Happy Cocktail Friday y’all!! I must say, with yesterday being Cinco de Mayo, the Kentucky Derby is happening today & tomorrow, and Mother’s Day is Sunday, I have definitely had a bit of a dilemma picking a food/drink theme for today.
Since I did a hummus with avocado post on Wednesday-which could definitely sub for guacamole-I have Cinco de Mayo covered, but that leaves today, tomorrow and Sunday open. Soo, I decided to pick a drink that I think definitely can be used for The Derby or for Mother’s Day.
The basis of this drink is a Mint Julep, the official drink of The Kentucky Derby, but made a million times more delicious and feminine with the addition of fresh blackberries and lemon lime soda, perfect for Mother’s Day! I definitely lucked out by buying the most deliciously sweet and gigantic blackberries ever for this drink, but if they’re not in season and you want to make this, just get some frozen ones and add sugar if needed.
Y’all I can’t emphasize enough how ding dang delicious this drink is, lots of blackberry flavor, fizzy from the soda, a wonderful pop of mint and fun because of the bourbon-which I promise you won’t taste. First, squish (a technical term) up some mint…
add your Bourbon & blackberries…
squish again (sorry for the murder scene look here)…
then fill the rest with Sprite (I don’t know why I didn’t take a pic with it full, oops)…
and enjoy!!! 
- 6-8 Fresh Blackberries (or Frozen).
- 2-6 Mint Leaves.
- 1.5 Ounces of Bourboun (or More, No Judgement Here).
- 1 Can of Sprite or Lemon Lime Soda.
- 1 Teaspoon of Sugar (Option If Fruit Isn't That Sweet).
- Place your mint leaves into a cup, and squish them to release the smell & flavor.
- Pour your Bourbon over the mint leaves.
- Now add your blackberries and squish them into the Bourbon & mint (if your fruit isn't sweet enough for you, you can add the sugar now).
- Now fill the rest of your cup with your lemon lime soda, serve over ice and remove the mint leaves if you don't want them floating around in your drink and enjoy!
- You can totally use frozen fruit if blackberries are not in season yet, or you may substitute whatever fruit you like best.
- The amount of mint leaves is totally up to your preference.


I’m not gonna lie, I get full on food hungover after a throw it down kind of cheat day, i.e., puffy face, sweaty, exhausted, cranky, etc., and sometimes I just don’t want to feel that way, so I skipped it this past weekend.
My sister sent this recipe to me forever ago & luckily she was going to come visit this weekend so I figured it was a perfect time to make it. Avocados are yummy and healthy, and hummus is always yummy and healthy so the two combined pretty much made delicious healthy perfection.
For something filled with so many minerals and vitamins this stuff was straight up crack y’all. Between my sis and I this stuff was gone in less than an half an hour, especially with the organic blue corn tortilla chips to eat it on (sorry, my basic status totally came out in this recipe).

Yes, this drink is that good, no, it’s not hard to make, and yes you’ll want more than one. I really wish I had made up the title for this drink but I totally didn’t and honestly that’s what caught my attention to begin with, then I saw all the deliciousness in this drink and I was sold.
This drink is fruity, tropical and all things wonderful-so poetic hehe-really the perfect thing to sip on while hanging out at the pool or beach.
In my version of this drink I substituted the cranberry juice with sparkling cranberry juice, and y’all I think that’s what put this drink over the edge, that sparkle just really added something. Y’all this was surprisingly easy to make, the only thing I would do differently next time is put it in my deep dish pie pan because there was some bubbling over the sides while baking but other than that yum, yum, yummy! Also, I know ice cream isn’t normally served with flan, but it was so fug on that one side where it stuck to the pan I needed to cover it hehe. I was diligently looking for another recipe that included banana rum because A.) it’s delicious and B.) because I basically have a gallon of it at home and came across this recipe on the Cruzan website. The title obviously caught my attention but also all the good stuff in it.
I figure any cocktail with cream & Bailey’s Irish Cream in it will be wonderfully smooth & delicious, and OMG this cocktail is straight up dessert, it is sooo freaking good y’all. Y’all I’m giving you fair warning, these are pure crack, for reals. Biscoff cookies don’t bring too much sweetness to these truffles, but the cream cheese & powdered sugar just make these perfection. I genuinely did the eye roll, omg, holy cow these are delicious face.
These are just too good not to make, seriously, get on these asap. I will note that this dough is super sticky, definitely more so than any other I’ve made so just make sure this dough is nice and frozen to keep from making such a huge mess while rolling them out. This recipe was sent to me by no less than 4 different people which I’m going to believe was due solely to their desire to send me a great recipe other than just them wanting me to make it for them haha.
Either way, I’m always thrilled to make recipes that folks send me, especially if they are as good as this pie. Honestly, I was a bit concerned at the amount of lemon juice that the recipe called for, but said what the heck and put it all in anyway and totally glad I did because it really rounds out the flavor of this pie.
The only thing that I really changed about this recipe was the crust. The original recipe called for a graham cracker crust, but I figured the slight tartness of the pie would be extra yummy with a chocolate crust-which, yes, I totally cheated and used a pre-made crust. I highly recommend y’all make this pie, too easy and too delicious not to. Have a great start to the week & thanks so much for stopping by!

I believe I will be enjoying this particular libation this coming cheat day (again) because this is so bubbly & with just enough sweetness, and about 2 minutes worth of prep to put it together. What’s also awesome about this drink (and let’s be honest, most drinks) if you want even more sweetness feel free to add more pineapple juice & if you want more bubbly then (obviously) more champagne.
