How To Series: Pesto

February 1, 2016 By Holly

Happy Monday everybody!!  I am bringing y’all today another one in my How to Series that is definitely one of my favorites, pesto.  I love pesto so much, it’s such a simple addition but it makes everything it’s plastered placed on taste better-at least I think so haha.

how-to-series| HollysCheatDay.comFollowing in my former How To steps this one is also beyond easy to make and can be whipped up in about 5 minutes-honestly took me longer to get my food processor out and put together than to make it.

how-to-series| HollysCheatDay.comIf you’re looking for some ideas, one of my favorite things to do on my cheat day is to toast some bread and slather some fresh pesto, a dash of mozzarella and some tomatoes and nosh away, it’s so good y’all.  I hope everyone has a great first day back from your weekend and hope you get an opportunity to make some fresh pesto soon.

Basil, garlic, pine nuts and Parmesan into your food processor…

How To Series: Bone Broth

January 18, 2016 By Holly

Happy Monday everybody!!  I know, it’s kind of weird I’m posting a How To Series on a Monday, but I felt like this post was necessary.  Right now, myself and 2 other people in my office are the only ones not suffering from the flu, a cold, sinus infection whatever, so aside from wearing  a hazmat suit to work (and because the infected won’t stay home) this post was a must.

how-to-series-bone-broth| HollysCheatDay.comI had heard about all the wonders of bone broth for months now, from helping heartburn, indigestion and just in general doing amazing things for your immune system I definitely thought it was time to make.  I went to a local butcher in my area and got some beef knuckle bones with the marrow, and honestly I really wanted beef leg bones with marrow but they were out but remember you can use any kind you like but definitely try to use bones with the marrow-thats the key.  I ended up cooking my bone broth in my Crockpot for 48 hours, but it tasted the best to me at 24 hours because it wasn’t as thick, but remember the longer you cook, the fattier and healthier it becomes for you.  I don’t know if this stuff is a miracle worker, but so far I haven’t caught anything yet so we will see. Y’all have an awesome day and stay well!

First, place your water, bones and apple cider vinegar into your pot to let sit for a while…

  3. 4-6 Stalks of Celery.
  4. 1/2 Cup of Onion, Chopped.
  5. 2 Cups of Water.
  6. 2 Tablespoons of Apple Cider Vinegar.
  7. 1 Crockpot.
Instructions
  1. Place your water, bones and apple cider vinegar into your Crockpot, let stand for at least 30 minutes.
  2. Place your carrots, onions, and celery into your pot, place your lid and turn your Crockpot on high for 3 hours, then turn the heat down to low or simmer and continue like this for at least an additional 9 hours, and enjoy!
Notes
  1. Remember, the longer you cook it the more fatty the texture is going to be, but the more health benefits it will have.
  2. This will keep in the fridge for a week, but it can be frozen for a year.

Homemade Vanilla Extract

January 13, 2016 By Holly

Happy Wednesday everybody!  I’m pretty dang excited to share this recipe with y’all today.  This recipe comes courtesy of my mom who has been making this waaaay before I was born, and I think it’s safe to say that this is her recipe because I have never met anyone else before who makes vanilla with Brandy.

Homemade-Vanilla-Extract| HollysCheatDay.cmI’ve seen vanilla made with Vodka before (not so sure about the taste on that one) but don’t think I’ve seen it made with Brandy (if you make it this way, sorry haha and let me know), but anyways, why buy vanilla extract when you can make your own for way less and about a gazillion times more delicious? Exactly! there’s no reason you shouldn’t, but obviously this is a recipe that has to sit for a hot second, so don’t think you can make some in a day haha.

homemade-vanilla-extract| HollysCheatDay.comRight now, I have 2 bottles of this stuff in my pantry-the new one I just made for the blog and to replenish from giving so much away for Christmas and another one from summer, it smells incredible btw.

homemade-vanilla-extract| HollysCheatDay.coSo yeah, I keep a little bottle of already made vanilla next to the stove, and keep the bottles of it (yes, keep the vanilla beans in) in the pantry.  Happy Hump Day y’all, and let me know if you make yourself some homemade vanilla 🙂

