   **Happy Thursday y’all!!   So since my birthday is next week, I thought I would give you guys an overload of all things funfetti and birthday-esque stuff.  I posted this one last year on my b-day, and have basically been day dreaming about this drink ever since, can you blame me? Is it a milkshake? Is it a cocktail? Is it a dessert? Yes!   1. 2 Ounces of Cake Flavored Vodka.

Funfetti Cake Batter Frosting

Happy Happy Tuesday everybody!!! Y’all, I’m way excited to share this recipe with you guys today, not just because this is an easy recipe,  but because it’s frosting… just frosting!!  Frosting is one of my absolute favorite things in the whole world to make homemade.  I know, you can totally buy frosting pre-made in those cute little cans, and that stuff is definitely tasty, but let’s face it, not nearly as delicious as the real thing. 

I love that you can easily tweak your frosting recipes with a little this and a little that until you get it juuust right.  That is exactly what I did with this recipe, hence the hodge podge order of my ‘how to’ pictures, I just kept adding to it what it needed to get it to the exact flavor that I wanted (but simplified in the recipe section, don’t worry). 

You guys! you don’t even know how amazing this frosting is! OMG it tastes just like funfetti cake batter, if I didn’t think I would go into insulin shock be sick, I would have eaten every freaking bite of this stuff with a spoon, or you know, a shovel.  Publix totally hooked me up with some naughty naked vanilla and chocolate cupcakes, and I piled about a pound of this absolutely incredible frosting on every single one. 

Which one tasted better? That would be like picking my favorite child (you know, if I actually had kids) because this frosting made both vanilla and chocolate cupcakes taste amazing either way.  You totally need this frosting on every single cake item in your life, or just in a spoon.  I promise you will love this.  Thank you so much for stopping by and I hope you have a wonderful day!!!

Funfetti Cake Batter Frosting

All the flavor of funfetti cake in every bite of this delicious frosting, you will want to put it on everything.

Ingredients
  1. 3 Cups of Powdered Sugar.
  2. 2 Sticks (1 Cup) of Unsalted Butter, Room Temperature.
  3. 1 (15.25 Ounce) Box of Funfetti Cake Mix.
  4. 4 Ounces of Cream Cheese, Room Temperature.
  5. 2/3 Cup of Heavy Cream.
  6. 1 Tablespoon of Vanilla Extract.
  7. A Dash of Salt.
  8. 1/2-2/3 Cup of Extra Sprinkles (Optional).
Instructions
  1. With a handheld or stand mixer with paddle attachment, place your butter and cream cheese into your bowl and beat until light and fluffy.
  2. Now, 1 cup at a time, beat in your powdered sugar until all is mixed in.
  3. Now add in your heavy cream and vanilla and mix again.
  4. Now add in the whole box of dry funfetti cake mix about a 1/3 at a time until all is mixed in.
  5. Add in your extra sprinkles, and if you would like your frosting thinner, feel free to add in more heavy cream a tablespoon at a time.
  6. Place into a large piping bag or plastic big, snip off the end and pipe on everything in sight and enjoy!

Easy Coconut Custard

Happy Happy Thursday everybody !!!  To think, we’re thiiis much closer to the weekend, Friday eve’s are just the best, aren’t y’all getting excited?  Well, I know I am, not that I have anything planned, but the thought of catching up on Netflix and basically sitting around and doing nothing sounds just thrilling to me haha. 

If you too have wonderful plans of doing absolutely nothing as well, but would maybe like to quickly and effortlessly whip up a homemade dessert, boy do I have the recipe for you today. 

I just love a good custard, not only for the ease that they’re made but they’re just so creamy and simply decadent.  Now, you throw coconut into something then I’m definitely on board.  Y’all, I had this custard ready to go and in the oven in about 10 minutes, it baked exactly 40 minutes and was ready to eat, sooo not complicated.

Ingredients
  1. 1 Cup of Milk.
  2. 1 Cup of Heavy Cream.
  3. 3/4 Cup of Sugar.
  4. 2 Drops of Coconut Extract.
  5. 1/2 Cup of All-Purpose Baking Mix (I used Bisquick).
  6. 4 Eggs.
  7. 1/4 Cup of Butter, Softened.
  8. 1 Tablespoon of Vanilla Extract.
  9. 1 1/3 Cup of Sweetened Flaked Coconut.
  10. 9" Deep Dish Pie Pan.
Instructions
  1. Preheat your oven to 350 degrees F.
  2. With a handheld or stand mixer with whisk attachment, in your bowl, place the milk, baking mix, heavy cream, eggs, coconut extract, vanilla and sugar and beat on high for about 1 minute or until well combined.
  3. Pour the batter into your pie plate, and evenly sprinkle the coconut on top.
  4. Bake for 35-40 minutes or until the center of the pie isn't jiggly and is golden brown.
  5. Let cool and enjoy!!!
Notes
  1. If you want a more potent coconut flavor feel free to add more coconut extract.

