Happy Monday everybody!! If you’re having the Monday blues like I know I do every week, and let’s be honest they really start Sunday night with the thoughts of ‘tomorrow I have to wake up early & go adult, again’ then I have something to help you out.
This carrot cake fudge is super easy to make and perfect for this upcoming Easter weekend, because who doesn’t love a theme? Oh, and let’s not forget this is really, really yummy y’all.
Last week I was sent by the lovely Simple Recipes Club these super delish Brach’s carrot cake candy corns, and you guys these are awesome, and I knew they would be perfect to top the carrot cake fudge with.
This fudge is really rich, with plenty of that carrot cake spike & flavor coming through, then the added bonus of the carrot cake candy corns on top, this is a must make for Easter y’all. Have a wonderful start to your week & thanks so much for stopping by!
parchment paper into your pan & non-stick spray…
butter, white chocolate chips & sweetened condensed milk…
nice & melted…
now some cake mix…
all mixed in & time for some marshmallow fluff …
all mixed in again & into your pan…
now time for some carrot cake candy corns…
and enjoy!!!

- 3 Cups of White Chocolate Chips.
- 1 (14 Ounce) Can of Sweetened Condensed Milk.
- 1 1/2 Cups of Carrot Cake Mix.
- 4 Tablespoons of Unsalted Butter.
- 1/2 Cup of Marshmallow Fluff.
- 2-4 Drops of Gel Food Coloring in Orange (Optional).
- 24-28 Brach's Carrot Cake Candy Corn (Optional).
- 9x13 Pan.
- Line your pan with parchment paper with the paper going over the sides of the pan, then spray with non stick spray, set aside.
- In a large pot place your white chocolate chips, sweetened condensed milk, and butter, and on medium/low heat melt all of these ingredients together.
- Now add half of your dry carrot cake mix and mix in, then add the other half and mix in too.
- Now add your marshmallow fluff and mix in until well blended.
- If you want a more vibrant orange color add your food coloring in now and mix well.
- Pour your fudge into your pan and spread out evenly.
- If you would like to add the candy corns, gently & evenly place them on top.
- Place your fudge into the fridge to let it set for at least an hour.
- After setting up, cut into pieces and enjoy!


Anyways, last cheat day I really wanted a cocktail. I had some pear juice lying around and thought it might go quite well with some vodka, which totally works (I initially put too much in, but remedied that the 2nd time I made it).
I did think it needed a little something extra, but didn’t want to add anything else super sweet or flavored and overpower it, because pear juice is pretty mild.
I ultimately decided on a whole vanilla bean, which I think added that extra oomph it needed, and because drinking out of cute shot glasses is way more fun to me, that’s what I did. Have a wonderful weekend y’all and again thanks so much for stopping by!

This big mug cake y’all is aawweesomme, the cake stayed moist, the peanut chips added some extra yumminess and the ease of making this in the microwave, well, let’s face it, you can’t beat that.
No mixing bowls, no fancy kitchen equipment, no preheating the oven, into the microwave and dunzo, yummy cake time. Also, please feel free to sub out the peanut butter chips for whatever you love best, have a wonderful day y’all!

I know, I know, sooo dramatic but for reals y’all, not a fan of losing an hour, and maybe it has something to do with my travels this weekend where I ‘gained’ an hour with a different time zone, then lost it because of DST and then lost an additional hour coming back into my time zone, sigh.

Soo excited, not only because weddings are great & two awesome folks are getting hitched, but because it will be the first time I’ve been back in my old stomping grounds & see a number of folks for the first time in almost 5 years, sheesh time flies. Let’s not forget Louisiana is where I got my start working in film, and I’ve got memories (a lot good, some meh) coming out of the wazoo from that place, and not to mention I’ve met some of my best friends ever there.
So, what better way to celebrate the nuptials of a beautiful couple than with a cocktail, am I right? I may or may not have mentioned in the past that a Gin & tonic is hands down my ultimate cocktail, pretty much the only thing I ever drink when I’m out splurging.
If you like a Gin & tonic, then you’ll like this too, totally has that same light taste to it…the lime juice, the Gin & the simple syrup, which you can find the link on how to make 
and some simple syrup…

I know, that sounds completely gluttonous, but hey, that’s what cheat days are for, hehe. What’s also awesome about this recipe is that it’s pretty darn versatile…don’t like strawberry pie filling? no problemo, use apple, or blackberry, or really anything that you are particularly fond of.
I also must point out that the first time I made this I got overzealous and threw on an extra can of pie filling because more is better right? yeah, don’t do that, it totally threw the ratio off,

I did however want to make the frosting a bit different other than the regular old cream cheese kind that’s normally used. I kind of had an idea about the frosting, but I basically started throwing things into my mixing bowl
that I liked that I thought would taste good with the carrot cupcakes, and OMG y’all this frosting is heavenly. Due to the ratio of butter to cream cheese in the frosting it’s neither too sweet nor too tart from the cream cheese, also, the brown sugar and cinnamon pretty much make this frosting perfection.
I also made sure to really finely grate the carrots because I’m sure we’ve all had carrot cake before where you basically crunch into pieces in the cake, umm gross. Happy to say that the cupcakes were perfectly moist (not a hint of crunchiness) with the rich frosting on top, yumm y’all.

Awesome! because that is precisely what I’m bringing you guys today. I made the grand mistake of watching Chocolat, (that totally adorable movie with an equally adorable Johnny Depp), when it showed up in my Netflix queue. Not that it’s really a mistake to watch because it’s a great movie, but it is full to the brim with the most drool inducing chocolate making scenes, and all it did was make me wish it was my cheat day. Well, obviously it wasn’t my cheat day, but it gave me an awesome idea of something I needed to make. The main character serves her customers in her chocolaterie this incredible looking drinking chocolate that she puts cayenne pepper in, and I was all oh snap, I must have that.
I started doing some research about drinking chocolate and honestly most looked waaaay too dark for me, sorry, just too bitter you know? Anyways, I just assumed I could throw together things that I thought would be super yum and make a delicious drinkable chocolate, and y’all it totally is! This is the perfect mix of just enough sweet without it being too sweet, and that little extra kick of cayenne to up the flavor. This is delicious you guys, just go ahead and make some you’ll be happy you did, have a great weekend!

I decided to try my best to brighten this pesky middle of the week day by bringing something super delicious and super easy to make for y’all. I will be honest, if you’re not a fan of crab, you might still like it (obvi, unless you’re allergic), but if you love crab like I do then you will absolutely loooove this dip.
I honestly couldn’t get enough of this dip y’all, and then throw in the added bonus of deliciously buttered & toasted fresh French bread to dip it in? oh snap! sooo good. I may or may not be slightly drooling at the thought of this delectable dip, mmmm (TMI?).
Don’t want to dip bread? no problemo, perfectly delicious on tortilla chips too, or just straight off of a spoon–can you tell I might like this dip? haha. Let’s not forget the ‘easy’ in the title either, because I was pleasantly surprised by how quickly and easily this came together, and I would be less than honest if I didn’t admit that I literally couldn’t stop eating it, downright addictive, for reals.
