Blackberry Mint Julep

Happy Cocktail Friday y’all!! I must say, with yesterday being Cinco de Mayo, the Kentucky Derby is happening today & tomorrow,  and Mother’s Day is Sunday, I have definitely had a bit of a dilemma picking a food/drink theme for today. 

blackberry-mint-julep| HollysCheatDay.comSince I did a hummus with avocado post on Wednesday-which could definitely sub for guacamole-I have Cinco de Mayo covered, but that leaves today, tomorrow and Sunday open.  Soo, I decided to pick a drink that I think definitely can be used for The Derby or for Mother’s Day. 

blackberry-mint-julep| HollysCheatDay.comThe basis of this drink is a Mint Julep, the official drink of The Kentucky Derby, but made a million times more delicious and feminine with the addition of fresh blackberries and lemon lime soda, perfect for Mother’s Day!  I definitely lucked out by buying the most deliciously sweet and gigantic blackberries ever for this drink, but if they’re not in season and you want to make this, just get some frozen ones and add sugar if needed.

Blackberry Mint Julep

An extra delicious take on a traditional mint julep infused with fresh blackberries.

THIS IS FOR ONE COCKTAIL
  1. 6-8 Fresh Blackberries (or Frozen).
  2. 2-6 Mint Leaves.
  3. 1.5 Ounces of Bourboun (or More, No Judgement Here).
  4. 1 Can of Sprite or Lemon Lime Soda.
  5. 1 Teaspoon of Sugar (Option If Fruit Isn't That Sweet).
Instructions
  1. Place your mint leaves into a cup, and squish them to release the smell & flavor.
  2. Pour your Bourbon over the mint leaves.
  3. Now add your blackberries and squish them into the Bourbon & mint (if your fruit isn't sweet enough for you, you can add the sugar now).
  4. Now fill the rest of your cup with your lemon lime soda, serve over ice and remove the mint leaves if you don't want them floating around in your drink and enjoy!
Notes
  1. You can totally use frozen fruit if blackberries are not in season yet, or you may substitute whatever fruit you like best.
  2. The amount of mint leaves is totally up to your preference.

Easy Avocado Hummus

Happy Wednesday everybody!!  Ok, so maybe a few of you are wondering why in the sam heck I’m posting something healthy, and I will apologize if some of y’all were expecting a pie or cupcakes or something equally decadent, but sometimes taking a break from my cheat day is needed. 

easy-avocado-hummus-chp| HollysCheatDay.comI’m not gonna lie, I get full on food hungover after a throw it down kind of cheat day, i.e., puffy face, sweaty, exhausted, cranky, etc., and sometimes I just don’t want to feel that way, so I skipped it this past weekend. 

easy-avocado-hummus| HollysCheatDay.comMy sister sent this recipe to me forever ago & luckily she was going to come visit this weekend so I figured it was a perfect time to make it.  Avocados are yummy and healthy, and hummus is always yummy and healthy so the two combined pretty much made delicious healthy perfection. 

easy-avocado-hummus| HollysCheatDay.comFor something filled with so many minerals and vitamins this stuff was straight up crack y’all.  Between my sis and I this stuff was gone in less than an half an hour, especially with the organic blue corn tortilla chips to eat it on (sorry, my basic status totally came out in this recipe).

Delicious and healthy avocado hummus.

Ingredients
  1. 1 (15.5 Ounce) Can of Chickpeas, Drained & Rinsed.
  2. 2 Medium Avocados.
  3. 3-5 Tablespoons of Extra Virgin Olive Oil.
  4. 2 Teaspoons of Tahini Paste.
  5. 3 Tablespoons of Lime Juice.
  6. 1 Clove of Garlic.
  7. 1/8 Teaspoon of Tumeric.
  8. Pink Salt & Pepper to Taste.
  9. Food Processor or Blender.
  10. Blue Corn Chips or Pita For Dipping.
Instructions
  1. Place your chickpeas in a strainer and rinse off.
  2. Place your chickpeas in your food processor & add the rest of your ingredients except the salt and pepper.
  3. Process all of the ingredients together until smooth & you may add a tablespoon or more of the olive oil if want to make it creamier.
  4. Now add your salt & pepper to taste and mix again.
  5. Serve with chips and/or pita and enjoy!