How To Series: Homemade Strawberry Syrup

Happy Happy Tuesday everybody!!! Oh snap, is it really the second How to Series post for the second week in row? Why yes it is y’all, and honestly I just couldn’t help myself.  I’ve been perusing through my mom’s 4 billion cookbooks and recipe card catalogs and I just keep finding these totally easy but insanely delicious recipes and I just had to share another one this week. 

I think this is another recipe that might get passed over because (and trust me I’ve felt the same way) most people would just go buy an already made strawberry syrup.  Well, let me tell you, that would be a mistake, because this incredible strawberry syrup totally raised the bar on everything it was put on. 

On my last cheat day, I whipped this stuff up,  and thought I might throw some on some ice cream and OMG y’all, it is freaking incredible on ice cream. That combo was so good I figured it would be equally as good on some Belgian waffles and holy freaking moly, I honestly didn’t think it was possible to love waffles anymore and this syrup totally did that. 

For a recipe that is this super quick and easy to make, it totally tastes unbelievably decadent and mouth watering.  Just go ahead and raise your brunch bar y’all with this insanely delicious strawberry syrup I promise you will be happy you did.  I hope you’re having an incredible week so far and thank you so much for stopping by my little neck of the woods.

Homemade Strawberry Syrup

Delicious and super easy to make strawberry syrup that literally tastes good on everything.

Ingredients
  1. 2 Cups of Fresh Strawberries or 2 Cups Frozen, Thawed.
  2. 2 Cups of Granulated Sugar.
  3. 1/4 Teaspoon of Lemon Juice.
Instructions
  1. Wash, remove stems and slice your strawberries.
  2. Either using a blender or hand blender, process your strawberries until liquid.
  3. In a medium/large sauce pan, place your sugar, lemon juice and strawberry liquid.
  4. On low heat, and while stirring, heat the sugar/lemon juice/strawberry liquid until the sugar dissolves.
  5. Then raise the heat to medium high and bring to a boil, reduce the heat then let it simmer for 5 minutes.
  6. Remove from the heat, let cool, then pour it on everything remotely edible and enjoy!!!
Notes
  1. The original recipe said to run the processed strawberries through a mesh strainer into your saucepan before cooking, you're totally welcome to, but the syrup turned out perfect without doing so.

How To Series : Homemade Hot Fudge Sauce

Happy Happy Thursday everybody!!!  Wow, it has been for forever since I’ve done a How To Series post, and figured it was about time I took care of that.  I don’t know about y’all, but some of my favorite desserts are sometimes the most simple and basic. 

Obviously, I love a fancy, decadent salted caramel Creme Brûlee topped with fresh berries as the next person, but I’ll randomly have a hot fudge sundae (on a cheat day of course) and I’m always surprised by how much I love it.  I’m not saying I remotely dislike them, I’m just saying they’re usually not at the top of my ‘to eat’ list when I’m hungry, and honestly I’m not sure why because they’re amazing. 

On my last cheat day,  I was scrounging around my fridge for something delicious to eat, and I came across some whipped cream, a few cherries and some vanilla ice cream and realized the obvious thing to make was a hot fudge sundae.  Unfortunately, I only had regular chocolate syrup and let’s be real, it just doesn’t have the right consistency or richness to really get that hot fudgey-ness going, knowwhatImean?  Sooo, to the Internet I went to find an easy homemade one to make and boy did I. 

There were a lot that called for the best quality chocolate to be finely chopped and blessed by unicorns and a number of other ingredients and a gazillion steps and let’s be real, who has time for that?  So, I ended up taking some parts of a few recipes to simplify things and came up with this incredible hot fudge sauce. 

This sauce y’all, can I begin to tell you guys how decadent, thick and perfectly chocolatey this sauce is? OMG, it is incredibly drool worthy, it is just perfection poured all over ice cold ice cream, mmmm.  Oh and this is seriously, seriously easy to make.  I’m telling you guys, just treat yo self yourself to making homemade hot fudge sauce, it is so worth the little extra time it takes 🙂   Hope y’all are having a wonderful week so far and thank you so much for stopping by!    

