How To Series: Apple Pie Filling

Happy Happy Thursday everybody!!! I am currently at Walt Disney World, yes, again for the 2nd time in 2 weeks , but if you’re a fellow WDW fan you totally understand, I mean, I had to experience it this year decorated with both Halloween and Christmas decorations right?  Anyways, I thought I might do it old school (you know, several months) and have a How To Series post which I haven’t done in a hot second.

Homemade-Apple-Pie-Filling | HollysCheatDay.comHow To Posts are some of my favorite to write, probably because they’re some of my favorite to read on other food blogger sites haha.  I figure with as many apple pie-esque recipes that I either make or my fellow baker friends make this time of year, it might be nice to know how to make an apple pie filling that’s a little bit more fresh and a little less expensive than store bought.

How To Series: Apple Pie Filling

An easy and delicious homemade apple pie filling.

Ingredients
  1. 4-6 Medium Sized Apples, Peeled and Chopped.
  2. 1 Tablespoon of Lemon Juice.
  3. 1/2 Cup of Brown Sugar.
  4. 1/2 Cup of Granulated Sugar.
  5. 1/4 Cup of Cornstarch.
  6. 2 Teaspoons of Cinnamon.
  7. Dash of Nutmeg.
  8. 1Teaspoon of Salt.
  9. 2 Cups of Water.
Instructions
  1. Peel and cut up all of your apples and place into a bowl, then toss them in the lemon juice, set aside.
  2. In a medium/large sized saucepan, place the brown sugar, granulated sugar, cornstarch, cinnamon, nutmeg and salt into it.
  3. Turn the heat on medium/high and pour the water into the saucepan, mix all together and bring the mixture to a boil.
  4. While stirring constantly, boil the mixture for 2 minutes, lower the heat just a little bit and add the apples.
  5. With the apples in the mixture bring to a boil again, then reduce the heat to allow the mixture to simmer for about 10-12 minutes (it will continue to thicken as it cools).
  6. Let cool completely and enjoy!!!
Notes
  1. Feel free to add more or less of any of the spices to suit your taste.

Copycat Carrabbas Dipping Oil

Happy Happy Tuesday everybody!!!  Sometimes it’s the simplest things that bring us the greatest pleasure, am I right?  I feel like we all have those restaurants that have pretty decent food, BUT their dinner rolls, or freshly baked bread they bring out, are the real reasons that we go to these restaurants. 

Copycat-Carrabbas-Dipping-Oil | HollysCheatDay.comObviously I absolutely looove all the delicious Italian food at Carrabbas, I don’t want y’all to think I don’t, but the oil and bread that they bring out to you the moment you sit down is just the cherry on top of that place.  Like I said, it’s the simple stuff, because it doesn’t get much easier than an olive oil with extra herbs and Parmesan thrown in, but y’all it’s just so aromatic and fresh. 

Copycat-Carrabbas-Dipping-Oil | HollysCheatDay.comHonestly, every time I’ve been there I usually request to have the bread and oil to continue to come throughout the meal because it’s just that delicious.  I’m not trying to pat myself on the back or anything, but I think I got the taste pretty darn close to the Carrabbas version in this recipe.  Obviously please feel free to add or subtract whatever herbs you prefer in this, and definitely buy a great quality Italian or French bread to dip into this wonderfully flavorful oil.  I hope you’re having a wonderful day and thank you so much for stopping by!!!

Ingredients
  1. 2 Garlic Cloves, Peeled and Finely Minced.
  2. 3/4 Cup of Extra Virgin Olive Oil.
  3. 2 Tablespoons of Balsamic Vinegar.
  4. 1/4 Cup of Parmesan Cheese (Or More To Taste), Shredded.
  5. Pink Himalayan Salt or Sea Salt, To Taste.
  6. Dried Rosemary, To Taste.
  7. Dash of Chili Powder (Optional).
  8. Dash of Dried Oregano.
Instructions
  1. Peel and finely mince your garlic cloves, set aside.
  2. In a small bowl, place the minced garlic, the oil, oregano, parmesan, rosemary, balsamic vinegar and chili powder.
  3. Mix all ingredients together, serve and enjoy!
Notes
  1. I liberally salted this dipping oil to get the taste I was going for.

Apple Cinnamon Bread

Happy Happy Thursday everybody!!!  Y’all I can’t even begin to believe we are already into November and Halloween is officially over WTH?  Seriously, what happened to the year? I mean, November of 2016 is kind of blowing my mind, time really needs to slow down because it is just speeding right by me. 

