Easy Pineapple Coconut Fluff

August 7, 2017 By Holly

Happy Happy Monday everybody!!!  Did everyone have a nice weekend? They’re usually always nice though right, well except when they’re over so quickly.  Anyways, I’m going to confess something…  sometimes I am an absolute terrible food blogger.  Sometimes I make recipes, I photograph recipes, I even share these made recipes at a party, and then sometimes I forget all about them, oops.

Y’all, I made this Easy Pineapple Coconut Fluff for a Memorial Day Party, y’all! Memorial Day!! That was almost 2 months ago!  I didn’t forget or not post because I didn’t like this, not at all, I absolutely love this dish.  Not only was it thrown together in about 5 minutes, but it’s also no-bake, it’s fruity & fun.  If I were to look for a reason, it probably has something to do with making/shooting/editing 5-7 recipes every weekend, and I guess this particular one just got lost in the mix of all of my Junk Food Reviews and original recipes, sheesh I can be such a goob.

Since I am already currently being bombarded by all things to do with Fall, I figure I might as well throw out one last tropical, summer type recipe before it’s too late, I mean, it is still hot as Hades around here after all.  Oh, and I used these really fun and yummy marshmallows that were fruit flavored in this recipe, but if you can’t find them or don’t want to use them,  using regular old mini marshmallows, is A-OK.  I really hope everyone has a fantastic Monday and as always, thank you all so much for stopping by!!!

crushed pineapple with the vanilla pudding…

mix, mix, mix…

then the Cool Whip & coconut extract…

then the marshmallows and coconut…

and enjoy!!!

Easy Peanut Butter Dip

August 4, 2017 By Holly

Happy Happy Friday everybody!!! How are y’all doing? For those of you that have started back to school (or have kids that have started back to school), y’all doing alright?  I know how crazy banana pants for everyone the first couple of weeks back can be so I thought I’d check in on everyone haha.  Today’s post is keeping with the theme of simplicity like it has been all week, because who needs fun foods made complicated, amiright?

I almost don’t even want to admit where I got this recipe, because y’all, this one came straight off the top of the Jif Whips Peanut Butter container.  BTW just so y’all know, the Jif Whips Peanut Butter is the freaking bee’s knees, and no I’m not being paid or sponsored to say that, but I love you guys and want you to know how good it is.

Not only is the texture nice and whipped and fluffy, but it’s also slightly lower in fat, calories and carbs than regular peanut butter.  I put 1/2 a serving of it in my oatmeal almost every morning, and it’s pure magic, like I literally take as long as possible to eat it because it’s so delicious.  Anyways, back to this delicious dessert dip.  The top of the peanut butter container had this recipe on it, but they called it an orange peanut butter dip because their original recipe had orange marmalade in it, and honestly I wasn’t really feeling that so I substituted raspberry jelly instead.

Let me tell you guys, if you love peanut butter and jelly sandwiches, you’re gonna freaking love this dip.  It tastes like a more decadent (thank you Cool Whip) peanut butter and jelly sandwich, that you then get to dip pretzels (or cookies or fruit) in, drooool.  I also may have doubled the amount of Cool Whip, because, why not?  If you’re looking for something super easy and fun to make tonight or this weekend, I definitely recommend this glorious dip.  Have a wonderful weekend and thank you so much for stopping by!

whipped peanut butter…

and jelly time…

and whipped topping, mix these all together…

and enjoy!!!…

Holly’s Awesome Product Review : Fruit Bouquet

August 2, 2017 By Holly

Happy Happy Wednesday everybody!!!  About a week ago, I was contacted by 1-800 Flowers asking if I would like to be sent one of their new fruit bouquets.  Umm,  yes please!!  I freaking love fruit bouquets.  Not only are they beautiful to look at, but hello, chocolate & sprinkle covered fruit, as well as star shaped fruit beautifully arranged?

