Blackberry Wine Ice Cream

Happy Happy Friday y’all! I hope you guys don’t mind that I’m once again bringing you another homemade ice cream, but let’s be real, until Fall shows it’s beautiful head around here the ice cream will continue.  I’ve seen a few red wine ice creams running around on the interwebs, and this might sound like blasphemy to some of y’all, but I am not a fan of red wine #sorrynotsorry. 

blackberry-wine-ice-cream| HollysCheatDay.comI seriously have tried to like it, but it makes me feel like a pile of garbage every single time I drink it, and honestly I don’t think it tastes all that fabulous either #sorryagainnotsorryagain.  I did though love the idea of an alcoholic ice cream, but I wanted something that I thought would taste super amazing as well.  Hello to blackberry wine, which for some reason I can totally drink without it making me feel awful, and it tastes reeeaally good, in my opinion the way I had envisioned wine would taste when I was kid haha.

Blackberry Wine Ice Cream

Delicious homemade ice cream filled with Blackberry Wine.

Ingredients
  1. 1 Cup of Whole Milk.
  2. 2 Cups of Heavy Whipping Cream.
  3. 1 (14 Ounce) Can of Sweetened Condensed Milk.
  4. 3/4 Cup of Blackberry Wine, Chilled.
  5. 1/8 Teaspoon of Salt.
  6. 10-12 Fresh Blackberries For Garnish (Optional).
  7. Purple Food Coloring (Optional).
Instructions
  1. In a large bowl, place all of your ingredients into it and mix until well combined
  2. Add food coloring at this time if you like.
  3. Now pour your mixture into your ice cream maker and prepare according to directions.
  4. Once the ice cream has fluffed up some, place into a separate container, cover and freeze for at least 4 hours.
  5. Serve, garnish with some blackberries and enjoy!
Notes
  1. I did place some blackberries into the mixture before freezing, but I don't recommend that, they become way too hard.

Not Your Mama’s Lemonade

Happy Happy Cocktail Friday y’all!!!  It’s amazing how the summer heat continues to singe us all alive her in the South, but luckily there are copious amounts of alcohol and air conditioning delicious cold drinks to give a helping hand in the fight against the heat. 

not-your-mamas-lemonade| HollysCheatDay.comI figured lemonade and ice tea are the quintessential Southern cold drinks in the summertime and it was about dang time to make one of them a little more fun.  This recipe is so simple y’all, I feel silly even calling it that, and I didn’t take any step by step photos because again, sooo simple.  I used a pre-made lemonade (Publix brand) and stuck it in the freezer for a couple of hours, checking on it every so often to make sure it didn’t freeze too much and explode haha.

Ingredients
  1. 2-4 Cups of Pre-Made Lemonade, Semi-Frozen.
  2. 2-4 Ounces of Lemon Liqueur.
  3. Zest of 1 Lemon (Optional).
  4. 1/2 Cup of Sugar (Optional).
Instructions
  1. Place your container of pre-made lemonade in your freezer for a couple of hours, or until it just starts to get icy.
  2. For a fancy rim around the edges or your glasses, zest one lemon onto your plate, then place your sugar on top of that, then mix it together.
  3. Place honey around the edges of your glasses and dip into your lemon zest/sugar mix and set aside.
  4. Fill your glasses almost completely full with your lemonade and then put 1-2 ounces of your lemon liqueur, mix, and enjoy!

White Chocolate Raspberry Cocktail

Happy Happy Ding Dong Friday!!!  I don’t know what the ding dong part was except maybe I’m trying to emphasize again how excited I am the weekend is almost here (I’ll be the first to admit I would rather be baking than at work, duh haha). 

the-white-chocolate-raspberry| HollysCheatDay.comAlso super excited to share this amazing cocktail with y’all today.  It doesn’t get much easier than this cocktail you guys.  This cocktail totally looks and tastes fancy since the ingredients, though there are only two, are so flavorful.  The liqueur I used for this is the Godiva White Chocolate, droooll,  which is oh so decadent but not too strong that it cannot be drunk by itself. 

the-white-chocolate-raspberry| HollysCheatDay.comI then threw in some fresh raspberries that give it that little extra zing and y’all this is straight up dessert, perfect for brunch and brunch is always a good idea haha.  Oh, and I also think this drink is kinda pretty, don’t you? White Chocolate Raspberry Cocktail

Ingredients
  1. 4-8 Ounces of Godiva White Chocolate Liqueur.
  2. 10-14 Raspberries.
  3. Ice.
Instructions
  1. Place 4-6 raspberries into the bottom of each glass.
  2. Muddle your fruit then fill your glass with ice.
  3. Pour your white chocolate liqueur into each of your glasses until full then enjoy!
Notes
  1. To make sure your drink doesn't get watered down, consider taking the ice out once it's been chilled.