Apple-Cinnamon-Bread | HollysCheatDay.comThe fact that Thanksgiving is now just a few weeks away got me thinking about some new easy desserts that might go well with your holiday meal.  I’ve had this particular Apple Cinnamon Bread hanging around in my ‘to make’ file for months now, but honestly it’s just been too hot this summer to even consider making something like this. Now though, I think it’s just about that perfect time of year to whip out some fresh apples and bake them up in this amazing bread, and I do mean amazing.

Apple-Cinnamon-Bread | HollysCheatDay.com  As far as dessert bread recipes go, this one is pretty easy, just layer up your ingredients, bake for a little bit and dunzo!  This is such an amazingly moist bread with layers of cinnamon, brown sugar and fresh apples baked up beautifully inside, this may not be the prettiest dessert ever, but it is certainly a tasty one.  I hope you have a wonderful day and thank you so much for stopping by!

THE CINNAMON SUGAR LAYER
  1. 1 Tablespoon of Cinnamon.
  2. 1/2 Cup of Brown Sugar, Packed.
THE APPLE CAKE
  1. 2 Medium Apples, Peeled & Chopped.
  2. 2/3 Cup of Granulated Sugar.
  3. 1 Stick (1/2 Cup) of Unsalted Butter, Softened.
  4. 2 Eggs.
  5. 1 Tablespoon of Vanilla Extract.
  6. 1 1/2 Cups of All-Purpose Flour.
  7. 1 1/2 Teaspoons of Baking Powder.
  8. 1/2 Cup of Whole Milk or 1-2% Milk.
  9. 1 Loaf Pan.
FOR THE CINNAMON SUGAR LAYER
  1. Place your cinnamon and brown sugar into a small bowl and mix up, set aside.
FOR THE APPLE CAKE
  1. Preheat your oven to 350 degrees F.
  2. Peel and chop up your apples and set aside.
  3. Liberally spray your loaf pan with baking non stick spray and set aside.
  4. With a handheld or stand mixer with paddle attachment, place the stick of butter into your bowl and whip until smooth.
  5. Now add granulated sugar to the butter and mix until light and fluffy.
  6. Now add your eggs and vanilla extract and mix until smooth.
  7. Now add in your milk, flour and baking powder and mix until just combined.
  8. Pour about 1/2 of your batter into your pan, then place an even layer of apples on top of the batter slightly pressing them in.
  9. Now sprinkle about half of the cinnamon/sugar mixture on top of the apples.
  10. Now pour the remainder of the batter on top of the cinnamon/sugar layer, then the apples, then the rest of the cinnamon/sugar layer.
  11. Bake for 45-60 minutes (I took mine out at 45), let cool and enjoy!!

Crockpot Queso Blanco

Happy Happy Tuesday everybody!!!  I had an absolutely fan-freaking-tastic weekend celebrating Halloween at Universal Studios and Walt Disney World, but holy cow am I exhausted. 

Crockpot-Queso-Blanco | HollysCheatDay.comHaving never driven to Orlando before, I honestly didn’t know what a toll a 6 hour drive would take on us (especially in such a short amount of time), thank goodness we’re taking a plane next week when we go again 🙂  Obviously Universal & Disney are filled with deliciously wonderful food and y’all I’m still recovering from my food hangover, majority of which was sweet stuff. 

Crockpot-Queso-Blanco | HollysCheatDay.comIf you are too suffering from a major sweets overload from all of the Halloween candy and treats, then I have brought y’all a super duper easy, just enough spicy and a definitely savory dip today.  Seriously, it doesn’t get much easier than throwing all of your ingredients into a crockpot and voila! a delicious queso dip.

  1. 16 Ounces of Monterey Jack Cheese.
  2. 8 Ounces of White American Cheese.
  3. 8 Ounces of Cream Cheese.
  4. 3/4 Cup of Whole Milk.

  6. 1 (10 Ounce) Can of Rotel Tomatoes & Green Chilies, Drained.
  7. 1-3 or 4 Quart Crockpot.

Ingredients
  1. 1 Ounce of Bacardi Rum.
  2. 1 Ounce of Lime Juice.
  3. 2 Ounces of Triple Sec.
  4. 1 Cup of Cranberry Juice Cocktail.
  5. Chocolate Syrup For Garnish (Optional).
  6. Red Sprinkles For Garnish (Optional).
Instructions
  1. If you would like to garnish the rim of your glasses, dip your shot glasses into some chocolate syrup that you have placed on a plate, then immediately dip into the red sprinkles that are also on a plate, set aside to set.
  2. Measure out all of your ingredients into a measuring glass or large drinking glass, mix together and serve!
Notes
  1. These definitely don't have to be placed in shot glasses, they would also be lovely in martini glasses.