1/2 the chocolate chips, cocoa powder, sugar, salt and heavy cream into your pan…

How To Series : Homemade Hot Fudge Sauce

Super easy homemade decadent hot fudge sauce.

Ingredients
  1. 2/3 Cup of Heavy Whipping Cream.
  2. 1/2 Cup of Light Corn Syrup.
  3. 1/3 Cup of Brown Sugar, Packed.
  4. 1/4 Cup of Unsweetened Cocoa Powder.
  5. 1/4 Teaspoon of Salt.
  6. 6 Ounces of Ghirardelli Semi Sweet Chocolate Chips, Divided.
  7. 2 Tablespoons of Unsalted Butter.
  8. 1 Tablespoon of Vanilla Extract.
Instructions
  1. In a medium sized saucepan, place 1/2 of the chocolate chips, heavy cream, corn syrup, brown sugar, and cocoa powder, place on medium heat and stir until the chocolate has melted.
  2. Continue cooking on low for 5 minutes.
  3. Remove your saucepan from the heat and stir in the other half of the chocolate chips, butter and vanilla.
  4. Stir together until smooth.
  5. Serve hot poured all over your favorite ice cream or put into a mason jar and keep in the fridge, and enjoy!!!
Notes
  1. If you love dark chocolate and an extra rich taste, please feel free to substitute dark chocolate chips for the semi-sweet, same if you want to use milk chocolate instead.
  2. This hot fudge sauce thickens up quite a bit when it is cooled in the fridge, so a quick turn in the microwave before pouring over ice cream (or anything else) is a good idea.

Easy Strawberry Cheesecake Salad

Happy Happy Tuesday everybody!!!  Y’all, it became quite apparent when I walked into the grocery store that it is in fact now strawberry season, or strawberries are in season, however you want to look at it haha. 

All I know, is that I was practically knocked over by the incredible strawberry smell (which happens to be one of my favs) that was wafting from the produce department and I just knew that I had to make this cheesecake ‘salad’ for my next cheat day.  A couple of years ago I had this salad at some gathering (honestly cannot remember what the heck it was) but aside from the fact that I don’t remember the event, I do remember this salad (shocker I only have food on the brain). 

The host or hostess of this gathering served this salad with strawberries only and it was just to die for.  Sweet, decadent and the slight feeling that I wasn’t being completely ‘bad’ since there is fresh fruit in it hehe.  I was elated when they gave me this recipe and it’s sooo easy to make.  Really just a few ingredients, and no need for an oven which is starting to be a good thing with the rising temperatures. 

I threw bananas into this salad because I’m partial to the whole strawberry/banana combo but please feel free to substitute any fruit that you love because I see this cheesecake mixture tasting amazing with pretty much everything.  This would make for a wonderful side dish or even just dessert for your next gathering.  I hope you’re having a wonderful week so far and thank you so much for stopping by.

Ingredients
  1. 1 (8 Ounce) Block of Cream Cheese, Room Temperature.
  2. 1 (3.4 Ounce) of Cheesecake Flavored Instant Pudding.
  3. 1 Cup of Heavy Whipping Cream.
  4. 3 Tablespoons of Powdered Sugar.
  5. 1 Tablespoon of Vanilla Extract.
  6. 1 1/2 - 2 Pounds of Strawberries, Stems Removed.
  7. 3-4 Medium Bananas, Cut Into Slices.
  8. 1 Tablespoon of Lemon Juice.
Instructions
  1. With a handheld or stand mixer with paddle attachment, place your cream cheese into your bowl and beat until smooth, add the dry pudding mix and beat again until combined.
  2. Now, with your mixer running, slowly add in your heavy whipping cream (a few tablespoons at a time so it won't clump) until all has been added and is smooth
  3. Now mix in the vanilla and the powdered sugar, set aside.
  4. In a separate bowl, place your washed and stem removed strawberries as well as the bananas.
  5. Mix in the lemon juice making sure to coat the strawberries and bananas.
  6. Now mix in your cheesecake mixture to your strawberries and bananas making sure to coat all of the fruit.
  7. Serve immediately or cover and place into the fridge until ready to serve and enjoy!!!
Notes
  1. Please feel free to substitute whatever fruit you like best or the amount.

Easy Peasy Margaritas

Happy Happy Thursday everybody, and as a shout out to my Star Wars friends,  May the Fourth be with you hehe #sorrynotsorry.  Tomorrow, as many of you probably already  know is Cinco De Mayo, and let’s be real, it’s no celebration unless there are margaritas (and nachos) involved. 

