Cinnamon Crunch Popcorn

Happy Happy Wednesday everybody!!! Let’s get right into this recipe you guys, I’m way essited excited to share this one, but first I have to admit popcorn is a huge guilty pleasure for me.  I’m sure some of y’all are thinking ‘Gee Holly, that’s odd since popcorn isn’t even close to the unhealthiest things you’ve put on your blog‘ well, for a good reason,  I have been allergic to corn since I was born. 

cinnamon-crunch-popcorn | hollyscheatday-comOh yes, before it was cool to be anti corn syrup, I had to be, and y’all know what? they put that stuff in everything, and not just in syrup form, but for reals, corn goes into everything.  I mean, thank goodness that they have started to cut down on it because dang, never getting to eat anything (fun) that my friends & family were was such a bummer as a kid.  Anyways, that was a bit of a tangent sorry, but thank goodness these days I’m not neeearrly as allergic as I used to be, which means I can eat it occasionally which makes it an extra treat. 

cinnamon-crunch-popcorn | hollyscheatday-comIf you’ve been hanging around my blog for a little while now, you might be a bit familiar with a few of my favs (aren’t they all though? haha) caramel, cinnamon, pumpkin etc., so obviously this recipe is near and dear to my mouth my heart.  Y’all, when this popcorn came out of the oven and it was still a bit soft and gooey, it tasted just like cinnamon toast with an extra oomph of caramel, yes, it burned my mouth, and yes it was worth it.  This is honestly like crack, just go make it, your day will be better for it 🙂 I hope you’re having a wonderful week so far and thank you so much for stopping by!

Cinnamon Crunch Popcorn

Ingredients
  1. 2 Bags of Pop-Secret Homestyle Popcorn, Popped.
  2. 2 Cups of Packed Light Brown Sugar.
  3. 1 Cup (2 Sticks) of Unsalted Butter.
  4. 1/2 Cup of Light Corn Syrup.
  5. 1 Teaspoon of Salt.
  6. 2-3 Teaspoons of Cinnamon.
  7. Large Jelly Roll Pan or Something Similar.
Instructions
  1. Preheat your oven to 250 degrees F.
  2. Place wax or parchment paper in your pan and liberally spray non-stick spray onto the paper, set aside.
  3. Pop your popcorn according to directions and place into a large bowl.
  4. In a medium/large saucepan place the butter, light corn syrup, salt and brown sugar in it, bringing these ingredients to a boil for 5 minutes making sure to stir while boiling.
  5. Then remove from the heat and carefully pour over your popcorn, then stir all together until evenly covered.
  6. Then pour your popcorn onto your pan spreading out evenly, then sprinkle the cinnamon all over the top of your popcorn and place into your oven and bake for 25-30 minutes or until the desired crunchiness is reached.
  7. Remove from the oven, let cool, break into pieces and enjoy!
Notes
  1. I used the Pop-Secret homestyle because it's very lightly salted and buttered, feel free to use whatever popcorn you prefer.
  2. You can totally use more or less cinnamon on top of your popcorn according to your preference.

Crockpot Pumpkin Bread Pudding

Happy Happy Monday y’all!!  I have been waiting for forever (okay, a week) to share this recipe with you guys!  This crockpot pumpkin bread pudding is so on my list now for my favorite fall recipes. 

crockpot-pumpkin-bread-pudding | hollyscheatday-comFirst off, you really can’t beat desserts made in the crockpot, honestly if the thought of baking cakes/cupcakes/bread pudding in the oven is intimidating, I highly recommend getting a start with a crockpot. 

crockpot-pumpkin-bread-pudding | hollyscheatday-comSecond, this is pumpkin (obvi) and me and pumpkin are BFF’s and last but not least this is bread pudding and again bread pudding is always a good idea, like always.  Also, the amazingly decadent sauce I poured all over this stuff is totally optional but I really really recommend you make it because it totally puts this bread pudding over the edge.