Earl Grey Tea Cookies

Happy Monday y’all! I’m assuming that any of you that have read my blog for even a short period of time now have realized I have a full fledged obsession with Earl Grey Tea, and especially any dessert with Earl Grey Tea in it. 

earl-grey-tea-cookies| HollysCheatDay.comI just feel like the beautiful smell and taste that the Bergamot in the tea gives is just so unique & adds just a hint of decadence.  Due to the fact that I’m head over heels obsessed with my Earl Grey Tea Cupcakes w/Cookie Frosting, I figured the next thing to do would be to make Earl Grey Tea shortbread cookies. 

earl-grey-tea-cookies| HollysCheatDay.comI have always loved the delicious simplicity of shortbread with that wonderful buttery goodness, which I believe tastes super awesome with a cup of tea, sooo I figured why not mix the two?  Y’all this dough came out perfect, easily rolled out, no chilling involved and soft & buttery when baked up.

Earl Grey Tea Cookies

Delicious shortbread cookies made extra special with a hint of Earl Grey Tea.

Ingredients
  1. 2 Sticks (1 Cup) of Unsalted Butter, Room Temperture.
  2. 1/2 Cup of Powdered Sugar.
  3. 2 Cups of All-Purpose Flour.
  4. 1/2 Teaspoon of Pink Himalayan Salt.
  5. 1 Teaspoon of Vanilla Extract.
  6. 1 Bag of Earl Grey Tea Leaves.
  7. 1 Rolling Pin & Extra Flour For Rolling Dough.
  8. Cookie Cutters.
  9. 1 Cookie Sheet.
Instructions
  1. Preheat your oven to 350 degree F.
  2. With a handheld or stand mixer with paddle attachment, whip your butter & powdered sugar until smooth.
  3. Now add your flour, vanilla, tea leaves & salt and mix until a soft dough starts to form.
  4. Liberally flour a flat surface and roll out your dough to about 1/4" in thickness.
  5. Using whatever size & shape cookie cutters you prefer, cut out all of your cookies & place on your non stick sprayed pan.
  6. Bake your cookies for 13-15 minutes if using small cookie cutters (I took mine out at 13) or 15-17 minutes if using larger cookie cutters or until just slightly golden brown around the edges.
  7. Let cool & enjoy!
Notes
  1. Just make sure to watch your cookies while baking, I baked my mini cookies for a much shorter time than I would have large cookies.

Happy Cocktail Friday y’all!!  I’m so excited to share this cocktail with you guys today!!  Sorry it sounds like I’m yelling, which I’m not of course but just imagine the exclamation points are me jumping up and down with joy…

  1. 3 Ounces of Coconut Rum (I Used Malibu).
  2. 3 Ounces of Orange Juice.
  3. 1.5 Ounces of Ruby Red Grapefruit Juice).
  4. 2 Ounces of Sparkling Cranberry Juice (or Regular Cranberry Juice).
  5. Orange Slices For Garnish (Optional).
  6. Shredded Coconut For Garnish (Optional).
Instructions
  1. Measure out your chilled ingredients into your glass or glasses, mix together and enjoy!!
Notes
  1. You don't have to use sparkling cranberry juice, but I thought it really added so much.

Spanish Flan

Happy Wednesday y’all!!  You guys ever have a dessert so delicious and decadent you think it can’t possibly get much better than that?  Well Spanish Flan is one of those to me. 

spanish-flan| HollysCheatDaycomIt’s soo creamy, custardy, decadent insert more adjectives here and just downright delicious.  I think the first time I had some was at a tapas not topless bar-which, I highly recommend, some of the best food ever-and I was practically made speechless (btw that almost never happens, I’m what some might call verbose) by how awesome it was. 

spanish-flan| HollysCheatDay.comObviously, after devouring finishing my obviously too small of a piece I knew that I needed to learn how to make it so I could inhale a whole one enjoy it on whatever cheat day I wanted. 

spanish-flan| HollysCheatDay.comY’all this was surprisingly easy to make, the only thing I would do differently next time is put it in my deep dish pie pan because there was some bubbling over the sides while baking but other than that yum, yum, yummy!  Also, I know ice cream isn’t normally served with flan, but it was so fug on that one side where it stuck to the pan I needed to cover it hehe.  I hope y’all have a wonderful hump day & thanks so much for stopping by!

A decadent & delicious traditional Spanish Flan.

