Strawberry Gin and Tonic

Happy Happy Friday!!! Jeez laweez y’all it’s almost the weekend woohoo! I really hope I’m not boring y’all with yet another take on my favorite cocktail in the whole world, the Gin and Tonic, but I obviously couldn’t help myself. 

strawberry-gin-and-tonic | HollysCheatDay.comTechnically, strawberries are not in season right now, and they’re looking & tasting a little less than awesome around this time of year, but I had some and figured why not throw them into my drink for some beautiful color and flavor? 

strawberry-gin-and-tonic | HollysCheatDay.comOh and in my opinion mint also goes so nicely with strawberries so I threw a little bit of that in too.  This drink, like most G & T’s isn’t overly sweet (which I actually prefer in cocktails) but has a slight hint of strawberry and a slight hint of mint.  This to me is very refreshing and light, and if that’s your thing too then I think you’ll really enjoy this.  Have a fabulous day and weekend and thank you so much stopping by!

Strawberry Gin and Tonic

Delicious and fun take on a traditional gin and tonic.

Ingredients
  1. 2-3 Teaspoons of Granulated Sugar.
  2. 3-4 Fresh Strawberries.
  3. 1 Lime Wedge.
  4. 2 Sprigs of Fresh Mint.
  5. 2 Ounces of Gin.
  6. Tonic Water.
Instructions
  1. In a tall glass or shaker, place 1-2 strawberries that has been sliced into your glass, as well as the sugar, the juice from the lime wedge and mint.
  2. With a large spoon or end of a wooden spoon, muddle these ingredients together.
  3. Now put this mixture into your serving glass, add another sliced strawberry, the Gin, ice, and fill to the top with tonic water.
  4. Serve and enjoy.

Crustless Fig Bacon Quiche

Happy Wednesday everybody!!!  This is definitely not the typical hump day treat that you would expect from me, but y’all, I’m in love with this quiche.  Obviously, quiche is just a big giant omelette beautifully displayed in a pan, but I feel like this is so much more. 

crustless-bacon-fig-goat-cheese-quiche| HollysCheatDay.comTo me, what is so fun about quiche is that you can throw in any number or mix and match of ingredients, and it’s completely okay.  If you love your veggies and cheese, throw that in, if you like your stuff a little more unique (like myself) then throw in whatever sounds best to you. 

crustless-fig-bacon-quiche| HollysCheatDay.comI recently had some goat cheese stuffed figs (a seasonal favorite) and they were absolutely fabulous, and it got me thinking about throwing those exact items into a quiche, because why not right?

Crustless Fig Bacon Quiche

Delicious and easy quiche filled with goat cheese, bacon and topped with slightly sweet figs.

Ingredients
  1. 6 Eggs.
  2. 3/4 Cup of Heavy Cream.
  3. 4 Ounces of Goat Cheese, Room Temperature.
  4. 2 Figs, Sliced.
  5. 1/2 of a Medium Onion, Chopped.
  6. 4 Slices of Turkey Bacon.
  7. Salt and Pepper to Taste.
  8. 8" Pie or Quiche Pan.
Instructions
  1. Preheat your oven to 350 degrees F.
  2. Spray your pan liberally with non-stick spray and set aside.
  3. Cut your bacon into smallish pieces and chop your onion.
  4. Place your bacon and onion into a pan on medium heat and cook until bacon is almost fully cooked and onions are brown.
  5. Evenly spread your cooked onions and bacon into the bottom of your pie/quiche pan and set aside.
  6. Now in a medium bowl, place your eggs, heavy cream, goat cheese, salt and pepper and mix until smooth.
  7. Pour your egg/cheese mixture on top of your onions/bacon layer.
  8. Cut your figs and gently place them on top of quiche and bake for 25-28 minutes.
  9. Let cool slightly and enjoy!

Summer Southern Series: The Boozy Georgia Peach

Happy Happy Cocktail Friday friends!!!  I can’t emphasize enough how darn happy I am we are tthhiiss close to the weekend.  Honestly, there doesn’t seem to be any one particular reason, but a culmination of sitting in hours upon hours and hours, and hours, and hours of ATL traffic, dealing with crazy folks all week and a general lack of sleep has finally just taken its toll, y’all feel me? 