Frozen Hot Chocolate

Happy Happy Friday y’all!!  Holy heck you guys, it has been ding dang hot around here for weeks, and I don’t mean you walk outside and think ‘goodness it’s warm’ it’s more like ‘omg I can’t breathe, my lungs are being burned, I need a bucket of ice poured on me asap’ kind of hot. 

frozen-hot-chocolate| HollysCheatDay.comI know I’m from the South and all and I should be used to it, but let’s be real, there’s no getting used to the seventh realm of hell general ambience of an oven.  Anyways, if you are like me and are already over sweating yourself through by the time you walk across a parking lot, I have brought you a super delicious icy drink that you literally throw the ingredients into a blender and boom, you’re done.

Ingredients
  1. 3 Cups of Ice.
  2. 2 Cups of Milk.
  3. 4 Packets of Hot Chocolate (I Used Swiss Miss Sweetened).
  4. 4-5 Tablespoons of Chocolate Syrup.
  5. Whipped Cream For Topping (Optional).
  6. Mini Marshmallows For Garnish (Optional).
Instructions
  1. Place all ingredients into your blender and blend until smooth.
  2. Serve immediately topped with whipped cream, a drizzle of chocolate syrup, marshmallows and enjoy!
Notes
  1. Feel free to make this more 'adult' with some chocolate liqueur or Bailey's thrown in.

Fourth of July Sparkler

Happy Happy Cocktail Friday y’all!  It’s never too early to get your cocktail ideas in order for the 4th of July,  in my humble opinion.  I originally saw a sangria version of this pop up several times in my feed and I absolutely knew I needed to make this. 

fourth-of-july-sparkler-clssd| HollysCheatDay.comNow, I’m not a giant fan of white wine because it tends to give me an almost immediate crashing headache, but I figured a wonderful Rosé Champagne would be a wonderful substitute.  I absolutely loooved this cocktail y’all, it had just enough sweetness but plenty of kick (thank you Triple Sec) not to mention thrown together in about 5 minutes.

Ingredients
  1. 2 Cups Fresh Strawberries, Halved.
  2. 2 Cups of Fresh Blueberries.
  3. 1/2 Cup of Lemon Juice.
  4. 1 Cup of Triple Sec.
  5. 1 Bottle of Sweet Rosé Champagne.
  6. Club Soda, Chilled.
  7. 1 Pitcher.
Instructions
  1. Wash your strawberries and blueberries.
  2. Now cut the stems off of your strawberries and then slice in half, place your fruit in your pitcher.
  3. Pour your lemon juice, Triple Sec & your champagne into your pitcher.
  4. Now fill the rest with club soda.
  5. Serve and enjoy!

The Paloma

Happy Happy (Cocktail) Friday and early Happy Father’s Day!!!  As always, so happy it’s Friday y’all, even though I work on Friday sometimes I feel like Fridays are even better than Saturdays… I know, I know, hear me out, haha, I feel like Friday you get to look forward to Saturday,

the-paloma| HollysCheatDay.comand Saturdays you know the next day is Sunday which is kind of tainted knowing your weekend is almost over—my brain is weird but makes sense to me haha.  On to the fun y’all, this cocktail.  This lovely little libation is made with fresh grapefruit juice, tequila (hey-oh!) and club soda (love me some bubbles).

Light and tart cocktail made with fresh grapefruit juice.

Ingredients
  1. 1 Ounce of Tequila.
  2. 1/4 Cup of Club Soda.
  3. 1/4 Cup of Fresh Grapefruit Juice.
  4. 1 Tablespoon of Fresh Lime Juice.
  5. 2-3 Tablespoons of Granulated Sugar.
  6. Decorative Sugar for Glass Rim (Optional).
Instructions
  1. If you want a decorative sugar rim around your glass, using your finger rub honey around the edge and dip into the sugar until fully covered.
  2. Cut your grapefruit in half and squeeze all of the juice out one 1/2 of the grapefruit into a bowl.
  3. Now place the grapefruit juice, lime juice, and sugar into a glass and mix until the sugar is dissolved.
  4. Now add your tequila, club soda, and ice, mix and serve!