Crockpot Apple Butter

Happy Happy Tuesday y’all!!!  I have to admit, in my lifetime, apple butter has not been at the top of my list of favorite food things to eat on biscuits, bread or bagels.  That is usually designated to jelly, butter or cream cheese (or all of the above hehe).  Honestly that went out the window the day my mom, and my  sister and I went to a local place called ‘The Flying Biscuit.’ 

Crockpot-Apple-Butter | HollysCheatDay.comMy sister had been raving for months about how great their biscuits were and that their homemade apple butter was just to die for.  Not wanting to burst her bubble at my lifelong semi-dislike for apple butter I was all ‘sure, sounds great’  but just figured I would be enjoying a waffle or something else instead.  At my sister’s insistence when we got there to try this magical butter,  I finally caved, and thank goodness I did because yummm!!!

Crockpot-Apple-Butter | HollysCheatDay.comIt tasted nothing like any pre-packaged grossness apple butter I had had before.  This was filled with a delicious fresh apple taste and tons of spices.  Obviously I asked if I could buy a 50 gallon barrel some jars of it there but unfortunately they don’t sell it, WTH?!  Well, not having this apple butter on every cheat day come Fall/Winter time was not an option for me, so I figured I needed to get crackin’ on making my own. 

Crockpot-Apple-Butter | HollysCheatDay.comY’all, this crockpot apple butter I made is un-freaking-believable, like, sitting down and eating this stuff all by itself in a bowl is 100% an option kind of good.  I tried this stuff on biscuits, toast and bagels and all are just so freaking delicious and literally Fall in every bite.  Also, let’s talk about how awesome your house is going to smell while this stuff cooks up all day, heavenly is really the word that comes to mind.  Anyways, I hope you get to enjoy this soon and thank you so much for stopping by!!!

Absolutely delectable apple butter made easily in the crockpot.

Ingredients
  1. 4 Pounds of Apples (I Used 5 Large Honey Crisp).
  2. 1/4 Cup of Granulated Sugar.
  3. 1/4 Cup of Brown Sugar.
  4. 1 Tablespoon of Ground Cinnamon.
  5. 1/2 Teaspoon of Ground Nutmeg.
  6. 1/4 Teaspoon of Ground Ginger.
  7. 1/4 Teaspoon of Ground Cloves.
  8. 1/4 Teaspoon of Salt.
  9. 1-4 or 5 Quart Crockpot.
Instructions
  1. Turn your crockpot on low heat.
  2. Wash and peel all of your apples.
  3. Chop all of your apples into small pieces and place into a large bowl.
  4. Now add your brown sugar, granulated sugar, cinnamon, ginger, nutmeg, cloves, and salt.
  5. Now mix all together until evenly mixed and place into your crockpot and cover.
  6. Cook on low for 2 hours, stir your apple mixture together and raise the temperature to high on your crockpot and continue to cook for an additional 5-6 hours.
  7. If you have a hand blender you can place directly into your apple butter mixture and mix until smooth, or you can place into a blender and mix until smooth.
  8. Slather this delicious apple butter onto biscuits or bagels and enjoy!!!

Pumpkin Spice Krispy Treats

Happy Happy Thursday everybody!!!  Among my numerous food obsessions is Rice Krispy Treats.  I know, I know, it’s one of those recipes that people who can’t bake in any way shape or form can make from the time they’re kids, and probably perceived on the lower end of the dessert totem pole. 

Pumpkin-Spice-Krispy-Treats | HollysCheatDay.comObviously loving this hillbilly simple dessert is no embarrassment to me, they’re straight up addictive.  Speaking of addictive, if y’all are not aware, I am a huge Disney nerd, like huge, especially Walt Disney World.  I’m as we speak bouncing around with excitement that this will be the first year I will actually be at Disney for Halloween, squeeeeee!!! 

Pumpkin-Spice-Krispy-Treats | HollysCheatDay.comI’m still debating what costume I’m going to wear because it’s Orlando which means there is a really big possibility I might end up a big sweaty mess, but whatevs I’ll bring a few options.  If y’all didn’t already know, I’m going to let you in on a little secret, Disney World has some of the best Rice Krispy treats ever! I mean come on, Mickey Mouse shaped Rice Krispy treats just taste better (must be all of that magic hehe).

Delicious krispy treats filled with all the flavor of pumpkin and pumpkin spice.

