 1/2 Cup of Lemon Juice.
  4. 1 Cup of Triple Sec.
  5. 1 Bottle of Sweet Rosé Champagne.
  6. Club Soda, Chilled.
  7. 1 Pitcher.
Instructions
  1. Wash your strawberries and blueberries.
  2. Now cut the stems off of your strawberries and then slice in half, place your fruit in your pitcher.
  3. Pour your lemon juice, Triple Sec & your champagne into your pitcher.
  4. Now fill the rest with club soda.
  5. Serve and enjoy!

Easy Cheesy Potato Skins

Happy Wednesday everybody!!! or should I say potato Wednesday–you know, because I say weird things that make me chuckle and everyone else looks at me like the weirdo I am…okay so no potato Wednesday. 

easy-cheesy-potato-skins| HollysCheatDay.comHonestly, these little easy cheesy bites are so darn good that I might be willing to rename Wednesday in their honor, juuuust kidding, but these are super duper delicious for sure.  I’m sure most of y’all have had some form of potato skins–most likely in a bar I will assume–and they are usually crispy, but thicker than a potato chip.

Delicious potato bites baked to perfection with cheese.

Ingredients
  1. 2-4 Large Baking White Potatoes.
  2. 1-2 Cups of Shredded Cheddar Cheese.
  3. Pink Hamalayan Salt (or Sea Salt), To Taste.
  4. Baking Sheet & Aluminum Foil.
  5. Bacon Bits For Topping (Optional).
Instructions
  1. Preheat your oven to 400 degrees F.
  2. Place your aluminum foil onto your baking sheet then spray your foil with non-stick spray and set aside.
  3. Thoroughly wash your potatoes then dry off.
  4. Now cut the ends off of your potatoes and throw away, then slice your potatoes into 1/2 an inch (thinner or thicker to your liking) slices and place on your baking sheet.
  5. Now sprinkle your salt all over your potato slices and bake in the oven for 15-20 minutes or until they are starting to brown.
  6. Remove your potatoes from the oven and sprinkle them all liberally with cheese, then place your potatoes back into the oven for about 3 more minutes until cheese is completely melted.
  7. If you want bacon bits on your potatoes sprinkle them on now and enjoy!!!

Key Lime Pie Ice Cream

Key Lime Pie Ice Cream

Absolutely delicious homemade ice cream filled with all the flavors of key lime pie.

Ingredients
  1. 2 Cups of Whole Milk.
  2. 2 Cups of Heavy Cream.
  3. 1 (14 Ounce) Can of Sweetened Condensed Milk.
  4. 3/4 Cup of Key Lime Juice.
  5. The Zest and The Juice of 2 Limes.
  6. 1/2 Teaspoon of Salt.
  7. Graham Cracker Crumbles (Optional).
  8. Ice Cream Maker.
Instructions
  1. In a bowl, place the whole milk, heavy cream, sweetened condensed milk, key lime juice, salt, lime zest and lime juice and mix until evenly combined.
  2. Pour your mixture into your ice cream maker.
  3. Prepare your ice cream according to the directions on your maker, then put your ice cream in a separate container and freeze for several hours to harden.
  4. Before serving you can sprinkle some graham cracker crumbs or mix in if desired, and enjoy!

The Paloma

Happy Happy (Cocktail) Friday and early Happy Father’s Day!!!  As always, so happy it’s Friday y’all, even though I work on Friday sometimes I feel like Fridays are even better than Saturdays… I know, I know, hear me out, haha, I feel like Friday you get to look forward to Saturday,

Light and tart cocktail made with fresh grapefruit juice.

Ingredients
  1. 1 Ounce of Tequila.
  2. 1/4 Cup of Club Soda.
  3. 1/4 Cup of Fresh Grapefruit Juice.
  4. 1 Tablespoon of Fresh Lime Juice.
  5. 2-3 Tablespoons of Granulated Sugar.
  6. Decorative Sugar for Glass Rim (Optional).
Instructions
  1. If you want a decorative sugar rim around your glass, using your finger rub honey around the edge and dip into the sugar until fully covered.
  2. Cut your grapefruit in half and squeeze all of the juice out one 1/2 of the grapefruit into a bowl.
  3. Now place the grapefruit juice, lime juice, and sugar into a glass and mix until the sugar is dissolved.
  4. Now add your tequila, club soda, and ice, mix and serve!