A big heck yes!  Honestly, the offer couldn’t have come at a better time.  When I say that I have had & will have at least 2 or more birthdays a week among friends and family in the month of July and August I’m soo not exaggerating.  I have been to more parties, BBQ’s & shing digs in the last month than all year combined.

I’m not at all complaining, but sometimes ideas for what to bring either as a hostess gift or an actual gift start to run dry.  I’m always happy to make something to bring, but with the sheer number of events I’ve had to go to, sometimes (a lot of the time) there is just not enough time to even think about preparing something, and y’all, it’s hot here, I just don’t want to turn that oven on right now haha.

I cannot believe I never thought of bringing something so delicious, fresh and beautiful as a fruit bouquet.  I mean, come on, they have some of the cutest little smiley face pineapples, or chocolate covered strawberries that look like baseballs, seriously I cannot resist.

The chocolate & birthday sprinkle covered pineapples that came in my bouquet were so darn delicious, and obviously so cool to look at.  I’m thrilled I have all of my gift/hostess bases covered for the remainder of this very hot summer.  I cannot recommend enough heading over to their site (bonus! no driving anywhere to pick anything up) and ordering one of these bad boys today.  I hope everyone is having a wonderful day and thank you so much stopping by!!!

Easy Crockpot Meatballs

July 31, 2017 By Holly

Happy Happy Monday everybody!!! and a big welcome back to school for everyone around me.  As I said last week, in my humble little opinion I think it is way too stinking early for everyone to be going back already, but what are you gonna do?  Anyways, since everyone is getting back into the full school/work swing, I assume that a super darn easy recipe is in order for everyone because time is a very important commodity.

Not too long ago, I was at a birthday party and the lovely hostess was serving these meatballs.  Now, I’m not normally a giant meatball fan, I’m not saying I dislike them or anything, they’re just not a normal go-to cheat day delight, because #doughnuts and #pizza.  Well, these meatballs are a different story, and I’m sure it has something to do with the fact that these have that sweet & salty thing going on.  When I started raving to the hostess about how much I just loooved these meatballs, she started laughing and said that these were hands down one of the simplest recipes ever and would be happy to give it to me.

Apparently, this is one of those dishes that has been bouncing around for forever and somehow I have managed to miss it.  Well, I must say that I’m super stoked that this recipe has finally found it’s way to me, because these are so freaking good y’all.  The sheer lack of ingredients had me checking to make sure I hadn’t missed anything, but these have just 3 darn ingredients and that is it, doesn’t get much better than that y’all.  Anyways, I hope y’all get to enjoy these bad boys soon and good luck to everyone headed back to school this week.  Have a wonderful day and thank you so much for stopping by!!!

Key Lime Meringue Pie

July 28, 2017 By Holly

Happy Happy Friday y’all!!! I always like to reiterate that I am the complete and total opposite of a trained chef, pastry chef etc., and today is one of those recipes that will again prove this haha.  I literally made this Key Lime Meringue Pie over a month ago, and I’ve been debating since that time if I should even post it because it just didn’t turn out exactly how I had hoped.  I absolutely love key lime pie and though the pie part of this recipe tasted like a fluffy,  mousse-like version of regular key lime pie, it wasn’t fantastic.

As you will see in one of my pictures below, it literally deflated under the weight of the meringue, womp womp.  Speaking of meringue, that is a totally different story.  The recipe for this meringue is different than any I’ve seen and it turned out 100% perfect.  Not only was it delicious & beautiful, but it was stinking easy to make, like, if I can make this meringue, anyone can.  In the future I will certainly be placing this meringue on top of my The Best Key Lime Pie,  just not this particular one.  FYI, this key lime pie has ice cream in it, which I thought was a cool ingredient, but I think that’s why the texture was off and it immediately collapsed when I cut into it.

