Holly’s Junk Food Review Series: Snack Cakes

Happy Happy Thursday everybody! Another day and another junk food review, woohoo!

You will see below that one item that I’m reviewing is in fact not a snack cake but it dawned on me that I needed to hurry up and review it because it is a s’mores food item.  Being that is it is the middle of August, S’mummer is coming to a quick close and I better go ahead and review it.  I personally will eat anything s’mores year round but not everyone is as awesome as I am haha. 

First up we have the Peanut Butter Ho-Ho’s…

So I will preface this review with the fact that I do love a good snack cake (there’s my redneck tastebuds coming out again) and throw in some peanut butter then I’m way excited.  Well, this cake would have been awesome had there been any discernible peanut butter in this cake, sigh.  This literally just tasted like a regular chocolate snack cake, tasty, but nothing special this gets a solid 5 out of 10.

Our next snack cake is the Little Debbie S’mores cake…

I gotta say, Little Debbie y’all did a pretty darn good job on this little snack cake.  The cake part has a really good underlying graham cracker flavor, and for once a s’mores product put the right amount of chocolate where it’s not overwhelming the entire treat.  The only thing I would have changed is have the cream filling taste more marshmallowy, basically it tastes like most vanilla cream fillings in snack cakes, yummy, but not like marshmallow.  I liked these a lot, I mean as good as cake from a little plastic baggie is going to taste haha.  I give these a 7 out of 10.

Last but not least we have a very non snack cake item, but as I mentioned earlier it is s’mores and it’s getting a bit late into summer to be reviewing that kind of stuff so here we go…

This Great Value Graham Cracker Marshmallow swirl was something I had been waiting for forever to try.  I believe this item was/is exclusive to Wal-Mart and honestly I don’t get super excited to go peruse around that store, but I was willing to do so to get this stuff.  I initially tried this straight off of a spoon like a savage and was pretty grossed out by what I tasted.  I guess I had expected the perfect balance of marshmallow fluff and chocolate but instead I got an overwhelming spoonful of just sickening sweetness.  I was this close to just throwing the whole thing out but instead decided to try it on a graham cracker like it was most likely intended to be eaten.  Well, I don’t know what happened, but on a graham cracker, this magically transforms into a delicious s’mores treat.  If you really really want to turn up the awesome, dip pretzels into this stuff and you will get the perfect sweet & salty treat.  I give this stuff (on graham crackers or pretzels) a solid 9 out of 10.

Neiman Marcus Dip

Happy Happy Monday everybody!!!  It is now officially one of the best times of the year…Football Season! and yes, I like to treat this particular season as one big holiday.  Obvi, I love football (Go Falcons!), but it’s not just the game, football to me is the beginning of Fall, which encompasses some of my absolute favorite things; beautiful trees, pumpkin baked goods, cinnamon in everything, cooler temps and of course Halloween. 

Y’all, I will totally have my office decorated for Halloween September 1st, no shame here.  Anyways, so with the onset of my favorite season comes the need for lots of dips, because watching a football game without some sort of chip & dip combo is just unacceptable.  I am basically always on the lookout for a new dip to try, and honestly the easier the better in most cases #lazyonacheatday.  This particular dip has popped up in my feed for forever, with a number of different names with varying ingredients, but for the most part there have been 5 or less ingredients in most of them, which is just perfect. 

For such a simple and un-fancy dip, I can only assume it’s called the Neiman Marcus Dip due to them serving it at some point? I really have no idea, all I know is that this dip was thrown together in about 5 minutes and is spectacularly delicious, I mean how could it not be with all of that mayonnaise & cheese in it?  I did make one slight little change in this recipe by swapping out the green onions (which I just cannot stand) with the dried Parsley. 

Also, the next time I make this dip,  I will swap out the basic shredded cheddar with finely shredded cheddar-which I made note of in the recipe card-so it will blend more smoothly.  If you’re looking for something easy and delicious to make for your football watching pleasure or maybe some Game of Thrones viewing,  I think this one will be right up your alley.  I hope everyone has a wonderful day and thank you so much stopping by!

Ingredients
  1. 1 Tablespoon of Dried Parsley.
  2. 8 Ounces of Sharp or Mixed Cheddar Cheese, Finely Shredded.
  3. 3 Ounces of Bacon Bits or 1/2 Cup of Cooked Bacon, Crumbled.
  4. 1/2 Cup of Slivered Almonds.
  5. 1 1/2 Cups of Mayonnaise.
  6. Butter Crackers, Pretzels or Tortilla Chips For Dipping.
Instructions
  1. In a medium sized bowl, place all of your ingredients in and mix well.
  2. Chill your dip for at least an hour or two, then serve with crackers, chips or pretzels and enjoy!

