Happy Monday y’all !!! Holy goodness it’s August, again! Seriously, didn’t we just start the year? Didn’t school just get out? Is school already about to be back in? What the heck? As much as it bums me the year is again flying by too quickly I am at the same time super glad because it means we’re closer to Fall-aka the Halloween season-aka the most wonderful time of the year 🙂 but before I get ahead of myself, my sister gave me the best idea for a summer send off, a Summer Southern Series.
The plan for the month of August is to bring y’all some easy, classic, some not so-classic, but awesome Southern recipes. Now, I don’t know necessarily think of anything with pineapple as being overtly Southern, but we do love our fluff recipes, because it’s no-bake (it’s hot here y’all) marshmallows (always yes), Cool Whip (again, yes) and my personal favorite, shredded coconut (totally optional for you though).
This is a one bowl, delicious crowd pleaser. It’s chock full of delicious flavor and such a light fluffy texture, so good y’all! I hope you have a wonderful first day back to the work week and as always thank you so much for stopping by.

mini marshmallows…
mix, mix, mix…
then cool whip…
mix again, then add your coconut…
then mix again…
cover for a bit then enjoy!!! 
- 1 (3.4 Ounce) Vanilla Instant Pudding Mix.
- 1 (20 Ounce) Can of Crushed Pineapple (Un-drained).
- 1 (8 Ounce) Tub Cool Whip, Thawed.
- 2 Cups of Mini Marshmallows.
- 1 Cup of Sweetened Shredded Coconut.
- In a large bowl, place your pudding mix in, then your crushed pineapple, undrained, and mix together.
- Now add your mini marshmallows, mix, then add your Cool Whip and mix again.
- Now add your coconut, mix until well combined, then cover and refrigerate for a least a couple of hours.
- Serve and enjoy!!
- If you want to make this extra Southern, you're welcome to throw in some chopped up Pecans.


I figured lemonade and ice tea are the quintessential Southern cold drinks in the summertime and it was about dang time to make one of them a little more fun. This recipe is so simple y’all, I feel silly even calling it that, and I didn’t take any step by step photos because again, sooo simple. I used a pre-made lemonade (Publix brand) and stuck it in the freezer for a couple of hours, checking on it every so often to make sure it didn’t freeze too much and explode haha.
Then, 

You know it’s bad when you get into you car after having it bake in the sun all day that you literally feel like your lungs are being singed, and let’s not even talk about the sheer amount of sweat-gross, sorry. Anyways, back to non gross things like ice cream, woohoo!
If you hate stuff that is Earl Grey infused, I’m really sorry but I just looove it, and I knew I had to make some Earl Grey infused ice cream. Y’all I can’t even believe how incredible this ice cream turned out. It has just the right amount of that incredible tea flavor, but deliciously cold and covered in Biscoff Cookie crumbs, mmmm…
This was waaay too easy to make you guys, I can’t recommend enough that you make yourself some too, and also, it’s hot, calories don’t count in this heat

There’s one place in particular that I am obsessed with going to on Sundays, and it’s this amazing little place called Capers. OMG y’all I can honestly say I’ve never eaten anything there that wasn’t absolutely amazingly delicious, and the big bonus are their rolls. Okay, so I just want to let y’all know that these are no ordinary rolls, these little guys are fried (hello!) and served with this incredible fresh strawberry butter.
I honestly have been obsessing about trying to make a copycat version of their butter for forever and I think I finally accomplished it with this recipe. This recipe has super simple ingredients, is really really easy to make and you won’t be able to get enough of this. I bought some croissants to slather this amazing butter on, and OMG it is eye-rollingly good. I can’t recommend enough that you make this butter for your next at home brunching. I did slightly change the recipe by using berries instead of bananas that are traditionally used, and I bought my meringues at Publix because it is way too humid around these parts to think that I would be able to make them rise properly. I had a feeling that this would be super good, but I honestly had no idea how delicious this would be.
It’s so light and fluffy with the meringue and whipped cream and then the fresh sweetness of the berries, OMG y’all. I also think it looks kinda pretty all layered in the trifle bowl too. Sooo, with the absence of a third post this week I would like to offer this amazing sheet cake as payment for the lack of posts haha, and if you love Girl Scout Samoa cookies as much as I do, you will be more than happy with this recipe.
I’ve seen many different versions of a Samoa cookie cake, but honestly most I have found have been a bit complicated and time consuming, and if I’m being honest I like my recipes simple, because #foreverhungry. Anyways, this is pretty darn simple and absolutely filled with all the flavors of Samoas.
The chocolate cake is decadently moist with the caramel-esque frosting on top, then throw on the toasted coconut, with caramel and chocolate drizzled on top of that and holy cow this is amazing. Also, this is in sheet cake form which I personally love because sheet cakes are so much easier to make than say, cupcakes which definitely fall under time consuming. while that’s baking, time for the icing, melted butter, milk, powdered sugar, vanilla, caramel sauce…

take your hot cake out of the oven, and poke holes in it…
pour your icing over your cake…
try to make it as even as possible, but it doesn’t have to be perfect…
evenly sprinkle your toasted coconut onto it…
then drizzle all of your chocolate and caramel on top of the coconut…

Also super excited to share this amazing cocktail with y’all today. It doesn’t get much easier than this cocktail you guys. This cocktail totally looks and tastes fancy since the ingredients, though there are only two, are so flavorful. The liqueur I used for this is the Godiva White Chocolate, droooll, which is oh so decadent but not too strong that it cannot be drunk by itself.
I then threw in some fresh raspberries that give it that little extra zing and y’all this is straight up dessert, perfect for brunch and brunch is always a good idea haha. Oh, and I also think this drink is kinda pretty, don’t you? The only thing I would have changed is maybe taking the ice out so it doesn’t get watered down, but up to you. Second, this is chock full of all things chocolate and peanut butter (double yum!) and third, this is such an easy recipe, and it turned out absolutely perfect! I don’t know if I have mentioned my absolute love of chocolate and peanut butter together before but there you go, I love it, and there is always at least one Reese’s peanut butter cup in my world on my cheat days, always…
So in this cake you have this easy peanut butter cake swirled with a peanut butter/chocolate cake mixture, then holy moly it’s topped off with a wonderful and gooey peanut butter/chocolate topping and of course Reese’s peanut butter cups thrown in. If you love peanut butter and chocolate together as much I do, you’re gonna go nuts for this recipe.
The cake turned out perfectly moist (yikes, that word again) and the perfect blend of peanut butter and chocolate flavors. Y’all, serve this warm with the decadent topping and a scoop or two of ice cream and you will be in dessert heaven, for reals. Honestly, having a simple weekend where I basically did nothing in comparison to my normally non stop weekends was perfection. I think the simple and relaxing needs to be embraced more in my world, and the simple even made its way into my cheat day with these amazing easy baked peaches.
Y’all I can’t emphasize how much I am in love with this dessert. The ice cream (which is a must with these little delights) & peaches scream summer time, yet the warmth of the cinnamon and the smell of these peaches baking in the oven reminds me of Fall (which is always a good thing).