Ingredients
  1. 1/3 Cup of Pumpkin Puree.
  2. 1 (10 Ounce) Bag of Mini Marshmallows.
  3. 6 Cups of Rice Krispies Cereal.
  4. 3 Tablespoons of Unsalted Butter, Melted.
  5. 1 Teaspoon of Vanilla Extract.
  6. 1 Teaspoon of Cinnamon.
  7. 1/2 Teaspoon of Nutmeg.
  8. 1/4 Teaspoon of Cloves.
  9. 1/2 Teaspoon of Salt.
  10. Store Bought Pre-Made Cookie Icing, For Garnish (Optional).
  11. 9x9 Pan.
  12. Wax Paper.
Instructions
  1. Spray your pan with non-stick spray and place the wax paper into your pan (seems weird, but it helps to come out even easier), and then spray the paper too.
  2. In a large saucepan, melt your butter in it, then add the pumpkin puree and cook together until combined and hot.
  3. Now add the whole bag of marshmallows into your saucepan stirring until completely melted.
  4. Remove from the heat and stir in all of the spices, salt and vanilla.
  5. Let your marshmallow mixture cool slightly for about 5 minutes and then add your Rice Krispies into the mixture and mix until well combined.
  6. Now place your marshmallow/krispies mixture evenly into your pan.
  7. Cover and place into your fridge.
  8. Once chilled, take your treats out of the pan, cut into squares, and drizzle some cookie icing for a little extra deliciousness and enjoy!!!
Notes
  1. Before cutting them into squares I sprinkled some more cinnamon on top because I love it.
  2. You are welcome to substitute the pre-made cookie frosting with melted white chocolate or candy melts.

Happy Happy Tuesday everybody!!!  Sometimes you come across recipes that are so simple & easy to make yet so delicious you wonder why in the world you didn’t think of them yourself.  Ladies & gentleman, this is one of those recipes. 

Easy-Pumpkin-Pie-Cake | HollysCheatDay.comI’ve seen a lot of custardy kind of cake stuff around but most involved a billion a whole lot of egg whites that need to be room temperature and whipped and sung to sleep at night added in a specific order etc.  Y’all, I don’t know about you guys, but I just do not have that kind of time on my hands.  I want easy, decadent and super delicious, and trust me this Easy Pumpkin Pie Cake embodies all of those wonderful adjectives. 

Easy-Pumpkin-Pie-Cake | HollysCheatDay.comHonestly the hardest thing to do was waiting for this bad boy to cool down enough so I could slap on the frosting and start devouring it.  Speaking of frosting, y’all are totally welcome to buy a pre-made frosting from the store if you’re really in a time crunch, but I most definitely recommend you make this cinnamon cream cheese frosting, which BTW I can take credit for hehe.

THE CAKE/PIE
  1. 1 (30 Ounce) Can of Pumpkin Pie Mix.
  2. 4 Eggs.
  3. 1 Box of Spice Cake Mix.
  4. 1 Cup (2 Sticks) of Unsalted Butter, Melted.
THE CINNAMON CREAM CHEESE FROSTING
  1. 2 (8 Ounce) Blocks of Cream Cheese, Softened.
  2. 2 Sticks (1 Cup) of Unsalted Butter, Softened.
  3. 1 Tablespoon of Cinnamon.
  4. 1 Teaspoon of Vanilla.
  5. 3 Cups of Powdered Sugar.
FOR THE CAKE/PIE
  1. Preheat your oven to 350 degrees F.
  2. Spray your 9x13 pan with non stick spray and set aside.
  3. With a handheld or stand mixer with paddle attachment place your eggs into your bowl and mix in the pumpkin pie mix until smooth.
  4. Now add the spice cake mix and the melted butter, mix together until smooth.
  5. Now pour your batter into your pan and bake for 30-35 minutes (I know some people that it took 45-55 minutes due to variations in ovens) just making sure the middle bounces back to the touch but isn't jiggly either.
  6. Take out of the oven and let cool completely before frosting.
FOR THE CINNAMON CREAM CHEESE FROSTING
  1. With a handheld or stand mixer with paddle attachment place your butter into your bowl and beat until smooth.
  2. Now add your cream cheese to the butter and mix again until smooth.
  3. Now add your vanilla and mix in your powdered sugar one cup at a time until well combined.
  4. Now add your cinnamon and mix until evenly incorporated.
  5. Layer this amazing frosting on top of your cake and enjoy!!!