Ingredients
  1. 1 Cup of Granulated White Sugar.
  2. 3 Eggs.
  3. 1 (12 Ounce) Can of Evaporated Milk.
  4. 1 (14 Ounce) Can of Sweetened Condensed Milk.
  5. 1 Tablespoon of Vanilla.
  6. 9" Round Pie Pan (Preferably a Deep Dish One).
Instructions
  1. Preheat your oven to 350 degrees F.
  2. In a medium saucepan over medium low heat, place your granulated sugar into your pan making sure to stir constantly until completely melted and brown in color.
  3. Pour your caramel into your pie pan, and make sure to cover the entire bottom of your pan, and set aside.
  4. With a handheld or stand mixer with paddle or whisk attachment place your eggs into the bowl and beat until light and bubbly.
  5. Now add your condensed milk, evaporated milk & vanilla to your eggs and mix until well combined.
  6. Carefully pour (it's very thin & will spill all over) your egg/condensed milk into your pie pan on top of the browned sugar.
  7. Now loosely place aluminum foil on top of your pie, place your pie onto a baking sheet to keep from any spillage and bake for 60 minutes.
  8. Remove from the oven and completely cool.
  9. To remove your flan, I suggest placing your pan into a warm water bath for a few minutes, making sure not to get water onto your flan, cut around the edge of the entirety of your pan.
  10. Place a plate on top of your flan and invert it upside down so the browned sugar is on top of the flan.
  11. Serve with whipped cream or ice cream (or not) and enjoy!
Notes
  1. I would recommend using a deep dish pie pan, but if you don't have one, place a cookie sheet under it while it bakes to keep from it spilling into the bottom of your oven.
  2. The texture around the edges of the flan were a little more textured (but still delicious), it was pure custard goodness throughout the whole middle though.

How To Series: Crockpot Dipping Caramel

Happy Monday y’all!! I thought I would start your week with something beyond easy to make because I’m sure you’ve got plenty enough to keep you busy, am I right?  Speaking of Monday, how was y’all’s weekend? Busy? Relaxing?  Well, mine was a bit of both which is good, but I know that aside from the constant layer of yellow pollen plaguing the state of Georgia at this time, it couldn’t have been more stunning this weekend. 

how-to-make-dipping-caramel| HollysCheatDay.comWarm, not too warm, not too humid either thank goodness because we will certainly get enough of that starting in the next month or so.  Anyways y’all I’m rambling again, so let’s get to the sweet stuff.  Sometimes caramel is needed in your mouth life, or more specifically on foods like ice cream, apples, cheesecake,  straight off the spoon, you get what I’m saying, and when it can be made this easy in your crockpot, I say why not?

  1. 1-4 (14 Ounce) Cans of Sweetened Condensed Milk.
  2. Crockpot.
  3. Water.
Instructions
  1. Place your cans of sweetened condensed milk into your crockpot and fill with water making sure your cans are completely covered in water.
  2. Place your lid back on your crockpot and place on low heat.
  3. Cook your cans of sweetened condensed milk for 8 hours on low checking periodically to make sure they are always covered with water.
  4. Remove your cans, let cool completely & enjoy!

The Dirty Banana Cocktail

Goodness y’all we finally made it to Friday, especially since cruelly yesterday I kept thinking it was Friday aaalll day womp, womp… (isn’t that the worst?!).  Whatevs, it’s Friday now and a cocktail Friday to boot.  I’m sorry not sorry for the title of this drink y’all, but it makes me laugh every time I read it.

THIS RECIPE IS FOR ONE DRINK

  2. 2 Ounces of Bailey's Irish Cream.
  3. 1 Ounce of Heavy Cream.
  4. Dash of Chili Powder (Optional).
  5. Decorative Sugar in Color of Your Choice(Optional).
Instructions
  1. If you would like a decorative sugar rim on your glass(es), place honey around the rim of your glass(es) & dip into the sugar until completely covered.
  2. Now measure out each ingredient into you glass(es) and mix until smooth & well combined.
  3. Add a dash of chili powder on top and enjoy!

Biscoff Cookie Truffles

Happy Hump Day y’all!!  I was already a huge fan of Biscoff cookies, but after making my Earl Grey Tea & Cookie Cupcakes with Biscoff frosting I’m definitely a full fledged addict now. 

biscoff-cookie-truffles | HollysCheatDay.comI loooove me some cookie & cake truffles as you can see here and here , and I thought maybe that Biscoff needed their own version.  Strangely enough, I couldn’t find any recipes for them, so I just took from some of my past recipes I just mentioned before and threw them together and they turned out even better than expected. 

biscoff-cookie-truffles| HollysCheatDay.comY’all I’m giving you fair warning, these are pure crack, for reals.  Biscoff cookies don’t bring too much sweetness to these truffles, but the cream cheese & powdered sugar just make these perfection.  I genuinely did the eye roll, omg, holy cow these are delicious face.

Biscoff Cookie Truffles

Scrumptious truffles filled with Biscoff Cookies.