I also thought I would rig the crust with Biscoff cookies (some of my favs) to change it up a bit, but I think I messed up the ratio of butter to cookie/cracker and it was a bit soggier than I had hoped-again, I am not a professional haha.  Anyways, I spent quite a bit of time making this concoction so I figured I might as well post it, and the meringue recipe alone is worth it.  Anyways, I hope everyone has a wonderful weekend and good luck to all of the teachers, students and parents that are starting back Monday-which, in my humble little opinion is wwaaayy too early to be going back to school, but what the heck do I know?  Thank you so much for stopping by and have a wonderful day!

Graham crackers/Biscoff Cookies into your food processor…

place into a bowl with the melted butter and brown sugar…

mixed together (and blurry)…

into your pie pan (oops, that is a wet pie crust)…

egg yolks into my bowl…

zest…

whisk for a bit, then mix in the sweetened condensed milk & key lime juice…

then the ice cream…

mix, mix, mix…

then into your pie crust…

bake, bake, bake…

now for the meringue, egg whites, 1/4 of the sugar and corn syrup…

while whisking, slowly add in the rest of the sugar…

whisk, whisk, whisk until stiff peaks form…

onto your cooled pie…

bake for a bit more to brown the meringue…

and enjoy!!!

THE CRUST
  1. 5 Graham Crackers.
  2. 7 Biscoff Cookies.
  3. 7 Tablespoons of Butter, Melted.
  4. 1/4 Cup of Brown Sugar.
  5. 9" Pie Pan.
THE KEY LIME FILLING
  1. 6 Eggs, Separated.
  2. Zest of 2 Key Limes.
  3. 1 (14 Ounce) Can of Sweetened Condensed Milk.
  4. 1/2 Pint of Vanilla Ice Cream.
  5. 1/2 Cup of Key Lime Juice.
THE MERINGUE
  1. 6 Egg Whites.
  2. 1 Tablespoon of Light Corn Syrup.
  3. 1 Cup of Granulated Sugar.
FOR THE CRUST
  1. Preheat your oven to 350 degrees F.
  2. In a food processor (or a plastic bag and you can crush with a rolling pin), place your graham crackers and Biscoff cookies and process until fine crumbs.
  3. Place your cracker/cookies into a small bowl with the melted butter and brown sugar, and mix until the texture of wet sand.
  4. Pour your cookie/butter/sugar mixture into your pie pan and with your hands press firmly into your pan until the bottom and sides are coated evenly.
  5. Place the pie pan into the freezer to firm up.
FOR THE KEY LIME FILLING
  1. Separate the 6 eggs, making sure to save the egg whites later for the meringue.
  2. Place the eggs yolks into your stand mixer with whisk attachment or bowl with hand mixer and zest your key limes into the egg yolk and mix together for about 2 minutes or until kind of frothy.
  3. Now add the sweetened condensed milk and continue to mix until smooth and is a pale yellow color.
  4. Now add the ice cream and key lime juice and continue to mix for a few more minutes or until smooth and a bit airy.
  5. Pour the mixture into your crust and bake for 18-20 minutes or until the edges of the crust begin to brown and the middle doesn't jiggle.
  6. Take out and make sure to let cool completely (I suggest placing in the fridge) before adding the meringue or it will melt.
FOR THE MERINGUE
  1. With a handheld mixer or stand mixer with whisk attachment, add your saved egg whites with the corn syrup and about 1/4 of the sugar and begin to whisk vigorously.
  2. Add the rest of the sugar in small increments until all is incorporated and continue to whisk until the mixture thickens, stiff peaks form, and your meringue has a glossy look to it.
  3. Top your cooled pie with the meringue and spread evenly all over the pie until completely covered.
  4. Place your pie back into the oven for about 8 more minutes (just watch carefully) to brown the top of the meringue.
  5. Allow to cool completely and enjoy!!!
Notes
  1. If you can't find key limes to zest you can substitute with 1 regular lime.