Skillet Chocolate Peanut Butter S’mores Pizookie

Happy Happy Friday y’all, and boy is it happy.  Not only has it been crazy banana pants this week, but tomorrow is my cheat day, and I’ve been impatiently waiting to stress eat try the new Krispy Kreme Reese’s Peanut Butter Cup doughnut aaaaallll week (insert me salivating right here), but we’ll get to that review another day.  Anyways, speaking of salivating over things I can’t have, let’s talk about a restaurant called BJ’s.  I only even know about this restaurant because I see more Youtubers and Instagramers that I follow go this restaurant right after a fitness show or weeks upon weeks on a diet and they get these pizookies that they serve to celebrate.

Honestly, the term pizookie isn’t really used around these parts, we just call them skillet cookies, but I get that it’s supposed to be a mix between a pizza and a cookie, so yeah.  I digress, so these pizookies that BJ’s have all look absolutely incredible, like holy crap, can I please just try every single flavor and happily go into a sugar coma for the rest of my life?

Well, very unfortunately, the closest freaking BJ’s is no less than a three and a half hour drive from the Atlanta area, and well, I’m just not gonna do that y’all, I drive enough during the week.  You guys, so obsessed am I, that I have even contacted BJ’s requesting that they build one of their restaurants in my area, I have yet to receive a response (shocker), but I had to at least try .  Sooo, I decided, heck, I can bake some stuff, bet I can try to emulate this one particular pizookie that they have with a chocolate cookie, peanut butter, marshmallow fluff and toasted marshmallows on top. 

Since I have never actually tried their stuff I can’t accurately compare it, but holy freaking cow y’all, this turned out absolutely positively incredible!  The soft, gooey chocolate cookie with the layers of peanut butter, fluff and toasted marshmallows, ohh emm geee, just get in my mouth.  Yes, I cheated a bit since I used pre-made cookie dough but it was Trader Joe’s brand, so, #health haha.  This dessert is oh so decadent and crazy easy to make so just go ahead and make your weekend a whole lot better and make this.  Thank you so much for stopping by and I hope you have an absolutely wonderful day and weekend!

Skillet Chocolate Peanut Butter S'mores Pizookie

Delicious layers of chocolate cookie, peanut butter, marshmallow fluff and marshmallows toasted beautifully on top in a cast iron skillet.

Ingredients
  1. 1 (16 Ounce) Bag of Pre-Made Chunky Chocolate Chip Cookie Dough (Trader Joe's Brand).
  2. 4-6 Ounces of Marshmallow Fluff.
  3. 4-6 Tablespoons of Creamy Peanut Butter.
  4. 18-22 Large Marshmallows.
  5. 8" Cast Iron Skillet.
Instructions
  1. Preheat your oven to 350 degrees F.
  2. In your cast iron skillet, evenly place your cookie dough pieces in the bottom of your skillet and bake for about 10 minutes or until right before they're cooked through (you want them a bit gooey).
  3. Take your skillet out of the oven and gently put a peanut butter layer on top of the cookie layer, feel free to use as much or as little peanut butter as you like.
  4. Then put a layer of marshmallow fluff on top of the peanut butter, you'll find it's hard to put an even layer, so I just did spoonfuls.
  5. Then place your marshmallows all over the top and stick back into the oven for 5-8 minutes or until the marshmallows puff up and turn golden brown.
  6. Serve hot with a scoop (or three) of ice cream & chocolate sauce and enjoy!!!

Holly’s Junk Food Review Series: Local Edition: Ice Cream Pt.2

Hello again everybody! and welcome to Part 2 of my local ice cream review. Seriously, there was just so much awesomeness (ATL represent!) I just couldn’t fit it all in in one post.

Today we have a local company called Honeysuckle, and they make the most incredible gelatos I have ever tasted in my entire life, for reals.

Stumbling upon their products was such a happy accident, because I was in Whole Foods specifically to find something (which they didn’t end up having, sigh) but because I love food, I still walked by the freezer section to stare, because basically I am a dessert creepshow.  The name ‘Snacks on a Plane’ on this container made me pick it up, but the ingredients in it made me buy it.  Again, I realized it was a local company so there was no doubt I needed to grab another one too.

