Happy Wednesday everybody!!! or should I say potato Wednesday–you know, because I say weird things that make me chuckle and everyone else looks at me like the weirdo I am…okay so no potato Wednesday.
Honestly, these little easy cheesy bites are so darn good that I might be willing to rename Wednesday in their honor, juuuust kidding, but these are super duper delicious for sure. I’m sure most of y’all have had some form of potato skins–most likely in a bar I will assume–and they are usually crispy, but thicker than a potato chip.
These little easy cheesy potato skins turned out to be like amazingly thick round cheesy french fries. Y’all I couldn’t get enough of these guys, so I highly recommend you make these ASAP. I hope you’re having a wonderful week so far and as always thank you so much for stopping by.
potatoes washed, chopped, and salted…
bake, bake, bake…
take out and then add lots of cheese…
back into the oven for a few more minutes then enjoy!!!

- 2-4 Large Baking White Potatoes.
- 1-2 Cups of Shredded Cheddar Cheese.
- Pink Hamalayan Salt (or Sea Salt), To Taste.
- Baking Sheet & Aluminum Foil.
- Bacon Bits For Topping (Optional).
- Preheat your oven to 400 degrees F.
- Place your aluminum foil onto your baking sheet then spray your foil with non-stick spray and set aside.
- Thoroughly wash your potatoes then dry off.
- Now cut the ends off of your potatoes and throw away, then slice your potatoes into 1/2 an inch (thinner or thicker to your liking) slices and place on your baking sheet.
- Now sprinkle your salt all over your potato slices and bake in the oven for 15-20 minutes or until they are starting to brown.
- Remove your potatoes from the oven and sprinkle them all liberally with cheese, then place your potatoes back into the oven for about 3 more minutes until cheese is completely melted.
- If you want bacon bits on your potatoes sprinkle them on now and enjoy!!!


Anyways, back to ice cream…and today’s ice cream is so extra special because of the abundant key lime pie flavors throughout. Oh yes, key lime pie ice cream y’all, this stuff is heavenly. This ice cream is cold, sweet, rich and just enough of that amazing key lime pie tartness to it that is just delectable, and did I mention easy to make? yeah, so easy to make y’all.

This lovely little libation is made with fresh grapefruit juice, tequila (hey-oh!) and club soda (love me some bubbles).
I definitely needed to add some extra sugar to this because as I’m sure you are aware grapefruit isn’t exactly the sweetest fruit in the world, so feel free to add some more sweetness (or tequila hehe). You know it’s crazy bananas hot when you get in your car and you have to immediately take your earrings out because they start to burn your ears due to heating up so quickly-for reals.
Anyways, back to this pie (or pies because this recipe makes two), but I love just about anything strawberry, anything (well, not asparagus of course) with Cool Whip, and hello no-bake, and because they need to be frozen they are sooo deliciously cold.
Also, this recipe makes so much it makes more than enough for 2 pies, you could totally use deep dish pie crusts if you wanted because it makes so much.

I have been seeing variations of this recipe on different fitness Youtubers that I follow and though I’m usually suspicious at how tasty ‘healthy’ or ‘high protein’ recipes actually are, these were not disappointing, at all. These are crazy satisfying, super easy to make, and the perfect mixture of salty and sweet, and hello peanut butter.
Also, there is zero guilt in eating these, because these are pretty darn healthy for you too. Do note that these little protein peanut butter balls definitely need to be kept refrigerated because they tend to be a bit soft at room temperature, but other than that these are awesome. I’ve had some version of this recipe continue to pop up in my Pinterest feed for forever, so I figured it was about dang time to make them, because they looked not only super delicious but super duper cute…cute goes a long way with food in my book.
