S’mores Martinis

August 14, 2015 By Holly

Happy cocktail Friday y’all!  So this past Monday was totally National S’mores Day, and again I didn’t know, which totally makes me feel like food blogger failure…luckily these martinis are totally going to make up for it, pinky promise y’all.

s'mores-martinis| HollysCheatDay.com I’m obviously a huuuge s’mores fan, see here,  so to be able to drink s’mores (especially in an adult way) is super wonderful.  Y’all I totally had to buy marshmallow vodka for this recipe too, which hello, I totally didn’t even know was a thing.

s'mores-martinis| HollysCheatDay.comI was completely skeptical too that the vodka would even be marshmallow-ey enough but wowza, marshmallow in a bottle for reals.  These are so yummies and took me a quick second to make too.  Have a wonderful weekend!

I almost feel silly putting step-by-step photos because these are so easy, but glass into chocolate…

Mango Pineapple Margaritas

August 7, 2015 By Holly

Happy Cocktail Friday!!  This drink is pure summer time, hanging out on a beach (wish I was on a beach, aahhh), relaxing in the sunshine goodness y’all.  I personally think this is an exceptionally good margarita due to all of the pineapple mango awesomeness in this drink, and I totally think you will too.

mango-pineapple-margarita| HollysCheatDay.comI’m sure fresh mango and pineapple would be perfectly delicious in this drink, but finding and using pre-cut frozen mango and pineapple was just too easy.  If you’re going to use frozen fruit too just make sure to let it sit out at room temperature for a couple of hours before making your margaritas so it blends up nice and smooth.

mango-pineapple-margarita| HollysCheatDay.comThis drink was out of the blender and into my glass in less than 10 minutes (and probably only that long because I stop and take photos).  Summer is still definitely kicking around these parts and this drink was perfection my last cheat day, aka dang hot out y’all.

The Sparkling Raspberry

July 31, 2015 By Holly

Since I fell in love with the whole ice cream in a cocktail thing with my Chocolate Gelato Martini from last week, I thought it would be fun to recreate in a (kind of) mimosa form.

the-sparkling-raspberry| HollysCheatDay.comI have to be honest, champagne is not necessarily my favorite kind of beverage because it tends to be a little too dry for me, which is why I added a little bit of sprite for even more sparkles and a tad bit more sweetness.

the-sparkling-raspberry| HollysCheatDay.comSpeaking of sweetness,   y’all can use any kind of sorbet you like, but the raspberry I picked up was perfection, so yes I am definitely recommending that particular flavor 🙂

the-sparkling-raspberry| HollysCheatDay.comThis drink is super fun and super delicious, and honestly so perfect for these hot summer days.  Enjoy y’all and Happy (Cocktail) Friday!

Sorbet into the glasses (as much or as little as you like)…

Pimm’s Cup

July 3, 2015 By Holly

Guess what?!  It’s cocktail Friday!  I know, it’s been a few weeks since I’ve posted a drink but I’ve been on a real cooking/baking kick and have just not been feeling a cocktail.  Well, I definitely was this last cheat day.

pimms-cup| HollysCheatDay.comY’all, it’s been hot here, like, suffocating, oppressive, want to take a nap in the freezer stay in the AC kind of heat.  When I’m running around the gym (literally) at 5:30 A.M. and I’m already sweating my be-hind off, you know it’s dang hot.  Not gonna lie, I have seriously considered jumping on a plane to L.A. for a weekend just to have some reprieve from this Southern summer.

pimms-cup| HollysCheatDay.comAnyways, after having the AC break in my office for several days last week (I was about ready to turn into the Hulk–Holly SMASH!!), all I could think about (other than cool air) was a light refreshing drink to enjoy while sitting around doing nothing.  I had heard about this drink from my neighbors for forever and how light and fresh it was, sooo I figured it was about time to make one.

pimms-cup| HollysCheatDay.comApparently this is a very British drink (which in my mind makes it even better) and honestly I was skeptical at how light this drink would be when I saw the Pimm’s Liqueur.  The liqueur is a very dark color, which to me screams very strong and bitter (kind of like how I felt melting in my office).

pimms-cup| HollysCheatDay.comY’all I took my first sip of this cocktail and did the whole ‘aaaaahhh,’ you know,  like they do in all of the drink commercials?  This drink is just lovely… sweet, but not too sweet and light and bubbly from the Sprite, did I also mention nice and cold? 🙂  This drink is typically garnished with cucumbers and lemons, and I just loved the cucumber slices in it, definitely added to the lightness of the drink.  Happy Friday! and have wonderful long (hopefully cool) holiday weekend!