I’m here today to help out with the margarita part…you’re welcome.  I wish I could say that I had invented this incredibly easy cocktail, but I totally didn’t.  I’m mildly obsessed with the Food Network and the Cooking channel, and I came across this recipe about a month or so ago on ‘The Kitchen’ and I honestly didn’t think margaritas could be that easy to make. 

Y’all, I was totally wrong, they are that easy to make, and I just loooved the limeade concentrate because it made these a bit more tart than a normal margarita.  When it’s time for margaritas tomorrow (or tonight, no judgement) you can have them ready in about 5 minutes with this easy peasy recipe.  I hope you are all having a wonderful week so far, have a wonderful Cinco de Mayo and thank you so much for stopping by.

  3. 1/2-1 Cup of Ice.
  4. Decorative Sugar (or Salt) For Garnish (Optional).

  1. You can add or subtract the amount of ice to change the texture to what you like.

Crockpot Buffalo Chicken Dip

Happy Happy Tuesday everybody!!! So sorry for not only the lack of blog posts last week (I was at the Happiest Place on Earth) but then this dang blog posted 1/2 finished about 5 days too early haha.  Technology can be amazing but it can also be downright silly, especially when you’re not exactly a computer genius. 

Oh well, again sorry for the confusion if you got the notification that I had posted something.  Alrighty, let’s get to the good stuff shall we? and y’all let me tell you this dip is beyond the good stuff. 

I honestly considered renaming this Crack Crockpot Buffalo Chicken Dip,  but I already have a crack dip and thought that that might be confusing.  So let me just shout from the rooftop exclaim how unbelievably, insanely addictive and delicious this dip is. 

It’s super easy to make and I was totally bummed that I didn’t triple this recipe, which BTW I totally recommend doing.  This dip is savory, creamy, cheesy and just enough spicy.  Anyways y’all, please just do yourself a huge favor and make this dip ASAP! Crockpot Buffalo Chicken Dip

Perfect spicy & savory dip made easily in a crockpot.

Ingredients
  1. 1 (8 Ounce) Cream Cheese, Room Temp & Cut Into Cubes.
  2. 2 Cups of Rotisserie Chicken, Shredded.
  3. 1 Cup of Cheddar Cheese, Shredded.
  4. 1/4 Cup-1/2 Cup of Half & Half or Heavy Cream.
  5. 1/2 Cup of Ranch Dressing.
  6. 1/4 Cup of Hot Sauce.
  7. Celery Sticks & Chips For Dipping.
  8. Crockpot.
Instructions
  1. Place all of your ingredients except the heavy cream into your crockpot and stir together.
  2. Place the cover on your crockpot and cook on high for 1 hour then stir in your heavy cream.
  3. Cover again and continue to cook for an additional hour or until all the cheese is melted and bubbly.
  4. Stir all of the ingredients together again, serve and enjoy!
Notes
  1. I highly recommend doubling or tripling the ingredients because the original recipe made too little.
  2. You're welcome to add more hot sauce if you would like to amp up the heat.

Lemon Meringue Pie Martini

Happy Happy Cocktail Thursday everybody!!! Ok, so I will assume that most or all of you have at least heard about the whole I-85 bridge collapse debacle here in Atlanta by now, which btw has taken a city with already horrendous never ending/infuriating/there’s not a word big enough to describe how annoying traffic and made it 100x worse.  What you might not have heard about,  is that last week and then again this week there were 2 separate occasions on 2 separate major interstates that 2 separate tanker trucks filled with hazardous material flipped over spilling their contents everywhere and shutting those roads down for hours on end. 

OOOH, and again this week another major interstate literally buckled in half due to some gas leak underneath the road.  Y’all, I don’t know if you personally know anyone that does exorcisms or voodoo or some kind of huge sage burning ritual, but I do believe the ATL is in desperate need of it, holler at your girl if you do haha.  Well, let me tell you, I know what I’m in need of and that is this delicious cocktail.  It’s starting to warm up around here and every time that happens I want delicious tangy desserts like lemon bars or key lime pie. 

This craving -and not to mention the giant bottle of Limoncello I have hanging around- got me wondering if I could make a totally kick butt cocktail that tastes like lemon meringue pie.  Y’all, I do not like to pat myself on the back, but this drink knocks it out of the park with flavor, it tastes just like a lemon meringue pie!!!  This is liquid pie in a glass that made me feel all kinds of good.  Please, just make this soon, you will be very happy you did.  Thank you so much for stopping by and I hope you have an absolutely fantastic week!!

