Strawberry Cake With Whipped Chocolate Frosting

Happy Happy Tuesday everybody and more importantly, Happy Valentine’s Day!!!  I thought I would be a total cliché and make a strawberry cake to not only share with all of you, but also to share with all of my work peeps to say Happy Valentine’s Day to them too! (That’s why the pics below show a double recipe for the frosting fyi). 

Obviously I can’t make a strawberry cake without chocolate frosting, because it doesn’t get much more Valentine’s Day than overpriced chocolate covered strawberries, ammiright? Juust kidding, kind of, hehe. 

Strawberry cake has been a lifelong food love of mine, so really any reason to make this is a good one, especially since this is a recipe my mom has passed down to me, and it is beyond easy to make and did I mention insanely, awesomely good? 

Yeah, it is, and then when you throw this mousse like whipped chocolate frosting on top, y’all, mmm, mmm, mmm, you just don’t even know.  Basically I’m saying that you and your loved one(s) need this in your life, because this is too darn good to not make.  I hope you all have a wonderfully love filled day and thank you so much for stopping by!!! 

 frosting first… flour and milk into your saucepan (PLEASE NOTE THE PICS OF THE FROSTING SHOW A DOUBLE RECIPE)…

after cooking up for a bit…

after that cools for a bit, place butter and sugar into your mixer bowl…

after whipping the heck out of it…

now add the flour/milk mixture…

now whip the heck out of this and now add the cocoa powder…

mix again…

now for the cake, literally every ingredient for the cake into your bowl…

all mixed up…

into your pan…

nice and baked, then frosted, yum!!!…

and enjoy!!!

THE STRAWBERRY CAKE
  1. 1 Box White Cake Mix.
  2. 1 (3 or 6 Ounce) Packet of Strawberry Jell-O.
  3. 3 Tablespoons of All-Purpose Flour.
  4. 4 Eggs.
  5. 1/2 Cup of Water.
  6. 1 Cup of Vegetable Oil.
  7. 1/2 of a (15.5 Ounce) Package of Frozen Strawberries In Syrup.
  8. 9x13 Pan.
THE WHIPPED CHOCOLATE FROSTING
  1. 5 Tablespoons of All Purpose Flour.
  2. 1 Cup of Milk
  3. 1 Tablespoon of Vanilla Extract.
  4. 2 Sticks (1 Cup) of Unsalted Butter, Softened.
  5. 1 Cup of Granulated Sugar.
  6. 2.5 Tablespoons of Cocoa Powder.
FOR THE STRAWBERRY CAKE
  1. Preheat your oven to 350 degrees F.
  2. With a handheld or stand mixer with paddle attachment, you can place all of your ingredients into your bowl, and mix just until smooth.
  3. Spray your pan liberally with non-stick spray, and pour your cake batter into your pan.
  4. Bake for 25 minutes, then loosely place aluminum foil on top of your pan and continue to bake 20 minutes, but be sure to check periodically because every oven is different, if it springs back to the touch in the middle it's done.
  5. Let cool completely before frosting.
FOR THE FROSTING
  1. In a medium sized sauce pan, place the flour and milk into it and on medium heat, and while stirring constantly cook the ingredients together until the consistency of thin mashed potatoes is reached.
  2. Remove from the heat and stir in the vanilla extract, and now let this mixture cool to room temperature.
  3. Once your flour/milk/vanilla mixture has cooled completely, with a handheld or stand mixer with a paddle attachment, place your butter and sugar into your bowl and whip and whip until light and fluffy.
  4. Now add your milk/flour mixture into your butter/sugar mixture and whip, whip, whip until the consistency of whipped cream is reached (takes at least 5 minutes of constant whipping).
  5. Now add your cocoa powder and mix until completely mixed in, now frost your cake and enjoy!!!

  1. Please note that the pictures above for the frosting are a double recipe because I made 2 separate cakes when I made this recipe 🙂

Kiss Me Quick Cocktail

Happy Happy Cocktail Thursday y’all!!!  Ok so I don’t know if you guys have realized yet, but next Tuesday is Valentine’s Day! Can you guys believe it? I can’t, the year is already flying by, but it’s totally worth it because Valentine’s Day is all about red, pink, hearts, themes,  love and fun. 