Protein Pumpkin Pie Smoothie

Happy Happy Thursday everybody!!! I’m sure some of y’all are feeling the same stressors that I am this time of year.  It’s the juggle of wanting to enjoy all of the delicious Fall & Winter recipes that are being offered, yet still trying to squeeze into your clothes look cute at all of the Fall & Winter functions.  Maybe because it’s sooo hot for sooo long here during the summer that I do as little as possible outside and go to as few a functions as possible during the summer months. 

Protein-Pumpkin-Pie-Smoothie | HollysCheatDay.comSounds weird, but if you’re outside for more than 2 seconds around these parts then, profuse sweating is inevitable, I’m not a hermit or anything I swear haha, but dripping in sweat outside of the gym while trying to look cute gets annoying.  Anyways, what I’m trying to say is that I feel like my calendar is filled completely for the entire end of the year (which I love btw), of which most functions are also filled with delicious food that I cannot allow into my healthy diet. 

Protein-Pumpkin-Pie-Smoothie | HollysCheatDay.comI have added a few things into my arsenal to help in keeping me from caving into my cravings, of which most are pumpkin related because yum.  My One Carb Snickerdoodle Waffle from the other day is a big help and then there is this smoothie.  I’m honestly so proud of this recipe, I feel like it ended up even tastier than I had anticipated.  It really just tastes like a rich milkshake that you wouldn’t guess to be on the healthy side.  I’m telling y’all this recipe is a keeper 🙂 I hope you have a wonderful day and thank you so much for stopping by!

Ingredients
  1. 1 Cup of Coconut Milk (I Used Coconut Dream Brand).
  2. 1/2-1 Scoop of PE Science Protein Powder in Snickerdoodle.
  3. 1 Cup of Pumpkin Puree.
  4. 1/2 Medium Sized Banana, Chilled or Frozen.
  5. 1 Tablespoon of Molasses (Optional).
  6. 1/2 Teaspoon of Cinnamon.
  7. 1/2 Teaspoon of Pumpkin Pie Spice.
  8. 1 Teaspoon of Vanilla.
  9. 1/2 Cup-1 Cup of Ice.
  10. Blender.
Instructions
  1. Place all items into your blender, mix until smooth, serve and enjoy!!!
Notes
  1. All ingredients can be varied for less carbs and/or higher protein, totally up to your preference.

One Carb Snickerdoodle Waffle

Happy Happy Tuesday everybody!!!  It’s kind of funny when you realize that you literally have eaten one specific food for dinner every night for over a week, and have been raving about it to everybody because it’s just seemingly too good to be true. 

one-carb-waffle | hollyscheatday-comIt’s funny because it didn’t dawn on me to share it here on this little blog until the zillionth dozenth person I told about it asked if I could give them the recipe.  Obviously I was hesitant to share it here because this food blog is all about ‘naughty’ foods and special treats, but honestly this is so darn good I literally feel like I’m cheating every time I eat this. 

one-carb-waffle | hollyscheatday-comFor reals y’all this is just too good to be true.  A lot of high protein pancake & waffle recipes  I see are absolutely loaded with carbs and tons of calories so I don’t even bother.  Obviously this is not the case with this.  This waffle is so fluffy and thick, I’m really not kidding when I say that you would not know that this was low carb.

Ingredients
  1. 1 Scoop of PE Science Protein Powder In Snickerdoodle.
  2. 1 Egg.
  3. About 1/2 Cup of Coconut Milk (I Used Coconut Dream Brand).
  4. 1 Teaspoon of Baking Powder.
  5. 1/2 Teaspoon of Cinnamon.
  6. Butter Spray For Garnish (Optional).
  7. Walden Farms Calorie Free Pancake Syrup For Garnish (Optional).
  8. 1 Tablespoon of Jif Whipped Peanut Butter For Garnish, Melted (Optional).
  9. 1 Waffle Maker.
Instructions
  1. Preheat your waffle maker on high.
  2. In a small bowl, place your protein powder, egg, cinnamon, baking powder together and mix together.
  3. Now slowly start to add your coconut milk until a thin consistency is reached but making sure it's not too thin of a consistency.
  4. Liberally spray your waffle maker with non-stick spray and pour your waffle batter into your waffle maker.
  5. Let your batter cook for about 1 minute without closing the top of your waffle maker, then close and cook until golden brown on top.
  6. For garnish feel free to spray a calorie free butter spray, melted peanut butter and calorie free syrup on top.
Notes
  1. If you melt peanut butter for garnish, don't forget to take into account that the calorie and carbohydrate amounts will be higher.
  2. You can add an additional egg and a bit more coconut milk to make 2 smaller waffles.