THE PUMPKIN BREAD PUDDING
  1. 1 Loaf of French Bread Pudding, Torn Into Pieces.
  2. 2 Cups of Half & Half or Heavy Whipping Cream.
  3. 1 (15 Ounce) Can of Pumpkin Puree.
  4. 3/4 Cup of Granulated Sugar.
  5. 3/4 Cup of Light Brown Sugar.
  6. 4 Eggs.
  7. 1 Tablespoon of Cinnamon.
  8. 2 Tablespoons of Vanilla Extract.
  9. 4 to 5 Quart Slow Cooker.
THE SAUCE
  1. 1 Cup (2 Sticks) of Unsalted Butter.
  2. 1 Cup of Half & Half.
  3. 1 Cup of Light Brown Sugar.
FOR THE BREAD PUDDING
  1. Liberally spray your slow cooker with non-stick cooking spray, set aside.
  2. You can cut up your whole bread loaf with a knife or just rip it up into pieces and place into your slow cooker pot.
  3. Now in a medium/large bowl place your pumpkin puree, half & half, brown sugar, granulated sugar, eggs, vanilla and cinnamon and whisk all together until well mixed.
  4. Pour the mixture all over your bread pieces in your crockpot and with a spoon or spatula, press the bread down to make sure all are well covered.
  5. Now turn your crockpot on high and bake for 2.5 hours (or on low for 5.5).
FOR THE SAUCE (OPTIONAL)
  1. In a medium saucepan, place your butter, half & half and brown sugar.
  2. On medium heat melt all of the ingredients together, then raise the heat to high and bring your ingredients to a boil for about 20 seconds, lower the heat to low then simmer for about 5 minutes or until it starts to thicken.
  3. When your bread pudding is done, when you serve it, pour this delicious sauce all over and enjoy!!!

Spooky Godiva Cookies & Cream Shake

Happy Happy Friday everybody !!! I am so excited to share this recipe with y’all today!!!  Why? well, first, it’s a milkshake (always a good idea), second, it’s a cocktail (very good idea) and third, it’s Halloween themed (woohoo!). 

spooky-godiva-cookies-and-cream | hollyscheatday-comI am aware that the Halloween Oreos don’t taste any different than normal ones, but come on, they’re soo wonderfully Halloween with the orange filling and the cute little prints on the back, anyways, sorry, I get so excited about themed food hehe.  Sooo, back to this awesome cocktail treat.  This is another one that came together solely because I started throwing things together in a blender.

Ingredients
  1. 6-8 Halloween Oreos (or Regular Ones).
  2. 1/2 Cup of Milk or Heavy Cream.
  3. 2-3 Cups of Vanilla Ice Cream.
  4. 3.5 Ounces of Godiva White Chocolate Liqueur.
Instructions
  1. Place all of your ingredients into your blender and mix until smooth.
  2. Garnish with whipped cream and another Oreo cookie and enjoy!

Easy Salted Pretzel Bites

Hey everybody!!!  Y’all, it’s only Wednesday, what the heck?  When you have totally reached your quota of people annoying you, arguing with you, and generally just causing massive amounts of stress and discontent inside, and then you realize it’s only the middle of the week, siiiigh. 

easy-salted-pretzel-bites | hollyscheatday-comI’m normally a very happy and positive person, but there are just some people who come along and put a quick stop to that, and folks, that has been happening since Monday.  Literally visions of getting in my car, driving far far away and changing my name have genuinely crossed my mind at least 10 times, yes a little melodramatic but whatevs. 

easy-salted-pretzel-bites | hollyscheatday-comI guess all I can do is keep on praying for my continued sanity  haha.  Soo anyways, back to what you’re really here for..food, and lots of it. I don’t know about y’all, but soft pretzels in my mind are one of the most delectable savory treats in the world (a very grand statement, but I’m sticking to it).

Easy Salted Pretzel Bites

Delicious and easy pretzel bites that are a cinch to make.

THE PRETZEL BITES
  1. 1 Package of Pre-Made Pizza Dough (I Used Publix Brand).
  2. 1-3 Cups of All-Purpose Flour, For Rolling the Dough.
  3. 1 Egg
  4. 1/2 Cup of Baking Soda.
  5. 9 Cups of Water.
  6. Sea Salt.
THE CHEESE SAUCE (OPTIONAL)
  1. 3 Tablespoons of Unsalted Butter.
  2. 2 Tablespoons of Flour.
  3. 1 Cup of Milk.
  4. 1 Cup of Sharp Cheddar Cheese, Shredded.
  5. Salt and Pepper If Desired.
FOR THE PRETZEL BITES
  1. If using pre-made pizza dough, let it rise for 1 hour.
  2. Preheat your oven to 425 degrees F.
  3. On a large baking sheet or 2 medium sized baking sheets cover in aluminum foil and spray with non stick spray and set aside.
  4. Place your flour all over your counter top, then place your dough onto it.
  5. Cut your dough into 4-6 sections, roll out and slice into bite sized pieces.
  6. Whisk together an egg and a dash of water for the egg wash.
  7. In a large pot, bring to boil 9 cups of water with 1/2 cup of baking soda.
  8. While continuing to boil, place 8-10 of the dough bites into the water and remove after 20-30 seconds with a slotted spoon, draining as much liquid as possible and place onto your baking sheet.
  9. After boiling all of your bites, brush your egg was all over your bites and sprinkle sea salt on them as well.
  10. Bake for 12-14 minutes or until just starting to turn golden brown.
FOR THE CHEESE SAUCE (OPTIONAL)
  1. In a small/medium sized saucepan on medium heat, place your butter into your pan and once melted add your flour and whisk together.
  2. Now pour in your milk and mix in thoroughly until it starts to thicken, then remove from the heat and add in your cheese.
  3. Mix the cheese in until it completely melts and is well combined.
  4. Add salt and pepper if desired and enjoy!!!