Luckily, today’s cocktail is aaaalll of those things, with a bonus of it being freaking delicious.  This Kiss Me Quick Cocktail (OMG so cute right?) is a bit more work than most cocktails I post here, but I just couldn’t pass up making this lovely and beautiful raspberry sauce to go in it. 

This delicious libation also includes pineapple juice (which IMO makes everything better) and Cake Vodka (also not too shabby haha).  If you want to make this extra Valentine’s-ey then I highly recommend throwing in some cute heart sprinkles like I did for your Valentine.  I think this is such a fun and fruity cocktail and I hope you get to make this too.  Thank you so much for stopping by and I hope you have a wonderful day!!!

back into your saucepan (minus the fruit leftovers) and cook for a bit longer…

KISS ME QUICK COCKTAIL
  1. 8 Ounces of Fresh Raspberry Sauce, Divided.
  2. 4 Ounces of Vanilla Cake Vodka, Divided.
  3. 8 Ounces of Pineapple Juice, Divided.
RASPBERRY SAUCE
  1. 1 Cup of Granulated Sugar.
  2. 2 Cups of Water.
  3. 12 Ounces of Fresh Raspberries.
FOR THE KISS ME QUICK COCKTAIL
  1. Place 4 ounces of the raspberry sauce in each glass, then 2 ounces of the vodka in each glass, then 4 ounces of the pineapple juice in each glass, mix them up and enjoy!
FOR THE RASPBERRY SAUCE
  1. In a medium saucepan, place the water and granulated sugar in it and on medium-high heat mix together until the sugar dissolves.
  2. Now add the raspberries and bring to a boil, then lower the heat and let simmer for 25 minutes.
  3. Remove your saucepan from the heat and strain the raspberry/sugar mixture over a bowl, throw away the fruit from the strainer then place the syrup back into your saucepan.
  4. Simmer the raspberry sauce for 15 more minutes, then strain again, let cool and place into your drink.

REPOST – Crock Pot Chocolate Lava Cake

Happy Tuesday everybody!!! I FINALLY got my site working properly again–thanks to my sis LJ!!  Anyways, this is hands down one of my absolute favorite recipes ever, so I had to share it again, because it’s too amazing to miss.  I hope y’all are having a wonderful day and thank you so much for stopping by!

Happy Wednesday everybody!!  Y’all, so I’m just going to go ahead and be 100% basic and say I can’t even with this Crock Pot Chocolate Lava Cake.  That’s right everybody, this cake is so incredible, so decadent, so ding dang good that I was made mildly speechless with the first bite that I actually said ‘I can’t even, ‘ and maybe with a small moan and eye roll thrown in for good measure.

Crock Pot Chocolate Lava Cake

THE CAKE
  1. 1 Box of Super Moist Chocolate Fudge Cake Mix ( I Used Betty Crocker).
  2. 1 1/4 Cups of Milk.
  3. 1/2 Cup of Vegetable Oil.
  4. 3 Eggs.
THE LAVA TOPPING
  1. 1(4 Ounce) Box of Instant Chocolate Pudding and Pie Filling Mix (I Used Jell-O Brand).
  2. 2 Cups of Milk.
  3. 1 (12 Ounce) Bag of Milk Chocolate Chips.
FOR THE CAKE
  1. Liberally spray your 6 quart crock pot with Baker's Spray, set aside.
  2. In a large mixing bowl with handheld mixer, mix your cake mix, milk, eggs and oil together until smooth.
  3. Pour your cake mix into your crock pot.
  4. In a small/medium bowl place your dry pudding mix and milk into your bowl and whisk until it has thickened, about 3-5 minutes.
  5. Pour your pudding into your cake batter in your crock pot, do not mix in.
  6. Now pour the bag of chocolate chips on top of your pudding and cake batter.
  7. Place your cover on top of your crock pot and on low setting cook for 2 hours & 30 minutes to 3 hours or until pudding is bubbling a little (Mine was done at about 2 hours & 45 minutes).
  8. Place your crock pot on warm so your cake will not cook anymore & so that you can serve warm with vanilla ice cream!