The-Boozy-Georgia-Peach-clssdovh| HollysCheatDay.comI honestly have no idea how parents do it, I have no kids (except a giant fur baby) and I feel spent, and I know some of y’all have the same work load/commute/life shenanigans AND have kids, so props to y’all, this drink is for you.  I would like to emphasize that I do not, nor have I ever believed alcohol to be the fixer of problems, but dang, sometimes the day/week/month/weird co-worker just calls for it 🙂

  1. 5-8 Scoops of Vanilla Ice Cream.
  2. 2 Peaches, Sliced.
  3. 3 Ounces of Vanilla Cake Vodka or Vanilla Vodka.
  4. 4 Ounces of Brandy.
  5. Dash of Cinnamon (Optional).
  6. Blender.
Instructions
  1. In your blender place your vanilla ice cream, sliced peaches, Vodka and Brandy and process until smooth.
  2. Pour into your glasses, top with an extra scoop of ice cream (optional) and a dash of cinnamon (also optional) and enjoy!!
Notes
  1. How much ice cream is totally up to you, I put about 5 scoops into the blender, then topped the glasses with another scoop.

Affogato

Happy Wednesday everybody!!!  I kind of feel silly even sharing this as a ‘recipe’ because it doesn’t get much easier than this delicious treat, but when I love things, I want to share them with y’all.  To be honest, I totally thought I invented putting ice cream with coffee or espresso, which I have done for years, but apparently I didn’t come up with it, womp, womp, womp…

affogato| HollysCheatDay.comPutting coffee or espresso with ice cream has a name, Affogato which in Italian actually means ‘drowned’, yikes, right?  But don’t let the meaning freak you out, because drowning your Gelato in coffee or espresso is such a delicious idea, it’s not to be missed.

Low Carb High Protein Snickerdoodle Cheesecake

Happy Happy Monday y’all!  I am always on the hunt for desserts that are as equally delicious as they are healthy, because as I might have mentioned before, I love food #foodieproblems.  Seriously, when it’s not a cheat day and all you want is a slice of something delicious, a piece of fruit (though delicious) is just not gonna cut it. 

low-carb-high-protein-snickerdoodle-cheesecake-ovh| HollysCheatDay.comHonestly most low carb, high protein desserts have a really bad habit of tasting like what you would expect, okay, but lacking, you know?  I can honestly say that this Snickerdoodle Cheesecake was not even remotely disappointing…does it taste like a freshly baked New York style cheesecake? no, but it definitely doesn’t taste like it’s low carb and high protein. 

low-carb-high-protein-snickerdoodle-cheesecake| HollysCheatDay.comThis cheesecake turned out to be perfectly satisfying and just exactly what I needed in my mouth in my life at that moment so I wouldn’t be driven crazy by my cravings.  I used the PE Science brand of protein powder in snickerdoodle, which is absolutely one of my favorites and it totally added that extra oomph in this delicious dessert.

Low Carb High Protein Snickerdoodle Cheesecake

Ingredients
  1. 1 Scoop of PE Science Protein Powder in Snickerdoodle.
  2. 1 Cup of 0% Greek Yogurt (I Used Fage).
  3. 3 (8 Ounce) Blocks of Fat Free Cream Cheese (I Used Philadelphia 1/3 Fat), Softened.
  4. 8 Ounces Liquid Egg Whites.
  5. Splash of Vanilla Extract.
  6. Dash of Cinnamon (Optional).
  7. 9" Pie Pan.
Instructions
  1. Preheat your oven to 350 degrees F.
  2. Spray your pie pan with non stick spray, set aside.
  3. With a handheld or stand mixer with a paddle attachment, place your blocks of cream cheese into your bowl and whip until smooth.
  4. Now add your Greek yogurt and egg whites and slowly mix those in.
  5. Now add the rest of your ingredients and blend until smooth.
  6. Place your batter in your pie pan and bake for 35-40 minutes (I took mine out at 37) or until the top starts to reach a golden brown.
  7. Let cool completely, sprinkle a little cinnamon on top, serve and enjoy!
Notes
  1. Macros per slice when cut into 8 slices is, 0 Grams of Fat, 10 Grams of Carbs, 30 Grams of Protein and 130 Calories.
  2. You can totally substitute whatever protein powder brand or flavor you have or prefer.

Frosé

Happy Happy Cocktail Friday!!!  OMG y’all if I was sent less than 10 articles about Frosé being ‘the new thing’ in all the cool bars in New York City this summer I would be shocked haha. 

Frosé| HollysCheatDay.comI am not at all complaining, I promise, I love when friends and family send me stuff that they think would be fun/delicious to make, but it got funnier and funnier every time someone else would send me this recipe. 