Skillet Tater Tot Casserole

Happy Happy Monday y’all!!!  There are few food items in this world that I am a bit embarrassed to admit that I love to nosh on, but one of those items is tater tots.  I don’t know why either, maybe because the word ‘tater’ is used, maybe because they seem like the bastard spawn of baked potatoes, honestly just not sure, but in my mind there is no denying their deliciousness. 

skillet-tater-tot-casserole | hollyscheatday-comI will also admit here today that I have been known to on many a cheat day,  go through the drive-in at Sonic (yes I said drive-in, haha).  I go to Sonic for one thing and one thing only, their cheese tots, nom, nom, and honestly I feel like such a hillbilly to even admit that, but oh well there it is for all to judge, haha. 

skillet-tater-tot-casserole | hollyscheatday-comLet’s be real though, sometimes I think some of us (definitely not me of course) just want to lounge around in yoga pants, glasses and our hair on top of our heads in a bun on the weekend and do nothing except enjoy food and fun, amaright?  Well, luckily if you’re feeling a bit hillbilly hungry you too can enjoy some delicious, cheesy gooey tots baked to perfection in an iron skillet while still in the comfort of your stretchy pants own home.

Delicious and easy savory dish made in an iron skillet.

Ingredients
  1. 1 (2 Lb) Bag of Tater Tots, Frozen.
  2. 1 (16 Ounce) Container of Sour Cream.
  3. 1 (10.75 Ounce) Can of Cream of Chicken Soup.
  4. 1 (1 Ounce) Packet of Ranch Dressing Mix.
  5. 2 Cups of Sharp Cheddar Cheese, Shredded.
  6. 10" Iron Skillet.
Instructions
  1. Preheat your oven to 350 degrees F.
  2. Take a stick of butter and rub it in the inside and up the sides of your iron skillet.
  3. In a large bowl, place your sour cream, cream of chicken soup, ranch mix, shredded cheese and mix together until well combined.
  4. Now add your frozen tater tots and mix them into your sour cream/ranch mixture until evenly covered and mixed in.
  5. Now place your tater tot mixture into your skillet and bake for 35-40 minutes or until the tater tots have become golden brown and the cheese is bubbly.
  6. Serve immediately and enjoy!!!
Notes
  1. You can totally use a different kind of cheese or even add an extra protein like chicken or beef.

Not Your Mama’s Hot Chocolate

Happy Happy Cocktail Friday everybody!!!   Deep down, I think that if I continue to post chilly weather recipes it will make that wonderful weather appear here hehe.  Today is obviously another one of those recipes and a happy accident to boot.  I really am not a big drinker at all, though (obviously) I am one to partake in adult beverages from time to time, but definitely sparingly…Now, if you were to walk into my pantry, you would totally think I had a problem due to the sheer amount of bottles of liquors and liqueurs in there. 

not-your-mamas-hot-chocolate | hollyscheatday-comMy stockpile of alcohol is totally due to this little blog and always wanting to share new cocktail recipes that need whatever ingredients in it.  What I’m saying is, is that I have 4 billion too many bottles of barely used liquor hanging around.  That’s where this recipe comes in, I decided this past cheat day that I needed to actually use the many varieties that I already had, and the first one to pop out at me was the Marshmallow Vodka, because yum.

not-your-mamas-hot-chocolate-sdovh-hollyscheatday-comI had some left over hot chocolate packs from my Frozen Hot Chocolate, and I thought maybe these might be a nice combo.  This cocktail turned out so decadent y’all, the thick hot chocolate with that little kick of the marshmallow vodka was so perfect.  I very much enjoyed sipping on this awesome drink, while sitting in the AC mind you, but maybe it’s cool enough where you’re at to have a cup or two.  Have a wonderful day, a wonderful weekend and thank you so much for stopping by!!!