Holly’s Junk Food Review Series : Hillbilly Treats

July 26, 2017 By Holly

Happy Happy Wednesday everybody and welcome to another Junk Food Review.  At the expense of possibly offending people with the title today, to be honest, I really just couldn’t think of a better one.  I really didn’t want to call it ‘trash food’ or ‘redneck food’ because nowadays people are always taking offense to something, amiright? so I thought Hillbilly might be less offensive possibly?  What I was really trying to get across, is that sometimes there are foods that you’re mildly embarrassed to admit that you eat, or even want to be seen buying.  I mean, just so y’all know, I had those Fried Twinkies hidden under a bag of lettuce in my cart, and then did self checkout, because I was just in no mood to get that kind of judgement…

Anyways, let’s get to it shall we?  First off, we have Snoballs.  I know that these things have been around for forever, but I recently realized that I had never had them before, which is shocking because they have marshmallows, chocolate cake and coconut, a few things that I love.

seems promising, even with the scary green color…

looks pretty yummy…

Alrighty, so I genuinely had high hopes for these bad boys because as I mentioned above Snoballs contain some of my favorite ingredients and wow were these disappointing.  At first bite, I thought that they were similar to just a regular Hostess creme filled chocolate cake, then the almost plastic taste & texture of the coconut kicked in and I couldn’t for the life of me figure out how they managed to mess up coconut so badly.  The only thing worse was the marshmallow, which left the funkiest after taste in my mouth.  On the bright side, the chocolate cake was soft and moist and the creme filling was pretty tasty.  Overall I give these a 5 out of 10, and I will definitely not be partaking in these again, probably ever.

Okay next we have the Fried Twinkies, which yes, come from the frozen food aisle a special place in hell…

mmm…

Okay y’all, I want to preface this review with the fact that I really, really, really wanted to dislike these things for a multitude of reasons.  First off, I figured anything that is normally consumed at fairs and is freshly (I’m using the term “fresh” loosely here) fried on site wouldn’t translate well to a freezer to be reheated at home.  Secondly, this product is embarrassing to buy and I was hoping to never again have to wear a disguise to buy food again (just kidding, kind of).  Boy was I wrong, y’all, these Fried Twinkies are awesome! I swear, the moment I opened the little bags that they came in and before they were heated up, they totally smelled like the fair (with a side of shame obvi).  OMG, they’re 100x better than regular Twinkies, they come out perfectly hot and decadent from the oven and you will have to control yourself not to burn the ever loving out of your mouth because they smell so amazing.  They are crunchy on the outside and super gooey in the middle.  These are a must taste, they definitely get a 10 out of 10, just let your inner hillbilly out and go get some of these.  Just fyi, I have seen these at Kroger and Wal-Mart, and luckily both have 24 hour locations and self checkout so as not to be seen purchasing this shamefully delicious food haha.

Thanks again for stopping by and I hope you all have wonderful day!!!

Fluffernutter Banana Sandwich

July 24, 2017 By Holly

Happy Happy Monday everybody!!!  Today’s post will make it abundantly clear -in case it wasn’t already- that I am not a trained chef, pastry chef, etc.  Y’all, it just doesn’t get much more unsophisticated than today’s recipe.

Some might even say that this is on the verge of being a full on kid, possibly hillbilly level of food making, and you know what? I am soo okay with that too.  Speaking of being a kid, I went through a phase when I was about 12 that peanut butter & banana sandwiches were basically on my menu everyday, I was so obsessed, sometimes it was twice a day.

What surprises me the most is that at the time I never even thought to put marshmallow fluff along with the peanut butter and banana, because obviously these combos just freaking work.  Oh, and throwing all of this onto a hot pan to make sure the bread is all toasty, and the ingredients are all warm and melty would have also been a fantastic idea.

I feel bad for 12 year old me (such an awkward age anyway, ammiright?) because this sandwich was so decadently gooey (super duper messy), warm, with all of the flavors that just go together so perfectly, droool.  The grilled aspect of this sandwich really put this fluffernutter banana sandwich to a perfect 10.  If you’re feeling low class key, but really want an amazingly gooey, salty, sweet, fluffy sandwich, I can’t recommend enough you do yourself a favor and cook up one of these today.  Thank you so much for stopping by and I hope you all have a fantastic week!!!