Oh how I love Valentine’s Day, even when I was single for a million years for a while I still loved it. It doesn’t hurt that it’s a holiday that is focused on all things chocolate, pink and red, and hello, chocolate covered strawberries are seriously one of the best things (food wise) I’ve ever received for this awesome holiday.

This cake recipe is amazing, easy to make, tastes incredible, and even tastes better after a couple days because the strawberries in the mix moisten the cake even more. I also just so happened to have a small heart shaped biscuit cutter which I cut out the middle of the cupcake and filled with the whipped chocolate frosting. Oh my gosh y’all these are so incredible and just so darn cute I can’t even handle it 🙂 These would be wonderful to make for the sweetheart(s) in your life, or heck, just treat yourself.

FOR THE CUPCAKES
  1. 1 Box of White Cake Mix.
  2. 1 Package of Strawberry Jello Mix.
  3. 3 Tablespoon of Flour.
  4. 4 Eggs.
  5. 1/2 Cup of Water.

  7. 1/2 Package of Frozen Strawberries in Syrup (16 Ounces) or Fresh Strawberries.
FOR THE FROSTING
  1. 1 Cup of Milk.
  2. 5 Tablespoons of Flour.
  3. 2 Sticks of Unsalted Butter, Softened.
  4. 1 Cup of Granulated Sugar.
  5. 3 Tablespoons of Cocoa Powder.
THE CUPCAKES
  1. Preheat your oven to 375 degrees F.
  2. Line 24 cupcake tins with liners and set aside.
  3. With a handheld or stand mixer with paddle attachment mix your cake mix, flour, jello mix, eggs, water, vegetable oil and frozen strawberries until well incorporated.
  4. With an ice cream scoop or spoon, fill your liners 3/4 of the way full and bake for 18-22 minutes or until they spring back to the touch.
THE FROSTING
  1. In a medium saucepan over medium heat, heat your milk and flour stirring constantly until it becomes the texture of thin mashed potatoes and remove from the heat.
  2. Let the flour/milk mixture cool completely.
  3. In a stand mixer with paddle attachment or hand mixer whip your butter, then add your sugar and whip together until light and fluffy.
  4. Now add your flour/milk mixture to the sugar and butter and whip, whip, whip until it is the texture of whipped cream.
  5. Now add your cocoa powder and whip until completely incorporated.
  6. Enjoy this amazing whipped chocolate frosting.
Notes
  1. Since I used light colored cupcake tins I set my oven to 375 degrees F, if you are using dark colored cupcake tins set your oven to 350 degrees F.
  2. I used a small heart shaped biscuit cutter to make the heart shapes in the cupcakes then used a Wilton disposable bag with a Wilton 12 tip to fill the hearts.

Cream Cheese M&M Dip

Happy Happy Friday everybody!!! Okay, so this is going to be one of the absolute shortest posts ever.  You know how not too long ago I said last week was absolutely bananas crazy busy at work? Yes, well this week has surpassed that and I’ve basically been running on an average of 4 hours of sleep a night and then working from dark to dark. 

Basically what I’m saying is that I literally have had no time to do anything food post-wise, hence why this wasn’t posted yesterday, and hence again why I’m frantically writing this because y’all this dip is too stinking good not to share as soon as possible. 

This dip is easy, it’s super quick and soooooo amazingly good.  I mean, it doesn’t hurt that I dipped one of my absolute favorite cookies into it…droool.  Anyways, so if you’re looking for that sweet and decadent dip for Super Bowl Sunday, here you go!  I hope you have an absolute wonderful day, a wonderful weekend and thank you so much for stopping by!!!