Delectable cocktail that tastes just like a piece of lemon meringue pie.

  1. 2 Ounces of Limoncello Liqueur.
  2. 1 Ounce of Whipped Marshmallow Vodka.
  3. 2 Ounces of Lemonade.
  4. 4 Ounces of Heavy Cream.
  5. Yellow Food Coloring (Optional).
  6. Graham Cracker Crumbs For Garnish (Optional).
  7. Decorative Sprinkles For Garnish (Optional).
Instructions
  1. For a fun decorative garnish around your glass edge, place graham cracker crumbs and decorative sprinkles onto a plate.
  2. Place honey around the edge of your glass with your finger and dip your glass into the crumb/sprinkle mixture until covered.
  3. Now measure out all of your ingredients into a shaker or a glass, mix thoroughly and enjoy!!!

I hope everyone of you had an absolutely wonderful weekend full of food, family, faith and fun….speaking of food and you know, this being a food blog and all, I have a super awesome recipe for you guys today.  I wish I could give credit where credit was due for this recipe, but it’s another one my mom handed me that she’s had for years and has no idea where it came from haha. 

All that I do know is that this recipe is freaking delicious, incredibly easy to make, and boy will it feed a crowd.  This casserole is layered with mashed potatoes, cheese, bacon and BBQ…are you drooling yet? because I know I am.  Y’all this stuff is so good I had to give the remainder away for fear that I wouldn’t be able to control myself and end up eating the whole thing at some point during the week while staring shamefully at my grilled chicken and zucchini. 

I promise you will feel the same way when you pull this stuff out of the oven and it’s bubbly and the heavenly scent of bacon and BBQ is wafting in the air.  I think this would make a perfect easy dinner time meal for you and yours and I can’t tell you how much I loooove this dish, it is so hearty and savory.  Thank you so much for stopping by and I hope you’re having a fantastic week so far.   

getting the mashed potato mixture ready…

mix, place in the microwave, mix again, then add the sour cream and chiles…

mix in the goodies…

then place into the bottom of your pan, then sprinkle the bacon bits aka food fairy dust on top…

then a layer of cheese…

then all of the BBQ and the extra sauce…

and enjoy!!!

BBQ Baked Potato Casserole

Super delicious and hearty casserole filled with mashed potatoes, cheese and BBQ.

Ingredients
  1. 1/2 Cup of Bacon Crumbles.
  2. 1 (22 Ounce) Package of Pre-Made Mashed Potatoes.
  3. 3 Cups of Shredded Cheddar Cheese (Divided Into 2 Cups & 1 Cup).
  4. 1 (8 Ounce) Package of Cream Cheese, Cut Into Cubes, Room Temp.
  5. 1/2 Teaspoon of Salt.
  6. 1/2 Teaspoon of Pepper.
  7. 8 Ounces of Sour Cream.
  8. 1 (4 Ounce) Can of Green Chiles, Drained.
  9. 3 Cups of Pre-Made BBQ Pork or Beef (I Used 1 1/2 Cups with Sauce, 1 1/2 Cups Plain).
  10. 3/4 Cup of BBQ Sauce.
  11. 9x13 Pan.
Instructions
  1. Preheat your oven to 350 degrees F.
  2. Spray your 9x13 pan with non-stick spray and set aside.
  3. With a handheld or stand mixer with paddle attachment, place your mashed potatoes, cream cheese, 2 cups of cheddar cheese, and salt and pepper into a microwave safe bowl.
  4. Mix together and microwave on high for 3-4 minutes, then take out and stir in the sour cream and chiles and mix until well combined.
  5. Spoon in your mashed potato mixture into your pan and evenly sprinkle the bacon bits all over the top of the potatoes then 1 cup of the cheddar cheese on top of the bacon.
  6. Now, evenly arrange the BBQ all on top of the cheese, then drizzle the BBQ sauce all over the BBQ.
  7. Bake 30-40 minutes or until bubbly and just starting to slightly brown on top.
  8. Serve and enjoy!!
Notes
  1. For the half of the BBQ that had sauce on it already I used Jack Daniels Tennessee Honey, and y'all that stuff is amazing just in case your Publix carries it too.
  2. You're absolutely welcome to cook up fresh bacon to crumble on top as well as your mashed potatoes, but it is a huge time saver to use the pre-made ingredients.