Skinny Cucumber Cocktail

Happy Cocktail Friday y’all!!  I’m going to be straight up honest with y’all right now (not that I’m ever not, but whatevs) I have pretty much felt like garbage all week.  I mentioned Monday that I had been feeling a bit under the weather this past weekend, but whatever junk this is that is making me feel like I’m on the verge of a cold, but won’t actually become a full blown cold is such shenanigans. 

skinny-cucumber-cocktail| HollysCheatDay.comOh, and a cold in the heat of summer… garbage again!  Sigh, I won’t continue to bore y’all with my complaining and feeling sorry for myself so let’s get to this cocktail.  Since this has Gin  in it, obviously I’m a fan, but this is not a drink for those who like them sweet.  This is most definitely fresh, light and tasty, but if you like your Piña Coladas this isn’t for you.

Skinny Cucumber Cocktail

Ingredients
  1. 1 1/2 Ounces of Gin.
  2. 1 Cucumber (4-6 Slices).
  3. 1 Lime, Sliced.
  4. 4-6 Ounces of Diet Tonic Water.
  5. 4-6 Mint Leaves.
  6. 1 Tablespoon of Sugar or Sugar Substitute (Optional).
  7. 1 Martini Shaker (Optional).
Instructions
  1. In your shaker or glass, place your Gin, a lime slice, mint leaves, cucumber slices and sugar (if you're using) and shake or muddle together.
  2. Pour this mixture into your glass over ice, removing the large pieces of mint and cucumber slices (you can leave in if you like), then fill the rest of the glass with your tonic water.
  3. Garnish with a lime if you like and enjoy!
Notes
  1. If using diet tonic water and no sugar (or a calorie free sugar substitute) the total calories for this drink was 110.
  2. If you want to use granulated sugar, the total calories goes to 162.

Frozen Coconut Lemonade

Happy Cocktail Friday and hello long holiday/birthday weekend to me!!!!  Friend (the long weekend that is), you couldn’t have come any sooner.  Y’all, at the expense of sounding like a complaining Cathy, it’s been a week. 

frozen-coconut-lemonade| HollysCheatDay.comI won’t go into the nitty gritty of it, but basically I’ve been so stressed and sleep deprived I burst a blood vessel in my eye (umm, ewwww) which I literally have never done in my entire life, what the flying heck?!  Soo yes, birthday celebrations and many, many libations will be in abundance this weekend for me woohoo!  Already day dreaming about cake & cocktails aaah 🙂 

frozen-coconut-lemonade| HollysCheatDay.comI made this frozen coconut lemonade my last cheat day, and y’all this is such an amazing cocktail.  It’s delicious, not too sweet, and so nice and tart and super duper cold, which is perfect with the ever increasing temps outside.  I will definitely be making this again this weekend because yum! Ingredients
  1. 2 Cups of Ice.
  2. 6 Ounces Frozen Lemonade Concentrate (I Used Minute Maid from the Freezer Section).
  3. 1.5-3 Ounces of Coconut Rum ( I Used Malibu).
  4. Limes, For Garnish (Optional).
  5. Blender.
Instructions
  1. I put every single ingredient into the blender (except limes), blend until smooth, and the ice is almost completely crushed, serve with a lime wedge and enjoy!!
Notes
  1. This makes about 2, 8 ounce cups worth.
  2. This would be easy to double or triple for guests, and feel free to add more lemonade concentrate if you like it more tart, and/or more rum if you like it stronger.

Latin Lover Cocktail

Happy Cocktail Friday everybody!  Oh my goodness y’all this ddrrriiinnkk!  I don’t even know if it’s fair to call this a cocktail because it tastes like the best smoothie you’ve ever, ever had. 

latin-lover-cocktail| HollysCheatDay.comObviously the kind of liquor put in this is super yummy, but this doesn’t at all taste like it has alcohol in it, like at all.  This is thick, creamy, fruity and deliciously cold.  This cocktail will definitely be on my summer poolside list of drinks to beat the heat with, but since this doesn’t at all taste alcoholic just use caution and don’t suck this down due to its yumminess.