Speaking of ‘Snacks on a Plane’…

As you can see, this stuff is a Biscoff Gelato, pretzels, peanuts and caramel.  Seriously, I love allll of these ingredients and I was so hoping that they would come together perfectly and OMG did they ever.  You can really taste the Biscoff flavor in the gelato which is amazing, the peanuts are not small tiny little pieces, they are half and full sized which I loved.  There was the perfect amount of caramel swirled throughout and the only complaint that I had was that the pretzel pieces were slightly soggy, which honestly is to be expected since they’re sitting in gelato, but it didn’t ruin this by any means.  This is the perfect mix of sweet and salty, and the gelato is so deliciously creamy.  This gets a solid 9 out of 10.

Next, we’ve got this Banana with Peanut Butter Caramel gelato…

Have any of you ever been rendered speechless by how delicious something is?  Well, I don’t think I ever have until I tried this gelato.  Y’all, this freaking gelato is freaking phenomenal.  Just imagine liquid banana bread with the richest caramel-esque peanut butter swirled throughout, with small little chunks of real bananas in it too, ddrrooolll.  Now I know that not everyone is keen on bananas with peanut butter, but since that’s one of my favorite combos ever, this is pretty much perfection in my opinion.  Honestly, this stuff is so delicious I can’t even think of anything else to say because now all I want to do is go eat more of this haha.  This obviously gets a 10 out of 10 from me.  Y’all go get you some of this if you can.

Holly’s Junk Food Review Series: Local Edition : Ice Cream Pt 1

Happy Happy Wednesday everybody!!! I am sooo excited to review today’s products y’all, you just don’t even know.  I am all about some gourmet ice cream with unique flavors, and I had kept seeing this cool looking new ice cream at Publix called High Road Craft , offering equally cool flavors, so not too long ago I picked up a couple of pints to try.  Well, after I got home I was scrolling through Instagram, and because my feed is pretty much only animals, food and fitness (they do know me very well), the ice cream I had just bought popped up in my feed, and after going to their page I realized their headquarters are literally down the road from me, OMG.  I was already looking forward to trying these cool new ice creams my next cheat day, and after seeing that they are an Atlanta based company I was extra thrilled.  Anyways, let’s get to it…

First off, we have the Bourbon Burnt Sugar—oh yes, it just sounds incredible already right?

Okay, so I’ll be honest, I was a bit surprised that there were not any little fillings in this ice cream like there normally are with other fancy ice creams, but y’all it is NOT needed here.  Holy freaking crap, I mean, they had me at Bourbon Burnt Sugar, but this is just magic.  It is sooo rich, and sooo creamy, and you can totally taste where the 16% butter fat comes in, droooool.  There is just a hint of the Bourbon, seriously just the most perfectly subtle hint, and you never go ‘omg that tasted like burnt sugar’ but again it’s just this underlying flavor that makes this ice cream sooo freaking decadent.  This ice cream stands on it’s own 100% do not ruin it by putting it on anything, except a spoon that goes directly into your mouth.  I literally had to stop myself from eating every single bite before I could take a picture of it haha.  This ice cream gets a solid billion 10 out of 10.  

Next, we have their Vanilla Fleur de Sel…

I don’t know how they did it, like seriously, I guess since it’s made by chefs, they have some kind of magic joo-joo they do on this ice cream because OMG.  I never in a million years thought that I would ever use the words decadent & luxurious to describe vanilla ice cream, but I am now.  This ice cream too, totally stands alone, do not even think about defiling this gorgeous vanilla ice cream with chocolate syrup, or cookies, or some cruddy store bought caramel, seriously.  It’s soo thick and creamy, and I was fully expecting to get big tastes of Fleur de Sel, but I didn’t, again, just perfect, with the Fleur de Sel really bringing out the richness,  sweetness and vanilla-ness of this decadent ice cream.  Another 10 out of 10 from me for this ice cream, well done High Road, I believe you are capable of bringing world peace with your ice cream 😀

Easy Pineapple Coconut Fluff

Happy Happy Monday everybody!!!  Did everyone have a nice weekend? They’re usually always nice though right, well except when they’re over so quickly.  Anyways, I’m going to confess something…  sometimes I am an absolute terrible food blogger.  Sometimes I make recipes, I photograph recipes, I even share these made recipes at a party, and then sometimes I forget all about them, oops. 