Frosé| HollysCheatDay.comI think I finally answered everyone back with a huge promise that I would make this recipe on my next cheat day.  Honestly, like all things that are hyped up I get very skeptical and hope that it lives up to mine and everyone’s expectations, but I’m very happy to tell you guys that this one totally did.  I cannot believe how much like a strawberry daiquiri this tasted like, except better because it’s so light.

Delicious and icy cold cocktail with champagne and fresh strawberries.

Ingredients
  1. 1 Bottle of Pink Rosé Champagne.
  2. 2 Cups of Strawberries, Washed and Stem Removed.
  3. 3 Tablespoons of Sugar.
  4. 1/4 Cup of Vodka.
  5. 2 Tablespoons of Grenadine.
  6. 2 Ice Cube Trays.
Instructions
  1. Fill your 2 ice cube trays with your Pink Rosé and freeze.
  2. Once the Rosé is frozen, wash and remove the stems from your strawberries and place into your blender.
  3. Add the sugar, vodka, Grenadine and frozen Rosé, and blend until smooth.
  4. Serve right away and enjoy!

Summer Southern Series: Skillet Fried Corn

Happy Hump Day y’all!!  Today I am bringing you guys another recipe in my Summer Southern Series, and I am so excited because this one is absolutely one of my personal favorites. 

southern-skillet-fried-corn| HollysCheatDay.comCorn on the cob is pretty much a staple around these parts in the summertime, and though I love me some corn on the cob, I love kicking up the delicious factor by throwing it in a skillet and frying it up!  This is a recipe courtesy of my mom, who in my opinion has perfected this skillet fried corn. 

southern-skillet-fried-corn-sdovhfar| HollysCheatDay.comDon’t let the word ‘frying’ freak you out either because there are no giant vats of oil or frying baskets that need be used for this.  This is pretty darn easy and not to mention ding dang delicious.  I feel like this skillet fried corn turns out to be the perfect mixture of sweet and creamy, but enough savory to put this over the top as an awesome side dish.

Summer Southern Series: Skillet Fried Corn

Absolutely delicious corn fried to perfection in an iron skillet.

Ingredients
  1. 6 Ears of Corn, Kernels Cut Off.
  2. 2/3 Cup of Water.
  3. 2 Teaspoons of Cornstarch.
  4. 1/4-2/3 Cup of Heavy Cream.
  5. 4-6 Tablespoons of Salted Butter.
  6. Salt and Pepper To Taste.
  7. 1-2 Tablespoons of Sugar (Optional).
  8. 9" Iron Skillet.
Instructions
  1. Cut the ends off of your corn, then hold them vertically on a large plate while you carefully cut the kernels off.
  2. Now place your butter in the bottom of your skillet and place on low to medium heat, when the butter is completely melted, raise the temperature to medium/high heat.
  3. Now add your corn kernels to your skillet, and if you feel the need to add sugar to your corn do so now, and cook your corn for about 1-2 minutes.
  4. Now add in your water to the corn and continue to stir until it begins to slightly thicken and some of the water has evaporated.
  5. Now add your cornstarch and cook for 1-2 minutes until it thickens more.
  6. Now add the desired amount of heavy cream to thicken up the mixture even further.
  7. At this point you can add more butter and add salt and pepper to taste, this is totally up to your preference, as well as how much longer you want to cook to reach desired thickness and creaminess.
  8. Serve and enjoy!
Notes
  1. The corn I used was so sweet I didn't need any sugar, and adding any is totally up to your preference.

Blackberry Lemon Tonic

Happy Monday y’all!  I hope none of you guys are judging me because I’m posting a cocktail on a Monday, but I love this drink so much I couldn’t wait to share it.

I had had another idea for a drink that was similar and it just wasn’t coming together properly, so looking into my fridge I realized I had a ton of lemonade left from another drink and some gorgeous looking blackberries sitting pretty in there too. 

blackberry-lemon-tonic | HollysCheatDay.comThose were definitely my starting points, but I knew it needed a touch of one of my favorite things, a Gin and tonic, yummy!  I will say if you are not at all a fan of Gin and tonics and think they’re not sweet enough for you, then this is the perfect cocktail for you. 

blackberry-lemon-tonic-clsrovh| HollysCheatDay.comThe gorgeous blackberries mixed with the fresh lemonade is deliciously sweet but light tasting, and of course the tonic adds the bubbly and the Gin is my homie is just that perfect kick.  Be careful with this one guys, you do not taste the alcohol at all, it just tastes like this wonderful summertime drink to sip by the pool–I’m not promoting public intoxication just so y’all know haha.  Anyways, I hope you have a wonderful start to your week and thank you so much for stopping by!

