Happy Happy Cocktail Friday everybody!!! Deep down, I think that if I continue to post chilly weather recipes it will make that wonderful weather appear here hehe. Today is obviously another one of those recipes and a happy accident to boot. I really am not a big drinker at all, though (obviously) I am one to partake in adult beverages from time to time, but definitely sparingly…Now, if you were to walk into my pantry, you would totally think I had a problem due to the sheer amount of bottles of liquors and liqueurs in there.
My stockpile of alcohol is totally due to this little blog and always wanting to share new cocktail recipes that need whatever ingredients in it. What I’m saying is, is that I have 4 billion too many bottles of barely used liquor hanging around. That’s where this recipe comes in, I decided this past cheat day that I needed to actually use the many varieties that I already had, and the first one to pop out at me was the Marshmallow Vodka, because yum.
I had some left over hot chocolate packs from my Frozen Hot Chocolate, and I thought maybe these might be a nice combo. This cocktail turned out so decadent y’all, the thick hot chocolate with that little kick of the marshmallow vodka was so perfect. I very much enjoyed sipping on this awesome drink, while sitting in the AC mind you, but maybe it’s cool enough where you’re at to have a cup or two. just some chocolate shavings for the cup edge…
milk & heavy cream into your saucepan…
once warm, put in your hot chocolate packets…
all stirred in…
pour into your cup, add the vodka and enjoy!!! 
- 2 Packs (0.73 Ounce) of Swiss Miss Hot Chocolate.
- 8 Ounces of Heavy Whipping Cream.
- 4 Ounces of Milk.
- 3 Ounces of Marshmallow Vodka.
- Marshmallows for Garnish (Optional).
- Whipped Cream for Garnish (Optional).
- 1 Milk Chocolate Bar for Garnish (Optional).
- In a small saucepan, place your heavy cream and milk in a pan and place on medium/low heat and warm it, removing from the heat right before it starts boil.
- Pour your hot chocolate packs into your pan and stir in until smooth and well mixed.
- Serve your hot chocolate in whatever mug you like best, pour your marshmallow vodka in, and gently stirring.
- Garnish with marshmallows and whipped cream and enjoy!
- For the cup rim, I used a vegetable peeler and carefully placed the chocolate shavings onto a plate, put chocolate syrup around the edge of the cup and dipped it into the chocolate shavings until covered.


Fortunately, I have stumbled across several pumpkin pie ice cream recipes recently, which hello! is perfect. It’s too hot still to enjoy all of the baked delicious pumpkin goodies (not that that will stop me or anything) but I’m soo ready for all things Fall to be in
To be honest, I was mildly skeptical at how this would turn out, for one, because of the scarcity of ingredients and second, the ease at which they go together, but I wasn’t at all prepared at how amazing this would turn out.
This ice cream tastes just like frozen pumpkin pie, it’s incredible! Bonus, you don’t have to use any sort of ice cream machine either! I’ve had this Dutch Baby recipe hanging out in my to do list for forever. As soon as I took one bite of this, I asked myself why in the world I didn’t make it sooner. First, let’s start with how dang easy this is to make, I mean seriously, ingredients into the blender, then into your skillet and that’s it.
Second, this bakes up very quickly and bonus, looks super cool doing it and last but certainly not least this is absolutely delicious! Just imagine a mix of a doughnut, a pancake and french toast all in one dessert and you have the Dutch Baby. I sprinkled this guy with powdered sugar and some fresh fruit and berries and holy cow it’s amazing.
My favorite part about this is that some parts of it are just slightly crunchy but still soft and the other part is super gooey and wonderful. I would like to mention as a side note, that when you take your skillet out of the oven, be very careful about pouring your butter in, it sputtered hot butter everywhere haha, so just be careful. Speaking of favorites, this time of year (ignoring the fact it’s still hot as blue blazes outside) has the best baked items, because I will swoon over just about anything with cinnamon, pumpkin or apples in it, mmmm. So let’s get to today’s recipe, this incredible Pumpkin Maple Butter. Fall is epitomized in this beyond easy to make ‘butter’.