Ingredients
  1. 2 (8 Ounce) Blocks of Cream Cheese, Softened.
  2. 1 Stick (1/2 Cup) of Unsalted Butter, Softened.
  3. 3/4 Cup of Powdered Sugar.
  4. 1/2 Cup of Brown Sugar.
  5. 1 Teaspoon of Vanilla.
  6. 1 Cup of Mini M&M's.
  7. Biscoff or Vanilla Wafer Cookies For Dipping.
Instructions
  1. With a handheld or stand mixer with paddle attachment, place your cream cheese & butter into your bowl and beat until smooth.
  2. Now add the powdered sugar, brown sugar and vanilla and beat again.
  3. Add your mini M&M's and mix until just mixed in, serve and enjoy!!!
Notes
  1. You can totally adjust the amount of M&M's used or you can substitute for chocolate chips or other flavored items that you might prefer.

Spicy Sour Cream Dip

Happy Happy Tuesday everybody!!!  OMG, OMG, OMG!!! Y’all! My Atlanta Falcons are going to the Super Bowl, yes, my Falcons, The Super Bowl !!! I literally still cannot believe it.  When we officially won Sunday’s game I was screaming and jumping around, people were setting off fireworks around me, y’all it was no joke amazing I could have cried.

If you’re not an avid football fan like I am, you’re probably sitting there all siiiggh, but I just can’t bring myself to apologize because I’m super passionate about my Falcons.  So,  speaking of the Super Bowl,  which I will be 100% glued to the TV the day of just so you know, this week I will be bringing you guys 2 different dips, one savory and one sweet (that’s Thursday’s recipe).  Because what is a Super Bowl party without dips? or this blog without run on sentences?

Well, it isn’t a proper viewing I’ll tell you that much.  Sooo today I’ve brought y’all an absolutely wonderful and ding dang easy dip, it’s got cream cheese, it’s got sour cream (obvi), it’s got salsa, lots of cheese and lots and lots of flavor 🙂 I couldn’t get enough of this stuff, it’s addictive, just go ahead and make this I have a very good feeling you’ll be as happy with it as I am.  I hope everyone of you is having a spectacular week so far and thank you so much for stopping by!!!

Spicy Sour Cream Dip

  1. 16 Ounces of Full Fat Sour Cream.
  2. 1 (8 Ounce) Block of Cream Cheese.
  3. 1/2-3/4 Cup of Red Salsa (Preferably Spicy).
  4. 1/2 Cup of Sharp or Mild Cheddar Cheese.
  5. 1 Teaspoon of Dried Dill.
  6. 2 Teaspoons of Dried Parsley.
  7. 1/2 Teaspoon of Garlic Powder.
  8. 1/4 Teaspoon of Onion Powder.
  9. Salt To Taste.
  10. Tortilla Chips For Dipping.
Instructions
  1. With a handheld or stand mixer with a paddle attachment, place your cream cheese & sour cream into your bowl and mix together until smooth.
  2. Now add the remainder of your ingredients and mix until well combined.
  3. Garnish with some more cheese and maybe a little pepper, serve with your favorite tortilla chips and enjoy!!!
Notes
  1. The spiciness is totally up to what kind of salsa and how much you use, if spicy isn't your thing, just use mild salsa.

Healthy Coconut Date Bites

Happy Happy Friday everybody!!!  Y’all, it has been a super crazy week around here, hence the lack of post yesterday like I normally do, but better late than never, amiright?  The show I’m working started filming this week, which means extremely long hours, lots of caffeine, little sleep and lots of organized chaos haha. 

Trust me, I most definitely needed some of these delicious little bites this week, but unfortunately I totally finished all of these last weekend because they’re so good.  I hope y’all don’t mind that I did a healthier recipe, but I’m still feeling the mild holiday bulge, so I thought a lighter recipe would be a good idea. 

So, about these bites, these bites are no joke like dessert, sweet, a little bit salty, and nice and chewy.  If you’re not necessarily a fan of cashews, you can totally substitute them out for whatever you prefer, but they’re a personal favorite of mine so there you go.  I hope you all have an absolutely wonderful Friday, a great weekend and thank you so much for stopping by!!!