Easy Strawberry Cream Pie

Happy Happy Wednesday everybody!!  I’m pretty excited to share this recipe with y’all today, because it’s not only a no bake recipe, but it’s strawberry AND AND it’s nice and cold.  Yeah, that sounds weird but holy heck it’s been crazy crazy unseasonably hot here. 

easy-strawberry-cream-pie| HollysCheatDay.comYou know it’s crazy bananas hot when you get in your car and you have to immediately take your earrings out because they start to burn your ears due to heating up so quickly-for reals. 

easy-strawberry-cream-pie| HollysCheatDay.comAnyways, back to this pie (or pies because this recipe makes two), but I love just about anything strawberry, anything (well, not asparagus of course) with Cool Whip, and hello no-bake, and because they need to be frozen they are sooo deliciously cold. 

easy-strawberry-cream-pie| HollysCheatDay.comAlso, this recipe makes so much it makes more than enough for 2 pies,  you could totally use deep dish pie crusts if you wanted because it makes so much.

  1. 1 (18 Ounce) Jar of Strawberry Preserves.
  2. 1 (14 Ounce) Can of Sweetened Condensed Milk.
  3. 1 (10 Ounce) Bag of Frozen Strawberries, Thawed.
  4. 1 Tablespoon of Lemon Juice.
  5. 1 (16 Ounce) Container of Cool Whip.
  6. 2 Ready Made Graham Cracker Pie Crusts (I Used Keebler).
Instructions
  1. Leave your strawberries out to thaw for a few hours or put them in the microwave, then place them in a strainer and with your hand push them to get the excess juice out.
  2. With a handheld or stand mixer with paddle attachment, and in your bowl place your strawberries, sweetened condensed milk, strawberry preserves and lemon juice and mix thoroughly.
  3. Now gently fold in the Cool Whip until evenly combined (it's a lot of Cool Whip so it will take a minute).
  4. Now pour your filling into your pie crusts, cover them and freeze for about 6 hours.
  5. Cut into slices, serve and enjoy!
Notes
  1. This recipe makes so much filling you could definitely use 2 deep dish pie crusts if you wanted.

Protein Peanut Butter Truffles

Happy Monday everybody!! I hope everyone had a wonderful weekend and I thought maybe it would be cool to start the week with another non super duper,  crazy bad for you recipe today, but these are so good I promise you won’t be disappointed. 

protein-peanut-butter-truffles-cls| HollysCheatDay.comI have been seeing variations of this recipe on different fitness Youtubers that I follow and though I’m usually suspicious at how tasty ‘healthy’ or ‘high protein’ recipes actually are, these were not disappointing, at all.  These are crazy satisfying, super easy to make, and the perfect mixture of salty and sweet, and hello peanut butter.

No guilt and no bake peanut butter truffles.

Ingredients
  1. 1/2 Cup of Vanilla Whey Protein Powder.
  2. 2 Tablespoons of Agave Nectar (Can Substitute With Honey).
  3. 8 Tablespoons of Mixed Nuts, Finely Chopped.
  4. 4 Tablespoons of Almond Milk.
  5. 4 Tablespoons of Peanut Butter.
  6. 1 Teaspoon of Maple Extract.
Instructions
  1. With a food processor or hand chopper, finely chop your nuts and set aside.
  2. In a bowl, place all of your ingredients in and mix together.
  3. Shape your dough in 1-2 tablespoon sized balls and place on wax or parchment paper.
  4. Place your truffles in the fridge for a few hours and enjoy!

  1. Calories per serving: 54, Fat: 3 Grams, Carbs: 2 Grams, Protein: 4 Grams.