I think calling this a spread would be better suited, but butter just sounds better am I right? The fact that I threw all the ingredients into my saucepan, cooked it up for a bit and voila delicious butter is so awesome.
Y’all I ate about a pound of this stuff, I mean obviously I put it on cinnamon swirl toast first, I’m not a savage, but hot dang this stuff is sooo good. Speaking of, I genuinely can’t believe it’s almost September, for reals y’all, how did that happen? Didn’t we just start 2016? Sheesh, time is continually going by faster and faster but if we can get to Fall & the wonderful Fall temperatures faster then I’m soo okay with that haha. Anyways, I am way excited to share these cookies with you guys today, because they were totally a happy accident.
The other day I was eating my typical oatmeal with peanut butter with breakfast but I was feeling extra hungry so I decided to throw in half a banana because yum haha. Y’all that oatmeal was soo good, I had to make myself not make another bowl, but it did get me thinking about what an incredible dessert it would make. I figured cookies would be the best bet and dang y’all these are so delicious. They taste like banana bread with a hint of peanut butter, so yummy you guys. mixed up, then add granulated sugar & brown sugar…
mix again, then add, eggs, oats, cinnamon, peanut butter, salt & baking soda…
mix again, and add some mini chocolate chips it you like…
mix again (not pretty dough, but it’s sooo delicious)…
after chilling it for a while, place onto your baking sheet…
bake, bake, bake…
and enjoy!!! 

Technically, strawberries are not in season right now, and they’re looking & tasting a little less than awesome around this time of year, but I had some and figured why not throw them into my drink for some beautiful color and flavor?
Oh and in my opinion mint also goes so nicely with strawberries so I threw a little bit of that in too. This drink, like most G & T’s isn’t overly sweet (which I actually prefer in cocktails) but has a slight hint of strawberry and a slight hint of mint. To me, what is so fun about quiche is that you can throw in any number or mix and match of ingredients, and it’s completely okay. If you love your veggies and cheese, throw that in, if you like your stuff a little more unique (like myself) then throw in whatever sounds best to you.
I recently had some goat cheese stuffed figs (a seasonal favorite) and they were absolutely fabulous, and it got me thinking about throwing those exact items into a quiche, because why not right?
I then thought the flavor might be amped up even more if some cooked turkey bacon and onions went in too, and y’all the results were absolutely fantastic. The tanginess of the goat cheese, the saltiness of the turkey bacon and then the subtle sweetness of the fig toppers is perfection. I honestly have no idea how parents do it, I have no kids (except a giant fur baby) and I feel spent, and I know some of y’all have the same work load/commute/life shenanigans AND have kids, so props to y’all, this drink is for you. I would like to emphasize that I do not, nor have I ever believed alcohol to be the fixer of problems, but dang, sometimes the day/week/month/weird co-worker just calls for it 🙂
The Boozy Georgia Peach isn’t exactly a Southern classic since I literally threw it together my last cheat day, but it definitely should be, because holy moly this is delicious!! Just imagine an incredible fresh peach milkshake with that wonderful extra oomph from the Brandy and Vodka, and voila the making of an amazing dessert cocktail. Putting coffee or espresso with ice cream has a name, Affogato which in Italian actually means ‘drowned’, yikes, right? But don’t let the meaning freak you out, because drowning your Gelato in coffee or espresso is such a delicious idea, it’s not to be missed.
Y’all, I even took the extra easy way out and used my Keurig because I didn’t feel like brewing a whole pot haha. I love the dichotomy of hot mixed with cold, but honestly I think the pre-made iced coffee would be as equally as delicious in this too. Honestly most low carb, high protein desserts have a really bad habit of tasting like what you would expect, okay, but lacking, you know? I can honestly say that this Snickerdoodle Cheesecake was not even remotely disappointing…does it taste like a freshly baked New York style cheesecake? no, but it definitely doesn’t taste like it’s low carb and high protein.
This cheesecake turned out to be perfectly satisfying and just exactly what I needed
I definitely think you should make this if you’re having a major hankering for dessert, but are not exactly allowed to at the moment.