Y’all, I made this Easy Pineapple Coconut Fluff for a Memorial Day Party, y’all! Memorial Day!! That was almost 2 months ago!  I didn’t forget or not post because I didn’t like this, not at all, I absolutely love this dish.  Not only was it thrown together in about 5 minutes, but it’s also no-bake, it’s fruity & fun.  If I were to look for a reason, it probably has something to do with making/shooting/editing 5-7 recipes every weekend, and I guess this particular one just got lost in the mix of all of my Junk Food Reviews and original recipes, sheesh I can be such a goob. 

Since I am already currently being bombarded by all things to do with Fall, I figure I might as well throw out one last tropical, summer type recipe before it’s too late, I mean, it is still hot as Hades around here after all.  Oh, and I used these really fun and yummy marshmallows that were fruit flavored in this recipe, but if you can’t find them or don’t want to use them,  using regular old mini marshmallows, is A-OK.  I really hope everyone has a fantastic Monday and as always, thank you all so much for stopping by!!!

Ingredients
  1. 1 (3.4 Ounce) Vanilla Instant Pudding Mix.
  2. 1 (20 Ounce) Can of Crushed Pineapple (Undrained).
  3. 1 (8 Ounce) Container of Cool Whip, Thawed.
  4. 1 Teaspoon of Coconut Extract.
  5. 2 Cups of Mini Marshmallows (I Used Lemon, Lime, Orange & Strawberry Flavored Marshmallows).
  6. 1 Cup of Sweetened Shredded Coconut.
Instructions
  1. In a large bowl, combine the pudding mix and the entire undrained can of crushed pineapple, stir together until well combined.
  2. Now fold in the Cool Whip, Shredded Coconut & the Coconut Extract until just combined.
  3. Chill covered until ready to serve and enjoy!!!
Notes
  1. If you are unable to find the fruit flavored marshmallows, regular mini marshmallows are totally fine.

Easy Peanut Butter Dip

Happy Happy Friday everybody!!! How are y’all doing? For those of you that have started back to school (or have kids that have started back to school), y’all doing alright?  I know how crazy banana pants for everyone the first couple of weeks back can be so I thought I’d check in on everyone haha.  Today’s post is keeping with the theme of simplicity like it has been all week, because who needs fun foods made complicated, amiright?

I almost don’t even want to admit where I got this recipe, because y’all, this one came straight off the top of the Jif Whips Peanut Butter container.  BTW just so y’all know, the Jif Whips Peanut Butter is the freaking bee’s knees, and no I’m not being paid or sponsored to say that, but I love you guys and want you to know how good it is. 

Not only is the texture nice and whipped and fluffy, but it’s also slightly lower in fat, calories and carbs than regular peanut butter.  I put 1/2 a serving of it in my oatmeal almost every morning, and it’s pure magic, like I literally take as long as possible to eat it because it’s so delicious.  Anyways, back to this delicious dessert dip.  The top of the peanut butter container had this recipe on it, but they called it an orange peanut butter dip because their original recipe had orange marmalade in it, and honestly I wasn’t really feeling that so I substituted raspberry jelly instead. 

Let me tell you guys, if you love peanut butter and jelly sandwiches, you’re gonna freaking love this dip.  It tastes like a more decadent (thank you Cool Whip) peanut butter and jelly sandwich, that you then get to dip pretzels (or cookies or fruit) in, drooool.  I also may have doubled the amount of Cool Whip, because, why not?  If you’re looking for something super easy and fun to make tonight or this weekend, I definitely recommend this glorious dip.  Have a wonderful weekend and thank you so much for stopping by!

  1. 1 (15 Ounce) Container of Jif Whips Peanut Butter.
  2. 1 (12 Ounce) Jar of Seedless Raspberry Jam.
  3. 2 Cups of Thawed Whipped Topping.
  4. Mini Salted Pretzels for Dipping (Optional).
  5. Graham Cracker or Cookies for Dipping (Optional).
Instructions
  1. In a large bowl, place the peanut butter and jelly and stir together.
  2. Now fold in your whipped topping until just blended.
  3. Serve with pretzels, cookies or even fresh fruit (whatever you like) and enjoy!!!
Notes
  1. Feel free to substitute the raspberry jam for one that you prefer, or even the orange marmalade that the original recipe called for.