Disneyland Dole Whip

June 12, 2015 By Holly

So I guess I need to preface this post with the fact that I’ve never been to Disneyland…Disney World plenty,  including earlier this year (sooo fun, it really is magical y’all!) but the whole time I lived in California because I was being worked to the death for the sake of entertainment I never had a chance to get there.  My mom kept telling me how they have these Dole Whips there that are apparently super famous and super delicious, and how I needed to make one.

disneyland-dole-whip| HollysCheatDay.com(Please note the official Disneyland flag in the pics below that my mom got there when she was just a little girl, so cute). I have since found out that they now serve these at the Magic Kingdom at Disney World too, but it wasn’t my cheat day while I was there so I avoided even seeing all of the fun bad food as much as possible (which by the way is everywhere at Disney! I lost count at how many Mickey Mouse ice creams I looked at longingly, no worries my dude ate them for me haha).

disneyland-dole-whip| HollysCheatDay.comSoo, anyways, after hearing about this delicious and fun even without alcohol   drink about a million times, I tracked down several recipes for them and decided to give them a whirl.  Not gonna lie,  I was a little skeptical because, well, pineapple, pineapple juice and ice cream?  Don’t get me wrong I love both, but together I wasn’t sold…well, that is until I had one.  Oh sweet goodness, these are ammaazzing.  I could not stop drinking this stuff y’all.  It’s creamy, but sweet and tangy from the pineapple juice.  Sooo good! Please do yourself a favor and make these, like, tonight 🙂

First, place your semi-thawed pineapple in your blender…

Ingredients
  1. 1 (16 Ounce) Bag of Dole Frozen Pineapple Chunks.
  2. 4 Cups of Vanilla Ice Cream (I Used Breyers).
  3. 12-20 Ounces of Dole Pineapple Juice.
Instructions
  1. Half way thaw your frozen pineapple, I honestly forgot to leave the pineapple out to thaw so I zapped it in the microwave for 30-45 seconds.
  2. In a blender, place your pineapple in it and puree it, I would intermittently use a spatula to scrape down the insides of the blender to move around the pineapple to make sure it was all pureed well.
  3. Now add your ice cream and around 8 ounces of your pineapple juice, and blend thoroughly.
  4. Freeze this mixture for 1-2 hours to set it.
  5. Scoop your mixture into glasses and pour more pineapple juice over each scoop of ice cream.
Notes
  1. I put 12-20 ounces of pineapple juice because it is really up to your taste, I like quite a bit of pineapple juice on my ice cream and you may not, put as little or as much as you like 🙂

Malibu Sunset

May 15, 2015 By Holly

Happy Friday Y’all!!  Today I’m keeping it super short and sweet because  I have been very under the weather this week.  I finally went to the doctor kicking and screaming and have a prescription for antibiotics to prove it, blargh.

malibu-sunset| HollysCheatDay.comThough I feel like junk, I can’t deny y’all a super delicious and fun cocktail for your weekend.  I will be doing nothing except catching up on my DVR’d shows this weekend so I must live vicariously through you guys.

THIS IS FOR ONE DRINK
  1. 3-4 Ounces of Pineapple/Orange Juice.

  3. 1-2 Ounces of Cranberry Juice.
  4. Pineapple slices and Maraschino cherries for Garnishing (Optional).
Instructions
  1. In a shaker or glass add your pineapple/orange juice and your rum and stir.
  2. Now add your cranberry juice, stir again and add your fruit for garnishing if you like.
  3. Serve immediately and enjoy.
Notes
  1. I used a pineapple/orange juice mix because it was easier than buying pineapple and orange juice separately.
  2. You can use ice to chill your drink, but I am not fond of how the ice melts and waters down the drink, instead I put all ingredients into the fridge so they will be chilled.

Pineapple Martini

May 1, 2015 By Holly

Hey guess what?! It’s Friday again 🙂 There is just something about Fridays that is almost better than Saturdays. Yes, Friday is still a weekday and all that comes with it, but Friday nights are great because you still have the whole weekend ahead of you.

pineapple-martini| HollysCheatDay.comDon’t even get me started on how awesome Friday nights were as a kid because of the awesome show lineup for TGIF.  Some of y’all younger than me will probably have no clue what I’m talking about, but let me tell you TGIF was the best (any other Full House fans here?).

pineapple-martini| HollysCheatDay.comAnyways, at least as an adult you can partake in this delightful cocktail on your Friday evening now.  I’m a giant fan of all tropical fruits and the pineapple juice that I took straight from the container holding the fresh pineapple made this cocktail perfect.

pineapple-martini| HollysCheatDay.comYes, it’s a strong cocktail if you know what I’m sayin’ but lovely.  It only makes 1 drink, but this is easily doubled, tripled etc.  Have a wonderful and hopefully relaxing weekend (especially with the help of this libation).  Happy Friday Y’all!