Absolutely delicious hot chocolate with Marshmallow Vodka.

Ingredients
  1. 2 Packs (0.73 Ounce) of Swiss Miss Hot Chocolate.
  2. 8 Ounces of Heavy Whipping Cream.
  3. 4 Ounces of Milk.
  4. 3 Ounces of Marshmallow Vodka.
  5. Marshmallows for Garnish (Optional).
  6. Whipped Cream for Garnish (Optional).
  7. 1 Milk Chocolate Bar for Garnish (Optional).
Instructions
  1. In a small saucepan, place your heavy cream and milk in a pan and place on medium/low heat and warm it, removing from the heat right before it starts boil.
  2. Pour your hot chocolate packs into your pan and stir in until smooth and well mixed.
  3. Serve your hot chocolate in whatever mug you like best, pour your marshmallow vodka in, and gently stirring.
  4. Garnish with marshmallows and whipped cream and enjoy!
Notes
  1. For the cup rim, I used a vegetable peeler and carefully placed the chocolate shavings onto a plate, put chocolate syrup around the edge of the cup and dipped it into the chocolate shavings until covered.

Easy Pumpkin Pie Ice Cream

Happy Wednesday everybody!!! I know, more pumpkin stuff already, but y’all were forewarned about my love of all things pumpkin (except pumpkin spiced lattes, eww) and how pumpkin will be a common theme for the foreseeable future AKA until at least February.  As much as I would love for it to actually feel like Fall outside already (those cool crisp mornings, heaven) instead of the 90+ degree days that have seemed to plague the general area since May, but it’s not yet, sigh 

easy-pumpkin-pie-ice-cream | HollysCheatDay.com Fortunately, I have stumbled across several pumpkin pie ice cream recipes recently, which hello! is perfect.  It’s too hot still to enjoy all of the baked delicious pumpkin goodies (not that that will stop me or anything) but I’m soo ready for all things Fall to be in my mouth  my life, so what better way to get all the Fall feels without the not-so-Fall sweats than this ice cream.

  1. 16 Ounces of Heavy Whipping Cream.
  2. 1 (14 Ounce) Can of Sweetened Condensed Milk.
  3. 1 Cup of Pumpkin Puree.
  4. 1 Teaspoon of Cinnamon.

  6. 1 Tablespoon of Vanilla Extract.
Instructions
  1. With a handheld or stand mixer with whisk attachment, place your heavy whipping cream into your bowl and whip until stiff peaks form.
  2. Lower the speed of your mixer and slowly pour in your sweetened condensed milk.
  3. Now fold in your pumpkin puree, vanilla, cloves and cinnamon until well combined.
  4. Place into a separate container with a lid and freeze for at least 3 hours, serve and enjoy!!!

Dutch Baby

Happy Monday and Happy Labor Day everybody!!!  I hope everyone reading this is enjoying some good food, good times and a lot of free time with loved ones and away from work and school.  I am way excited to share this recipe with y’all today. 

dutch-baby | HollysCheatDay.comI’ve had this Dutch Baby recipe hanging out in my to do list for forever.  As soon as I took one bite of this, I asked myself why in the world I didn’t make it sooner. First, let’s start with how dang easy this is to make, I mean seriously, ingredients into the blender, then into your skillet and that’s it. 

dutch-baby | HollysCheatDay.comSecond, this bakes up very quickly and bonus, looks super cool doing it and last but certainly not least this is absolutely delicious!  Just imagine a mix of a doughnut, a pancake and french toast all in one dessert and you have the Dutch Baby. I sprinkled this guy with powdered sugar and some fresh fruit and berries and holy cow it’s amazing. 

dutch-baby-cls | HollysCheatDay.comMy favorite part about this is that some parts of it are just slightly crunchy but still soft and the other part is super gooey and wonderful.  I would like to mention as a side note, that when you take your skillet out of the oven, be very careful about pouring your butter in, it sputtered hot butter everywhere haha, so just be careful.  If you’re looking for the perfect brunch day treat, please just make this, it’s too awesome not to.  Have a wonderful day, and thank you so much stopping by!!!