Holly’s Awesome Product Review : Fruit Bouquet

Happy Happy Wednesday everybody!!!  About a week ago, I was contacted by 1-800 Flowers asking if I would like to be sent one of their new fruit bouquets.  Umm,  yes please!!  I freaking love fruit bouquets.  Not only are they beautiful to look at, but hello, chocolate & sprinkle covered fruit, as well as star shaped fruit beautifully arranged?

A big heck yes!  Honestly, the offer couldn’t have come at a better time.  When I say that I have had & will have at least 2 or more birthdays a week among friends and family in the month of July and August I’m soo not exaggerating.  I have been to more parties, BBQ’s & shing digs in the last month than all year combined. 

I’m not at all complaining, but sometimes ideas for what to bring either as a hostess gift or an actual gift start to run dry.  I’m always happy to make something to bring, but with the sheer number of events I’ve had to go to, sometimes (a lot of the time) there is just not enough time to even think about preparing something, and y’all, it’s hot here, I just don’t want to turn that oven on right now haha. 

I cannot believe I never thought of bringing something so delicious, fresh and beautiful as a fruit bouquet.  I mean, come on, they have some of the cutest little smiley face pineapples, or chocolate covered strawberries that look like baseballs, seriously I cannot resist.

The chocolate & birthday sprinkle covered pineapples that came in my bouquet were so darn delicious, and obviously so cool to look at.  I’m thrilled I have all of my gift/hostess bases covered for the remainder of this very hot summer.  I cannot recommend enough heading over to their site (bonus! no driving anywhere to pick anything up) and ordering one of these bad boys today.  I hope everyone is having a wonderful day and thank you so much stopping by!!!

Easy Crockpot Meatballs

Happy Happy Monday everybody!!! and a big welcome back to school for everyone around me.  As I said last week, in my humble little opinion I think it is way too stinking early for everyone to be going back already, but what are you gonna do?  Anyways, since everyone is getting back into the full school/work swing, I assume that a super darn easy recipe is in order for everyone because time is a very important commodity. 

Not too long ago, I was at a birthday party and the lovely hostess was serving these meatballs.  Now, I’m not normally a giant meatball fan, I’m not saying I dislike them or anything, they’re just not a normal go-to cheat day delight, because #doughnuts and #pizza.  Well, these meatballs are a different story, and I’m sure it has something to do with the fact that these have that sweet & salty thing going on.  When I started raving to the hostess about how much I just loooved these meatballs, she started laughing and said that these were hands down one of the simplest recipes ever and would be happy to give it to me. 

Apparently, this is one of those dishes that has been bouncing around for forever and somehow I have managed to miss it.  Well, I must say that I’m super stoked that this recipe has finally found it’s way to me, because these are so freaking good y’all.  The sheer lack of ingredients had me checking to make sure I hadn’t missed anything, but these have just 3 darn ingredients and that is it, doesn’t get much better than that y’all.  Anyways, I hope y’all get to enjoy these bad boys soon and good luck to everyone headed back to school this week.  Have a wonderful day and thank you so much for stopping by!!!

Ingredients
  1. 1 (32 Ounce) Bag of Frozen Fully Cooked Meatballs.
  2. 1 (18 Ounce) Jar of Smuckers Grape Jelly.
  3. 1 (18 Ounce) of BBQ Sauce-I Used Sweet Baby Ray's.
  4. 1-2 Quart Crockpot.
Instructions
  1. In your crockpot, place your grape jelly and BBQ sauce and mix together until combined.
  2. Then place your frozen meatballs into your crockpot and make sure to stir until they are all coated with the jelly/BBQ sauce mixture.
  3. Place your crockpot lid on and cook your meatballs on high for 2-3 hours.
  4. Serve hot and enjoy!!!

Key Lime Meringue Pie

Happy Happy Friday y’all!!! I always like to reiterate that I am the complete and total opposite of a trained chef, pastry chef etc., and today is one of those recipes that will again prove this haha.  I literally made this Key Lime Meringue Pie over a month ago, and I’ve been debating since that time if I should even post it because it just didn’t turn out exactly how I had hoped.  I absolutely love key lime pie and though the pie part of this recipe tasted like a fluffy,  mousse-like version of regular key lime pie, it wasn’t fantastic. 

