Happy Happy Tuesday y’all!!! I have to admit, in my lifetime, apple butter has not been at the top of my list of favorite food things to eat on biscuits, bread or bagels. That is usually designated to jelly, butter or cream cheese (or all of the above hehe). Honestly that went out the window the day my mom, and my sister and I went to a local place called ‘The Flying Biscuit.’
My sister had been raving for months about how great their biscuits were and that their homemade apple butter was just to die for. Not wanting to burst her bubble at my lifelong semi-dislike for apple butter I was all ‘sure, sounds great’ but just figured I would be enjoying a waffle or something else instead. At my sister’s insistence when we got there to try this magical butter, I finally caved, and thank goodness I did because yummm!!!
It tasted nothing like any pre-packaged grossness apple butter I had had before. This was filled with a delicious fresh apple taste and tons of spices. Obviously I asked if I could buy a 50 gallon barrel some jars of it there but unfortunately they don’t sell it, WTH?! Well, not having this apple butter on every cheat day come Fall/Winter time was not an option for me, so I figured I needed to get crackin’ on making my own.
Y’all, this crockpot apple butter I made is un-freaking-believable, like, sitting down and eating this stuff all by itself in a bowl is 100% an option kind of good. I tried this stuff on biscuits, toast and bagels and all are just so freaking delicious and literally Fall in every bite. Also, let’s talk about how awesome your house is going to smell while this stuff cooks up all day, heavenly is really the word that comes to mind. washed and peeled…
chopped up and into your bowl…
add sugars and spices…
all mixed up…
into your crockpot…
after many hours of cooking…
mix, mix, mix…

- 4 Pounds of Apples (I Used 5 Large Honey Crisp).
- 1/4 Cup of Granulated Sugar.
- 1/4 Cup of Brown Sugar.
- 1 Tablespoon of Ground Cinnamon.
- 1/2 Teaspoon of Ground Nutmeg.
- 1/4 Teaspoon of Ground Ginger.
- 1/4 Teaspoon of Ground Cloves.
- 1/4 Teaspoon of Salt.
- 1-4 or 5 Quart Crockpot.
- Turn your crockpot on low heat.
- Wash and peel all of your apples.
- Chop all of your apples into small pieces and place into a large bowl.
- Now add your brown sugar, granulated sugar, cinnamon, ginger, nutmeg, cloves, and salt.
- Now mix all together until evenly mixed and place into your crockpot and cover.
- Cook on low for 2 hours, stir your apple mixture together and raise the temperature to high on your crockpot and continue to cook for an additional 5-6 hours.
- If you have a hand blender you can place directly into your apple butter mixture and mix until smooth, or you can place into a blender and mix until smooth.
- Slather this delicious apple butter onto biscuits or bagels and enjoy!!!

If y’all didn’t already know, I’m going to let you in on a little secret, Disney World has some of the best Rice Krispy treats ever! I mean come on, Mickey Mouse shaped Rice Krispy treats just taste better (must be all of that magic hehe).
I kept seeing all of their delectable Halloween treats pop up in my Instagram feed and I knew I was going to need a fix ASAP and that’s where these bad boys come in. These Pumpkin Spice Krispy Treats turned out absolutely perfect!!! I will freely admit that I ate most of these all on my own #noregrets, and if you’re worried that these will taste overly pumpkin spice-ish, don’t, there really is just a hint of pumpkin and spices. Speaking of frosting, y’all are totally welcome to buy a pre-made frosting from the store if you’re really in a time crunch, but I most definitely recommend you make this cinnamon cream cheese frosting, which BTW I can take credit for hehe.
It’s the perfect amount of sweetness with the tanginess of the cream cheese, and of course the star of the show, cinnamon, yummy y’all. This is a definite crowd pleaser, with the top part being the texture of a moist cake and the bottom part being all pumpkin pie-ish, OMG I’m drooling at the thought of this delightful treat. Sounds weird, but if you’re outside for more than 2 seconds around these parts then, profuse sweating is inevitable, I’m not a hermit or anything I swear haha, but dripping in sweat outside of the gym while trying to look cute gets annoying. For reals y’all this is just too good to be true. A lot of high protein pancake & waffle recipes I see are absolutely loaded with carbs and tons of calories so I don’t even bother. Obviously this is not the case with this. This waffle is so fluffy and thick, I’m really not kidding when I say that you would not know that this was low carb.
Also, if you’re a peanut butter fan like myself, I highly recommend you melt half or a whole serving of some PB and pour it all over the top, and do not forget the spray butter and Walden Farms syrup. I love just about anything Halloween themed, and these little shots are so that, I mean, come on, orange and black sprinkled rims? Too cute! The title? well, I’ll just go ahead and take credit for that, well kind of, I was watching one of my favorite get in the Halloween mood movies Practical Magic and was inspired by their witchy ways hehe. Then, the best part, these little shots are delicious! These are definitely more tropical tasting the average Fall time drink, but who cares, they’re just so darn tasty.
These little shots are just enough sweet without being crazy sweet, they’re bubbly, cold and most definitely have a kick. Obviously you are welcome to turn down the kick by leaving out the rum and adding more pineapple juice, but I’m definitely liking them the way that they are. Who would have thought that one of their little free appetizers could be so darn good that I would have immediately started trying to figure out how to make it myself?
Now, I’m not saying these are as good as their version, but I will say it’s pretty ding dang close. These nuts are just slightly spicy, sweet, a little bit savory and the rosemary coming off of these is intoxicating. This is a one bowl, quick and easy recipe and just perfect to have hanging around for a snack, even though there wasn’t much hanging around with these because I ate them all haha. I mean, I’m not gonna lie, the A/C was super cranked up which did not keep all of the humidity out, and then the added heat of the oven, I was sweating y’all. On the bright side, butter and cream cheese come to room temperature in a third the time at these oh so summer temps, so I didn’t have to wait on that for my frosting.
Speaking of, this frosting, y’all… wowza, just imagine a perfectly fall spiced pumpkin mousse that is deliciously light and decadent, and that is this frosting. The cupcakes fluffed up perfectly, and honestly I can’t remember the last time that I made cupcakes that puffed up and stayed up so nicely after taking them out of the oven.