Butter first…

then peanut butter…

marshmallow fluff, mmm…

then bananas…

Ingredients
  1. 2 Slices of Honey Wheat Bread.
  2. 2 Tablespoons of Unsalted Butter, Softened.
  3. 2-4 Tablespoons of Creamy Peanut Butter.
  4. 2-4 Tablespoons of Marshmallow Fluff.
  5. 1/2 of 1 Large Banana, Sliced.
Instructions
  1. Spread the butter evenly on each slice of bread, flip them over (I suggest putting them on paper towels so butter doesn't get everywhere).
  2. Now evenly spread the peanut butter on each slice.
  3. Then evenly spread the marshmallow fluff on top of the peanut butter (yes, it's starting to get messy at this point).
  4. Then evenly place your banana slices on each slice, and then carefully put your sandwich together.
  5. Place your sandwich into a pan on medium low heat and grill each side about 1-2 minutes or until golden brown, just watch because the bread burns quickly.
  6. Take out of your pan, cut in half, expect this to be very messy (but delicious) and enjoy!!!

  1. Feel free to use less or more of any of the listed ingredients.

Holly’s Junk Food Review Series : Doughnuts

July 21, 2017 By Holly

Happy Happy Friday y’all!!! Oh my is it a happy Friday too.  Someone recently asked me the question, ‘what is your ride or die cheat food?’ Even though I can get in certain moods for certain foods on my cheat days, doughnuts will always be the treat I will go out of my way to get.  I mean, what’s not to love? Delicious yeasty dough (unless cake obvi) fried and covered in sugar?…drooooll.  So anyways back to it being a happy Friday, I will be reviewing a few new-ish doughnuts, one from a very well known establishment and one from a local one, because let’s be real, local is always better—food-wise in my opinion.

First up, we have a couple of doughnuts from Dunkin Donuts, and to be honest they may have already taken them off of the menu because they gotta keep things fresh, but anyways.

Here we have the Chocolate Pretzel Cake Donut…

noms…

So, first off I will admit that I ignored this doughnut for a month or two because I am not a fan of cake doughnuts, solely for the fact that every time I’ve had one they have been dry.  Well, Dunkin, y’all did me good, because this doughnut was incredible.  Moist chocolate cake, with a slight all over glaze, and then topped off with caramel and salty pretzel pieces.  No joke, my mouth is watering even looking at this thing.  I have never been so wrong about a doughnut before, the mixture of the sweet and salty was perfection and this was quality tasting chocolate cake, super noms.  This doughnut gets a solid 10 out of 10.

Here we have the Dunkin Donut cake batter filled doughnut…

mmm, look at that filling and sprinkles…

So this cake batter filled doughnut pleasantly surprised me, I was fully expecting the middle to taste just like every other thick custardy filling in your standard doughnut, but it totally didn’t.  The filling really tasted like cake batter and that mixed with the chocolate topping & sprinkles made this taste especially birthday cake like.  Overall, this is a rich & decadent doughnut.  This one gets a solid 7 out of 10.

Now we’re going to go local and yes I did save the best for last…I had heard for forever that I needed to run over to Paradise Donuts because their doughnuts are just so incredible and fresh, and the only reason I didn’t head over earlier is totally me just being lazy.  I’m not lazy, but looking like a swamp monster in stretchy pants on my cheat day is usually what’s happening in my house, and if it’s not being delivered or cooked by me then I’m not getting it.  This time I planned ahead and showed up when they opened and before I went into full on land monster mode.