Ingredients
  1. 2 (8 Ounce) Blocks of Cream Cheese, Softened.
  2. 1 Sleeve (32 Cookies) of Biscoff Cookies.
  3. 1 Cup of Powdered Sugar.
  4. 20 Ounces of Almond Bark.
  5. 1/2 Cup of Vegetable Shortening in the Butter Flavor.
Instructions
  1. With a food processor pulse the cookies until finely processed, if you don't have a food processor, place cookies in a baggie and crush with a rolling pin or your hands.
  2. With a handheld or stand mixer with paddle attachment place your cream cheese into your bowl and whip until very smooth.
  3. Now add your crushed up cookies and mix until well combined.
  4. Now add powdered sugar and mix again until nice and smooth.
  5. Place your Biscoff/cream cheese mixture into the freezer for at least an hour to make it easier to roll out (it's very sticky).
  6. Place some parchment or wax paper onto a cookie sheet and roll out your dough into 1" balls and place back into the freezer for at least 2 hours.
  7. Once the truffles have frozen for a while, with a double boiler or with a bowl on top of a pot with boiling water (making sure not to let the bowl touch the water) chop up your almond bark into pieces and place into the bowl with the vegetable shortening.
  8. Once the almond bark & vegetable shortening has completely melted together, dip your truffles into the bark making sure they are completely covered and place back onto the wax paper.

Easy Cream Cheese Pie

Happy Monday y’all!  Pretty excited to share this pie with y’all today, for delicious obvious reasons but also because desserts that can be put together in less than 15 minutes are sometimes the best kinds.

easy-cream-cheese-pie| HollysCheatDay.comThis recipe was sent to me by no less than 4 different people which I’m going to believe was due solely to their desire to send me a great recipe other than just them wanting me to make it for them haha. 

easy-cream-cheese-pie| HollysCheatDay.comEither way, I’m always thrilled to make recipes that folks send me, especially if they are as good as this pie.  Honestly, I was a bit concerned at the amount of lemon juice that the recipe called for, but said what the heck and put it all in anyway and totally glad I did because it really rounds out the flavor of this pie. 

easy-cream-cheese-pie| HollysCheatDay.comThe only thing that I really changed about this recipe was the crust.  The original recipe called for a graham cracker crust, but I figured the slight tartness of the pie would be extra yummy with a chocolate crust-which, yes, I totally cheated and used a pre-made crust.  I highly recommend y’all make this pie, too easy and too delicious not to.  Have a great start to the week & thanks so much for stopping by!

THE CREAM CHEESE PIE
  1. 1 (8 Ounce) Block of Cream Cheese, Softened.
  2. 1 (15 Ounce) Can of Sweetened Condensed Milk.
  3. 1/3 Cup of Lemon Juice.
  4. 1 Tablespoon of Vanilla Extract.
  5. 1 9" Pre-Made Chocolate Pie Crust (I Used Keebler Ready Crust).
FOR THE WHIPPED TOPPING (OPTIONAL)
  1. 1 Cup of Heavy Whipping Cream, For Topping (Optional).
  2. 1/4 Cup of Granulated Sugar, For Topping (Optional).
FOR THE CREAM CHEESE PIE
  1. With a handheld or stand mixer with paddle attachment beat your cream cheese until smooth.
  2. Now add your sweetened condensed milk and mix until smooth.
  3. Now add your lemon juice and vanilla and mix again until well incorporated.
  4. Now pour into your pie crust and place in your refrigerator for at least 2 hours to set.
FOR THE WHIPPED TOPPING (OPTIONAL)
  1. With a handheld or stand mixer with whisk attachment whip your heavy whipping cream and sugar until stiff peaks form & spoon or pipe onto your chilled pie.
Notes
  1. You can definitely use a graham cracker crust or even your own homemade crust if you prefer.

Pineapple Champagne Martini

Happy Friday everybody! I can’t begin to tell y’all how excited I am that it’s almost the weekend, woohoo! This week kind of kicked me in the booty, I’m just so darn tired (and in need of a cocktail!).  

pineapple-champagne-martini-onclsonfar| HollysCheatDay.comI believe I will be enjoying this particular libation this coming cheat day (again) because this is so bubbly & with just enough sweetness, and about 2 minutes worth of prep to put it together.  What’s also awesome about this drink (and let’s be honest, most drinks) if you want even more sweetness feel free to add more pineapple juice & if you want more bubbly then (obviously) more champagne.

This drink is bubbly, sweet & filled with pineapple.

THIS IS FOR ONE DRINK
  1. 2 Ounces of Champagne.
  2. 3 Ounces of Pineapple Juice.
  3. 1/3 An Ounce of Vanilla Vodka (I Used Vanilla Cake Vodka).
  4. Decorative Sugar For Rim (Optional).
Instructions
  1. If you would like a sugar rim around the edges of your glasses, rub some honey around the rims and dip you glasses into the decorative sugar you have placed on a plate until covered.
  2. Place all ingredients into your glass (or martini shaker) and mix with a straw, then enjoy!
Notes
  1. I used Vanilla Cake Vodka because I didn't have regular Vanilla Vodka, but in my opinion they don't taste that dissimilar.