Cashews into your food processor…

then add your dates, coconut, coconut oil and water…

pulse all together…

roll into balls and roll into the coconut…

Healthy Coconut Date Bites

Dessert-like healthy bites filled with Medjool dates and fresh coconut.

Ingredients
  1. 1/3 Cup of Roasted & Lightly Salted Cashews (or Raw).
  2. 10 Medjool Dates, Pits Removed.
  3. 1/2 Cup of Shredded Coconut, Divided.
  4. 1 Tablespoon of Coconut Oil.
  5. 1 Tablespoon of Water.
  6. Food Processor.
Instructions
  1. Place your cashews in your food processor and pulsate until small pieces.
  2. Then add your dates, 1/4 of the coconut flakes, tablespoon of coconut oil and water, then process the mixture until it becomes smooth.
  3. With a tablespoon sized measuring spoon, scoop out 1 tablespoon of the mixture, roll into a ball, then roll into the remainder of the coconut flakes until covered.
  4. Refrigerate the bites for 30 minutes or so and enjoy!!!

Happy Happy Tuesday everybody!!! I hope everyone had a wonderful (and hopefully long) weekend like I did.  The weekend was certainly improved by the making (and obviously the eating) of this incredible recipe.  These are the kinds of recipes that are my absolute favorite, super easy, not a crazy amount of ingredients and downright addictive. 

I was lucky enough to try these delicious cheesy potatoes at a Christmas party and the hostess was nice enough to send me the recipe after I told her I was officially obsessed with this dish.  Funny enough, she had first tried this deliciousness at a work party and also confessed her love of the recipe to the bringer of this dish, so here we are, sharing it on the Internet, but I have no idea of it’s origins haha. You really can’t beat (a basically) one bowl recipe, I mean obviously you’ll need a smaller bowl for the corn flakes/butter mixture but that’s no biggie. 

I had everything ready to go into the oven before my oven was even done pre-heating if that gives you any indication of how fast this one is to throw together.  This casserole is so deliciously filled with hash browns and cheese that cook up so well together, and let’s not forget the absolutely wonderful,  crunchy and buttery topping, you will definitely be going back for seconds thirds, fourths  but I certainly won’t judge.  I hope you get to make this crowd-pleaser soon, are having a wonderful day and thank you so much for stopping by!!!

butter into your crushed corn flakes, then mix them up…

then the corn flake/butter mixture on top of your casserole, with a nice sprinkle of paprika…

THE POTATO CASSEROLE
  1. 2 -1 Lb Bags of Hash Brown Potatoes, Thawed.
  2. 1/2 Cup (1 Stick) of Unsalted Butter, Melted.
  3. 1/2 Cup of Chopped Onion.
  4. 1 (10.5 Ounce) Can of Cream of Chicken Soup.
  5. 12 Ounces of Sour Cream.
  6. 2 Cups of Cheddar Cheese, Shredded.
  7. Salt and Pepper to Taste.
  8. 9x13 Pan.
THE TOPPING
  1. 2 Cups of Corn Flakes, Crushed.
  2. 1/4 Cup of Unsalted Butter, Melted.
  3. Paprika.
FOR THE POTATO CASSEROLE
  1. Preheat your oven to 350 degrees F.
  2. In a large bowl, place the hash browns, butter, onion, soup, sour cream and cheddar cheese in and mix well.
  3. Now add the salt and pepper to taste and mix again.
  4. Now place the potato mixture into your pan.
FOR THE TOPPING
  1. You can either place the corn flakes into a bag and smash with your hand, or just using your hands crush up the cereal.
  2. Then place the cereal in a bowl and mix in the melted butter until evenly coated.
  3. Now evenly spread the cereal mixture on top of the potato casserole, and a nice sprinkle of the paprika and bake for 50-55 minutes.
  4. Serve and enjoy!!!