Ingredients
  1. 1 Cup of Milk.
  2. 4 Eggs.
  3. 1 Tablespoon of Vanilla.
  4. 3 Tablespoons of Granulated Sugar.
  5. 1/2 Teaspoon of Salt.
  6. 1 Cup of Flour.
  7. 4 Tablespoons of Butter, Melted.
  8. Crème Fraiche, For Topping (Optional).
  9. Powdered Sugar, For Topping (Optional).
  10. 10" Iron Skillet.
Instructions
  1. Preheat your oven to 450 degrees F.
  2. Place your skillet in your oven while it preheats.
  3. Place the milk, eggs, vanilla, sugar, salt and flour into your blender, and mix well.
  4. Take your skillet out of the oven and place your melted butter into your skillet (watch out it will sputter and spit a lot) and then add your batter.
  5. Place your skillet in the oven for 15-20 minutes (I took mine out at 16) or until it's puffed up and golden brown around the edges.
  6. Garnish your dutch baby with powdered sugar, crème fraiche and fresh fruit if you like and enjoy!!!

Easy Pumpkin Maple Butter

Happy Happy first day of Halloween season, I mean, first day of September haha.  I know it seems that I’m jumping the gun a bit, but I looove Fall and I loooove Halloween.  Honestly, I put my Halloween decorations up in my office last week because they’re absolutely some of my favorites. 

easy-pumpkin-maple-butter | HollysCheatDay.comSpeaking of favorites, this time of year (ignoring the fact it’s still hot as blue blazes outside) has the best baked items, because I will swoon over just about anything with cinnamon, pumpkin or apples in it, mmmm.  So let’s get to today’s recipe, this incredible Pumpkin Maple Butter.  Fall is epitomized in this beyond easy to make ‘butter’. 

easy-pumpkin-maple-butter | HollysCheatDay.comI think calling this a spread would be better suited, but butter just sounds better am I right?  The fact that I threw all the ingredients into my saucepan, cooked it up for a bit and voila delicious butter is so awesome.

Delicious butter with all the flavor of pumpkin, maple syrup and cinnamon.

Ingredients
  1. 2-15 Ounce Cans of Pumpkin Puree.
  2. 6 Tablespoons of Maple Syrup.
  3. 3 Tablespoons of Brown Sugar.
  4. 2 Teaspoons of Cinnamon.
  5. 1/2 Teaspoon of Ground Ginger.
  6. 1/8 Teaspoon of Ground Clover.
Instructions
  1. In a medium sized saucepan, place all of your ingredients into it.
  2. On medium/low heat cook your ingredients for 15-20 minutes making sure to stir occasionally until it is cooked thoroughly and thickened.
  3. Then enjoy!!!

Peanut Butter Banana Cookies

Happy Happy Tuesday everybody !!!  I know it’s still early in the week, but dang y’all I’m sooo looking forward to the upcoming long weekend.  Am I doing anything super crazy and fun? Heck no, but being able to just chill with family and friends and having one extra day of not having to wake up at the booty crack of dawn sounds just wonderful. 

peanut-butter-banana-cookies | HollysCheatDay.comSpeaking of, I genuinely can’t believe it’s almost September, for reals y’all, how did that happen?  Didn’t we just start 2016?  Sheesh, time is continually going by faster and faster but if we can get to Fall & the wonderful Fall temperatures faster then I’m soo okay with that haha.  Anyways, I am way excited to share these cookies with you guys today, because they were totally a happy accident.

Ingredients
  1. 3 Large Bananas, Very Ripe & Room Temperature.
  2. 1 Stick of Unsalted Butter, Softened.
  3. 3/4 Cup of Granulated Sugar.
  4. 1 Cup of Brown Sugar, Packed.
  5. 1 Cup of Cream Peanut Butter.
  6. 2 Eggs.
  7. 2 Teaspoons of Cinnamon.
  8. 1 Teaspoon of Salt.
  9. 1 Teaspoon of Baking Soda.
  10. 2 Cups of Quick Oats.
  11. 1 Cup of All-Purpose Flour.
  12. 1/4-1/2 Cup of Mini Semi-Sweet Chocolate Chips (Optional).
Instructions
  1. With a handheld or stand mixer with paddle attachment add your bananas and butter to your bowl.
  2. Mix the bananas and butter together until smooth.
  3. Now add your granulated sugar and your brown sugar to your bowl and mix again.
  4. Now add your eggs, peanut butter, oats, salt and baking soda and mix until well combined.
  5. If you want to add chocolate chips, do so now and mix until just incorporated.
  6. Cover and chill your cookie dough for one hour.
  7. Preheat your oven to 350 degrees F.
  8. Spray your cookie sheet with non stick spray and using a spoon or a mini cookie dough scooper, place your cookie dough 1-2" inches apart and bake 10-12 minutes or until they're just starting to turn golden around the edges.
  9. Let cool slightly and enjoy!!