I had to show the box because I just thought it was so cute…

  like Heaven in a box…

drooling…

Here we have the most wonderful mix of flavors that include your basic vanilla glazed, Fruity Pebbles, Salted Caramel, Blueberry Cake, Old Fashioned Marble Sour Cream, Raspberry filled and Maple Bacon.  Holy crap y’all, these were absolutely incredible! Like, all of them were incredible.  What’s extra cool is that when I went to the store, after telling the very nice man who worked there that I had never been there before gave me one to try for free.  He handed me the Marble Old Fashioned which I would never have chosen because it’s a cake doughnut, but I am reformed solely from this doughnut.  I loved it so much I bought some too because it was sooo soft and moist.  Oh, I also got an Apple Fritter which was roughly the size of my head, and I gobbled it up before even thinking of taking a picture, oops…Anyways, definitely go and check out a local doughnut shop near you, and if you’re in the Atlanta area, I highly recommend you go check out Paradise Donuts.  My whole experience,  from the insanely nice people who work there to the quality doughnuts they’re creating gives this place a solid 10 out of 10 and if I wouldn’t sound like a complete dork a 20 out of 10 😀

Thanks so much for stopping by and have a wonderfully doughnut filled weekend!!!

Easy Nutella Mousse

July 17, 2017 By Holly

Happy Happy Monday everybody!!!  I hope everyone had a fantastic weekend and are ready to jump right into the new week, and if not, I’m here today to bring y’all a little easy something to make to hopefully brighten your Monday.

I would like to preface this delicious treat by admitting that Nutella is not my must-have go-to condiment–is it a condiment?–I guess it’s a spread, well whatever, I’m always #teampeanutbutter but due to the sheer amount of Nutella stuff popping up recently I decided to give it another shot.

I really mean that by the way, I had not tasted Nutella in about 10 years, and could honestly not remember fully what it tasted like.  To my delight, Nutella is better than I remembered, but wowza is it rich, very chocolatey, very hazelnutey, and very sugary.  Not that I dislike any of those things, but let’s just say I could sit down and eat a whole jar of peanut butter, and I can guarantee that sounds like the worst idea ever with Nutella.

So, after deciding that Nutella was in fact delicious, just extremely rich, I thought maybe a dessert made with Nutella, just toned down a bit would be awesome.  I came across this recipe and was all, ‘yeah Imma need to make that’ and soo glad I did. Holy cow y’all, this mousse was sooo stinking easy to make it’s not even funny, and not to mention insanely delicious.

This mousse is light, fluffy and with the perfect amount of that rich Nutella flavor without it being overwhelming.  I had this dessert whipped up in about 10 minutes, and only had to wait for it to chill in the fridge to fully set up.  If you’re in a hurry or not feeling making a full on dessert, this is a great one to make in no time at all.

I hope everyone has a wonderful start to the week and thank you so much for stopping by!

Key Lime Crack Mix

July 14, 2017 By Holly

Happy Happy Friday everybody!!! It is so that time of year you guys, all things key lime and even better, no bake, because it’s just a little bit warm just about everywhere, amiright?  I looove cereal mixes so much, they’re quick, they’re easy and oh so satisfying.  I mean, in my opinion, it doesn’t get much better than sweet, salty and crunchy.

This particular crack mix (and yes it is definitely that addicting I’m forewarning you) adds another element of flavor with a tart kick.  Why in the world didn’t I think of this recipe?!  Seriously I had this stuff in the fridge ready to set in less than 15 minutes.  Oh my goodness you guys, the first bite far exceeded any and all expectations that I had for this delicious mix.  It’s the perfect mixture of all of the flavors, and you get a little bit of everything in every bite.

You get the softness of the marshmallows, the salty bite of the pretzels, and then you throw in my favorite cereal mixed with one of my favorite zingy fruits, y’all forget it.  There was zero self control once this stuff was made, I kept telling myself that I would enjoy it all cheat day long and this was pretty much gone within in an hour.  I’m telling you, the “crack” in the title is legit.  Please just do yourself a favor and make this incredible snack ASAP, it is way too good to not enjoy this weekend.  I hope you all have a wonderful Friday and thank you so much for stopping by!