Look, vanilla beans and Brandy are our only ingredients…

Homemade Vanilla Extract| HollysCheatDay.comslice each of your vanilla beans down the middle (don’t scrape the insides out)…

Homemade-vanilla-extract| HollysCheatDay.comall of your vanilla beans sliced down the middle…

How To Series: Homemade Whipped Cream

January 8, 2016 By Holly

Happy Friday and welcome to another post in my how to series.  This is another one that is so incredibly easy to make and not to mention insanely delicious but I’ve gotten the feeling from folks that it’s something difficult to make.

how-to-series-homemade-whipped-cream| HollysCheatDay.comHeck no y’all, this is seriously easy, and always adds that extra bit of awesome on everything.  Many times when I haven’t felt like making a whole shebang of icing but want a little something extra on top of a dessert,  I’ll just whip up some heavy whipping cream for a topper and it’s just as good (or better sometimes).

how-to-series-homemade-whipped-cream| HollysCheatDay.comI hope y’all have survived your first full week back from the holidays and have a wonderful Friday and weekend!

How To Series: Brown Butter

December 18, 2015 By Holly

Happy Friday everybody!!  Oh my y’all, the countdown is on for Christmas, and I don’t know about you guys, but I am feeling super duper behind this year.  I had all shopping and almost all wrapping done last year by this time so wowza here we are.

how-to-brown-butter| HollysCheatDay.comAnyways, today I’ll be showing you a step-by-step guide to making brown butter.  As I have mentioned in past posts, brown butter is one of my favorite things that adds sooo much flavor to everything you put it in, but at times has the mystique (first time ever mystique has been used in reference to butter?) of being difficult to make.

how-to-brown-butter| HollysCheatDay.comWhen I first started looking into how to make brown butter, I felt like I kept reading over and over again how easily it was to burn it and how it would be a terrible mess if you did etc, etc.  Yes, butter can burn, and yes it could be a mess if you did, but I’m thinking some folks were being a bit dramatic because I think you would have to walk away from your pan of butter to burn it that easily.  Soo…here it is….

I always cut up the butter so it will melt more quickly & evenly…

how-to-make-brown-butter| HollysCheatDay.comnice & melted…

how-to-make-brown-butter| HollysCheatDay.comstarting to bubble a little…

how-to-make-brown-butter| HollysCheatDay.comremember to constantly stir, starting to kind of foam up and bubble more now…

how-to-make-brown-butter| HollysCheatDay.comstarting to see some brown-ness & it will start to smell nutty and delicious at this point…

how-to-make-brown-butter| HollysCheatDay.comreally nice and brown in the bottom, now is a good time to remove from the heat, but continue stirring…

how-to-make-brown-butter| HollysCheatDay.comafter taking off the heat and cooling for just a bit…

how-to-make-brown-butter| HollysCheatDay.comand you can enjoy this in just about everything!!!

How To Series: Simple Syrup

December 4, 2015 By Holly

Happy Friday!! Today will be the first post in my new How To Series.  It definitely won’t be anything fancy, just the basic stuff that I feel like every cook should know.  When I first started really getting into cooking and baking I felt like there were a lot of pieces to recipes that were basically assuming you knew how to do it or even knew what the heck they were talking about.

simple-syrup| HollysCheatDay.comOne of those things was simple syrup, a very very simple recipe and easily made but I felt like I saw it everywhere, drink recipes, put on cake layers to help keep the moisture in, etc., and I totally didn’t know what it was and assumed it was difficult to make.  Now that I know that this takes less than 10 minutes to make and it will keep in a jar for plenty other uses, I kind of wish I had known a lot sooner.  So, don’t do what I did and not make stuff because it seems hard, because it might just be easy peasy.  Enjoy y’all!

Step 1: 1 cup of sugar into your pan…

simple-syrup| HollysCheatDay.comStep 2: 1 cup of water into your pan…

simple-syrup| HollysCheatDay.comStep 3: Start heating these 2 ingredients together until it boils…

simple-syrup| HollysCheatDay.comStep 4: When the sugar has dissolved throughout, remove from the heat…

simple-syrup| HollysCheatDay.comand voila! how easy was that? 🙂