Blackberry Lemon Tonic

Delicious and refreshing cocktail filled with blackberries and lemonade.

Ingredients
  1. 10-12 Fresh Blackberries, Muddled.
  2. 2-4 Cups of Prepared Lemonade.
  3. 1/2 Cup of Tonic Water.
  4. 2-4 Ounces of Gin.
  5. Zest of Lemon For Garnish (Optional).
  6. 1/4 Cup of Sugar For Garnish (Optional).
Instructions
  1. If you would like a sugar/lemon zest rim on your glasses, zest your lemon onto your plate, add the sugar and mix together.
  2. Place a honey rim around your glasses and dip into the zest/sugar mixture until completely covered.
  3. Now place 5-6 fresh blackberries into each glass and muddle (or smoosh) the blackberries in the bottom of your glasses.
  4. Now fill your glasses almost 3/4 of the way full with the lemonade.
  5. Now add your tonic water until almost full, add 1-2 ounces of Gin in each glass, stir and enjoy!

Blackberry Wine Ice Cream

Happy Happy Friday y’all! I hope you guys don’t mind that I’m once again bringing you another homemade ice cream, but let’s be real, until Fall shows it’s beautiful head around here the ice cream will continue.  I’ve seen a few red wine ice creams running around on the interwebs, and this might sound like blasphemy to some of y’all, but I am not a fan of red wine #sorrynotsorry. 

blackberry-wine-ice-cream| HollysCheatDay.comI seriously have tried to like it, but it makes me feel like a pile of garbage every single time I drink it, and honestly I don’t think it tastes all that fabulous either #sorryagainnotsorryagain.  I did though love the idea of an alcoholic ice cream, but I wanted something that I thought would taste super amazing as well.  Hello to blackberry wine, which for some reason I can totally drink without it making me feel awful, and it tastes reeeaally good, in my opinion the way I had envisioned wine would taste when I was kid haha.

  1. 1 Cup of Whole Milk.
  2. 2 Cups of Heavy Whipping Cream.
  3. 1 (14 Ounce) Can of Sweetened Condensed Milk.
  4. 3/4 Cup of Blackberry Wine, Chilled.
  5. 1/8 Teaspoon of Salt.
  6. 10-12 Fresh Blackberries For Garnish (Optional).
  7. Purple Food Coloring (Optional).
Instructions
  1. In a large bowl, place all of your ingredients into it and mix until well combined
  2. Add food coloring at this time if you like.
  3. Now pour your mixture into your ice cream maker and prepare according to directions.
  4. Once the ice cream has fluffed up some, place into a separate container, cover and freeze for at least 4 hours.
  5. Serve, garnish with some blackberries and enjoy!
Notes
  1. I did place some blackberries into the mixture before freezing, but I don't recommend that, they become way too hard.

Funfetti Cake Dip

Happy Wednesday y’all!!! How’s everyone hanging in so far in your or your kid’s first few days back to school?  It’s been a few years since I’ve had to do the whole back to school thing, so it’s always a relief when I don’t have to worry about outfits, school supplies, what classes I’m taking, just the stress of it all you know? 

funfetti-cake-dip| HollysCheatDay.comAnyways, I am bringing y’all something today that is perfect for those of you who are maybe having a less than stellar first week so far (or even better, an awesome week),  Funfetti Cake Dip!  Writing those three little words together makes me so happy. 

funfetti-cake-dip| HollysCheatDay.comThis dip is crack with sprinkles you guys, like holy moly, just go ahead and eat the whole bowl by yourself kind of awesome–FYI, I didn’t, but it was tempting.  This dip straight up tastes like Funfetti cake batter that is totally acceptable to eat without the worry of raw eggs (not that I do anyway, but you know what I’m saying).

Easy and absolutely delicious dessert dip that tastes like cake batter.

Ingredients
  1. 1 (18.9 Ounce) Box of Funfetti Cake Mix.
  2. 2 Cups of Full Fat Vanilla Yogurt.
  3. 1 (8 Ounce) Tub of Cool Whip.
  4. Animal Crackers For Dipping.
  5. Extra Rainbow Sprinkles (Optional).
Instructions
  1. In a large bowl, place all ingredients into your bowl and mix until well combined.
  2. You can add some more sprinkles at this time if you want more color.
  3. Cover your bowl and let sit in the fridge for a couple of hours, put more sprinkles on top of your dip right before you serve and enjoy!