Easy Cinnamon Roll Waffles

Happy Happy Thursday everybody!!!  Y’all, today’s recipe comes courtesy of the weirdness that is Georgia weather.  Yes, that sounds very odd, but you must understand how temperamental and unpredictable the weather is here no matter the season.  For example, this past weekend the weather folks were calling for several inches of snow pretty much for the entire metro Atlanta area,  including all of the surrounding areas. 

If you’re not from the South you probably won’t get how scary that can be, because it never fails that ice always, always accompanies it, and y’all there is just no driving to be done when there’s ice.  Sooo, with the very real possibility of people being housebound for possibly several days, a mad dash is made to the grocery store and you buy as many essentials (bread, milk, peanut butter, wine) as you can. Y’all, when I showed up at the grocery store, it was busier than the day before Thanksgiving and even Christmas, as well as looking like a group of locusts had descended on the place.  

Basically everything was gone,  including the ingredients for the recipe I had been planning on making, so I had to improvise.  Cinnamon roll waffles are something I’ve been wanting to make for a while, and lucky for me there was literally this one lone can of cinnamon rolls left in the whole store, so there you go, that’s how this wonderful treat came about. 

Just so y’all know, I did get iced in,  and spent the better part of Sunday pouring buckets of hot water on the driveway then taking a shovel to it in hopes of getting out of the driveway to go to work in the morning.  Oh, also, it’s going to be 70 degrees this coming weekend…like I said,  temperamental.  I hope you guys get to enjoy this recipe soon (if you can even call it a recipe because it’s so simple) and thank you so much for stopping by.  Have a wonderful day and weekend!!!

Easy Cinnamon Roll Waffles

Ingredients
  1. 1 Can of 5 Large Cinnamon Rolls With Icing.
  2. Ground Cinnamon For Garnish (Optional).
  3. 1 Waffle Maker.
Instructions
  1. Pre-heat your waffle maker on high.
  2. Liberally spray it with butter flavored non-stick spray.
  3. Place one un-cooked cinnamon roll onto your waffle maker making sure to hold the lid of your waffle maker down to 'squish' the cinnamon roll.
  4. Cook your cinnamon roll to the level of done-ness that you like (I cooked mine about 3 minutes), take out of your waffle maker, serve with the icing, a sprinkle of cinnamon, butter and enjoy!!!

Energizing Strawberry Ginger Smoothie

Happy Happy Tuesday everybody!!!  Soo, I was just a bit more lenient with my healthy eating during the holidays and I’m 100% still paying for it y’all, like in a big way.  I feel like my digestive system is totally off and I totally have some Christmas cheeks love handles/thighs/too many things jiggling to even admit, so here we are today with a very non cheat day recipe. 

Sorry to those of y’all looking for something extra decadent and smothered in butter today, I just can’t, my body is mad at me, but I promise Thursday I will have something in the unhealthy/awesome vein.  On the bright side, this smoothie is awesome y’all.  Since I feel like my digestion was so off, I knew I wanted some ginger root and fresh mint in this, because both are aces in helping with that kind of stuff. 

Also, the green tea has the wonderful kick of caffeine as well as tons of good stuff in it for you.  Obviously the addition of the strawberries, banana and date add loads more vitamins and of course flavor.  Can you tell I’m mildly enthusiastic about this smoothie?  Anyways, if you’re feeling that holiday bloat in a big way like I am, then I can’t recommend enough to have this for a few breakfasts this week 🙂  Thank you so much for stopping by and I hope you have a wonderful week!!!

Ingredients
  1. 1 1/4 Cup of Green Tea, Chilled.
  2. 5 Large Strawberries, Stems Removed.
  3. 1 Medjool Date, Pitted.
  4. 1 Large Banana, Chilled or Frozen.
  5. 2 Fresh Mint Leaves.
  6. 3 Small Slivers of Ginger Root.
Instructions
  1. Brew your green tea by letting your tea bag steep in hot water for 3-5 minutes, remove the tea bag and place in the fridge to chill.
  2. Once the green tea is chilled, place it in a blender along with the rest of the ingredients, and blend until completely smooth, serve and enjoy!!!