As you will see in one of my pictures below, it literally deflated under the weight of the meringue, womp womp.  Speaking of meringue, that is a totally different story.  The recipe for this meringue is different than any I’ve seen and it turned out 100% perfect.  Not only was it delicious & beautiful, but it was stinking easy to make, like, if I can make this meringue, anyone can.  In the future I will certainly be placing this meringue on top of my The Best Key Lime Pie,  just not this particular one.  FYI, this key lime pie has ice cream in it, which I thought was a cool ingredient, but I think that’s why the texture was off and it immediately collapsed when I cut into it. 

I also thought I would rig the crust with Biscoff cookies (some of my favs) to change it up a bit, but I think I messed up the ratio of butter to cookie/cracker and it was a bit soggier than I had hoped-again, I am not a professional haha.  Anyways, I spent quite a bit of time making this concoction so I figured I might as well post it, and the meringue recipe alone is worth it.  Anyways, I hope everyone has a wonderful weekend and good luck to all of the teachers, students and parents that are starting back Monday-which, in my humble little opinion is wwaaayy too early to be going back to school, but what the heck do I know?  Thank you so much for stopping by and have a wonderful day!

Graham crackers/Biscoff Cookies into your food processor…

place into a bowl with the melted butter and brown sugar…

mixed together (and blurry)…

into your pie pan (oops, that is a wet pie crust)…

egg yolks into my bowl…

zest…

whisk for a bit, then mix in the sweetened condensed milk & key lime juice…

then the ice cream…

mix, mix, mix…

then into your pie crust…

bake, bake, bake…

now for the meringue, egg whites, 1/4 of the sugar and corn syrup…

while whisking, slowly add in the rest of the sugar…

whisk, whisk, whisk until stiff peaks form…

onto your cooled pie…

bake for a bit more to brown the meringue…

and enjoy!!!

Delicious light and fluffy key lime pie with the easiest meringue you'll ever make.

THE CRUST
  1. 5 Graham Crackers.
  2. 7 Biscoff Cookies.
  3. 7 Tablespoons of Butter, Melted.
  4. 1/4 Cup of Brown Sugar.
  5. 9" Pie Pan.
THE KEY LIME FILLING
  1. 6 Eggs, Separated.
  2. Zest of 2 Key Limes.
  3. 1 (14 Ounce) Can of Sweetened Condensed Milk.
  4. 1/2 Pint of Vanilla Ice Cream.
  5. 1/2 Cup of Key Lime Juice.
THE MERINGUE
  1. 6 Egg Whites.
  2. 1 Tablespoon of Light Corn Syrup.
  3. 1 Cup of Granulated Sugar.
FOR THE CRUST
  1. Preheat your oven to 350 degrees F.
  2. In a food processor (or a plastic bag and you can crush with a rolling pin), place your graham crackers and Biscoff cookies and process until fine crumbs.
  3. Place your cracker/cookies into a small bowl with the melted butter and brown sugar, and mix until the texture of wet sand.
  4. Pour your cookie/butter/sugar mixture into your pie pan and with your hands press firmly into your pan until the bottom and sides are coated evenly.
  5. Place the pie pan into the freezer to firm up.
FOR THE KEY LIME FILLING
  1. Separate the 6 eggs, making sure to save the egg whites later for the meringue.
  2. Place the eggs yolks into your stand mixer with whisk attachment or bowl with hand mixer and zest your key limes into the egg yolk and mix together for about 2 minutes or until kind of frothy.
  3. Now add the sweetened condensed milk and continue to mix until smooth and is a pale yellow color.
  4. Now add the ice cream and key lime juice and continue to mix for a few more minutes or until smooth and a bit airy.
  5. Pour the mixture into your crust and bake for 18-20 minutes or until the edges of the crust begin to brown and the middle doesn't jiggle.
  6. Take out and make sure to let cool completely (I suggest placing in the fridge) before adding the meringue or it will melt.
FOR THE MERINGUE
  1. With a handheld mixer or stand mixer with whisk attachment, add your saved egg whites with the corn syrup and about 1/4 of the sugar and begin to whisk vigorously.
  2. Add the rest of the sugar in small increments until all is incorporated and continue to whisk until the mixture thickens, stiff peaks form, and your meringue has a glossy look to it.
  3. Top your cooled pie with the meringue and spread evenly all over the pie until completely covered.
  4. Place your pie back into the oven for about 8 more minutes (just watch carefully) to brown the top of the meringue.
  5. Allow to cool completely and enjoy!!!
Notes
  1. If you can't find key limes to zest you can substitute with 1 regular lime.
